Number Of Ingredients 8

3 egg yolks
1 1/4 cups sugar
3 tablespoons cocoa
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
1 teaspoon vanilla extract
1 baked pie shell

Steps:

  • Combine all accept vanilla and cook on low heat until very thick. Stir often to prevent scorching. Remove from heat- let sit a minute or two and stir in vanilla.
  • Pour into pie shell.
  • Top with meringue and bake as directed.
  • I will be posting Nannys Meringue Recipe.

Number Of Ingredients 15

2 lbs fresh peeled shrimp
1 lb crabmeat
2 (15 ounce) cans chopped tomatoes
3 stalks celery, chopped
1 bell pepper, chopped
4 garlic cloves, minced
4 teaspoons butter
3 quarts water
2 cups okra, cut up and cooked
1 teaspoon Worcestershire sauce
salt
pepper
4 teaspoons cajun seasoning
1/2 cup parsley, finely chopped
basic roux

Steps:

  • To make the Basic Roux: Heat 3/4 cup oil in a iron skillet. When oil is hot, gradually add 1 cup flour, stirring continuously until well mixed. Lower heat and continue to stir until chocolate brown. When roux is chocolate brown remove from skillet and set aside. If it remains in skillet it will continue to cook and get to dark.
  • In a large pot-not a black iron pot-saute onion,celery,bell pepper, garlic and okra in butter for about 10 minutes. Add roux, water and worcestershire.
  • Cook for 1 hour.
  • Add all other ingredients, except for parsley. Cook for 1 more hour.Adjust seasoning if needed- salt and pepper are to taste. Add parsley.
  • Serve over rice.
  • This is better the next day- if there is any left. This says serves 6 - Nanny usually made a double batch.

Number Of Ingredients 9

1 1/2 cups sugar
1/3 cup cornstarch
1/4 teaspoon salt
1 1/2 cups cold water
1/2 cup fresh lemon juice
5 eggs, seperated
2 tablespoons butter
1 -3 tablespoon lemon zest
1 (9 inch) baked pie shells

Steps:

  • Combine sugar, corn starch and salt in a large heavy saucepan; mix well. Gradually add water and lemon juice, stirring until mixture is smooth.
  • Beat egg yolks until thick and lemon colored; gradually stir into lemon mixture. Add butter and cook over medium heat. Stir constantly until thick and bubbly. Cook for 1 more minute, stir constantly.
  • Remove from heat, and stir in lemon zest. Pour into pie shell.
  • Top with meringue and bake according to meringue directions. I will be posting Nannys Meringue soon. You could also use Cool Whip or whipped cream, Nanny always had a very nice meringue on top of hers.

I saw the movie, The Help, this weekend and it was excellent. Then the sermon on Sunday included a reference to it. I wanted to have the recipe for Minnie's pie - NOT the one she made ONLY for Hilly!!!!!. Maybe someone else wants it, so here it is.

Number Of Ingredients 7

1 1/4 cups sugar
3 1/2 tablespoons cocoa
1/4 cup butter, melted
1 teaspoon vanilla
5 ounces Pet milk (evaporated)
2 eggs
1 pie crust, uncooked

Steps:

  • Preheat oven to 325°F.
  • Mix everything together in one big bowl.
  • You don't have to bake the crust first, prick the bottom of it.
  • Pour filling into crust.
  • Bake for about 50 minutes. Let the pie set for a long while once it comes out of the oven. I think this definitely tastes better room temperature.
  • If you'd like, serve with a big scoop of ice-cream, some fruit, a little whipped cream, or straight out of the pie plate!

1 lb ground beef
2 teaspoons salt
2 teaspoons black pepper
1 cup tomato sauce
2 (14 ounce) cans chopped stewed tomatoes
1 yellow onion, chopped
1 green bell pepper, chopped
1 garlic, pods chopped
2 tablespoons sugar
2 tablespoons Worcestershire sauce
2 tablespoons italian seasoning
3 bay leaves

Steps:

  • Brown the beef.
  • Add the chopped veggies.
  • Add tomato sauces & spices.
  • Simmer 4 hours--the longer the better.
  • Nanny always put it in her crock pot to simmer all day.
  • Sometimes she added 1 T grape jam.

3 1/2 cups flour
1 cup Crisco
1 teaspoon salt
1/2 cup margarine
1 large egg
1 tablespoon vinegar
6 tablespoons cold water

Steps:

  • Cut crisco and butter into the flour and salt. Beat egg, vinegar and water.
  • Mix the egg mixture into the flour mixture.
  • Knead together then roll out into 3 pie crusts.
  • Nanny would put them into a pie dish and cover and freeze for up to a few weeks.
  • For a baked crust bake the crust for about 15 minutes at 375° till golden.

1 1/2 cups crabmeat
2 tablespoons bacon fat, melted
1 medium onion
1 green onion
2 garlic cloves
2 tablespoons celery
2 tablespoons bell peppers
1 tablespoon parsley
3/4 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme
flounder

Steps:

  • Chop all the veggies.
  • Saute veggies in the bacon fat drippings unti soft, but not brown.
  • Mix the sauted veggies with the crab meat, bread crumbs and spices.
  • With a sharp knife make a slit just under the skin of the flounder. Fill the pocket you create with the mixture.
  • Brush the flouder with melted butter.
  • Bake 30 minutes covered with foil at 375*.
  • Uncover and brown for 10 minutes.
  • This will stuff 1 big or a couple small flounder.

1 sheet refrigerated pie crust
1 cup sugar
1/3 cup baking cocoa
1/4 cup all-purpose flour
Pinch salt
2-1/4 cups water
1 tablespoon butter
1 teaspoon vanilla extract
Whipped cream and chocolate sprinkles

Steps:

  • Unroll crust into a 9-in. pie plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack or until edge is golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer or. Cool on a wire rack., In a large saucepan, combine sugar, cocoa, flour and salt; gradually add water. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until thickened, 1-2 minutes. Remove from the heat; stir in butter and vanilla. , Pour into crust. Refrigerate 2-3 hours before serving. Garnish with whipped cream and chocolate sprinkles.
