In my opinion, this is the absolute best banana bread out there. I got it through a mail order recipe club called "Grandma's Kitchen". It is so easy to make, and it seems like everyone always has some ripening bananas that they're trying to get rid of!

5 tablespoons butter
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
2 egg whites
1 teaspoon vanilla extract
2 ripe mashed bananas
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup heavy cream
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees, and spray bottom of a 9 inch round pan with non-stick cooking spray.
  • Beat butter in a large bowl with an electric mixer until light and fluffy.
  • Add granulated Sugar and brown sugar; Beat until well blended.
  • Add egg, egg whites and vanilla; blend.
  • Mix in the mashed bananas, and beat the mixture on high speed for 30 seconds.
  • In a separate bowl, combine flour, baking soda, salt and baking powder.
  • Add flour mixture to butter mixture alternately with the cream, ending with the flour mixture.
  • Mix in the walnuts.
  • Pour batter evenly into prepared 9 inch round pan (or loaf pan).
  • Bake until golden brown, and toothpick inserted near the center comes out clean (About one hour).

My Favorite Banana Bread image

With its super-moist texture, buttery banana and brown sugar flavors, and incredibly soft crumb, this is the best ever banana bread recipe. You'll need 4 ripe bananas to begin.

2 cups (250g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (1 stick or 115g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light or dark brown sugar
2 large eggs, at room temperature
1/3 cup (80g) plain yogurt or sour cream, at room temperature (I use Greek yogurt)
2 cups (460g) mashed bananas (about 4 large ripe bananas)
1 teaspoon pure vanilla extract
optional: 3/4 cup (100g) chopped pecans or walnuts

Steps:

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Grease a 9×5-inch loaf pan or coat with nonstick spray. Set aside.
  • Whisk the flour, baking soda, salt, and cinnamon together in a large bowl.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and brown sugar together on high speed until smooth and creamy, about 2 minutes. On medium speed, add the eggs one at a time, beating well after each addition. Beat in the yogurt, mashed bananas, and vanilla extract on medium speed until combined. With the mixer running on low speed, slowly beat the dry ingredients into the wet ingredients until no flour pockets remain. Do not overmix. Fold in the nuts, if using.
  • Spoon the batter into the prepared baking pan and bake for 60-65 minutes. Loosely cover the bread with aluminum foil after 30 minutes to help prevent the top and sides from getting too brown. A toothpick inserted in the center of the loaf will come out clean when the bread is done. Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.
  • Cover and store banana bread at room temperature for 2 days or in the refrigerator for up to 1 week. Banana bread tastes best on day 2 after the flavors have settled together. See post above for freezing instructions.

It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

My Nanna Towgood has been making this loaf bread for over 40 years, and its a family favorite--moist, flavorful, and just the right amount of sweetness. You may substitute chocolate chips for the walnuts if you desire.

½ cup buttermilk
2 eggs
½ cup vegetable oil
1 cup white sugar
2 small very ripe bananas, sliced
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
⅛ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • In a blender, combine milk, eggs, oil, sugar, banana pieces, and vanilla extract. Process until smooth. In a large bowl, sift together all the flour, cinnamon, baking powder, baking soda, and salt. Add banana mixture to dry ingredients. Mix well. Stir in nuts. Pour batter into prepared pan.

NANCY'S BANANA BREAD

I don't know who Nancy is, but I have been making this banana bread for about 20 years! I think I got it out of an old cookbook, but it is a super moist banana bread. The key is using bananas that are turning black.

3 bananas, overripe
1/2 cup sugar
1/2 cup butter
1 egg
1 1/2 cups flour
1 teaspoon baking soda
salt

Steps:

  • Mash bananas in a large bowl.
  • Add sugar and mix well.
  • Cut in butter.
  • Add egg and beat slightly.
  • In a separate bowl, mix together flour, baking soda and a dash of salt.
  • Gradually add to banana mixture.
  • Pour into a well-greased loaf pan.
  • Bake in a preheated 350 oven for 45-55 minutes.
  • A toothpick inserted should come out almost clean.
