NANA'S EASY MEATLOAF RECIPE

The classic meatloaf recipe with a twist - oatmeal and olives.

1.33 pounds organic ground beef
1/2 teaspoon salt
1/2 teaspoon lemon pepper
3/4 teaspoon garlic powder
1/2-3/4 teaspoon poultry seasoning (may substitute sage)
1-2 tablespoons worcestershire sauce
10-12 green olives, chopped
1/2 cup chopped onion, celery, & green peppers (1/2 cup total of the 3 veggies)
1 large egg, beaten
1/4 cup gluten free oatmeal
1/4 cup ketchup (for topping) (or more if you wish)
8 green olives, sliced (slice each olive into 3 sections for top of meatloaf)

Steps:

  • I start with a big bowl and spread out the ground beef around the bottom and sides of the bowl. Then I add the dry seasonings and the worcestershire and mix by hand literally getting my hands on the meat. Next I add the chopped vegetables and olives mixing that by hand as well. I beat the egg and add that in; then add the oatmeal. I mix by hand 'til all the ingredients are blended.
  • I add the mixed meat, seasonings, and vegetables to a greased glass loaf pan shaping it in on sides. Last I add enough ketchup to cover the top surface of the meatloaf spreading it over the top with my fingers. Then I arrange the sliced olives on the top of the ketchup for a decorative topping. Bake for an hour at 350 degrees. Cool, pour off excess fat and you're ready to serve your meat before it has time to loaf.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

I remember when i first made meatloaf for my husband philip. his first words were ugh i hate meatloaf. (not an insult, we were so close that little truths like this didnt bother us) I talked him into trying at least a bite and he was hooked. Meatloaf isnt suppose to be ground meat formed in a pan. Nanas meatloaf had bell peppers...

Number Of Ingredients 17

1 1/2 lbs lean ground beef
1/2 lb ground pork
1/2 c parmesan cheese
3/4 c italian bread crumbs
2 eggs
1 t ketchup
1 green bell pepper chopped fine
1 onion chopped fine
1 1/4 t salt
1 1/4 t pepper
garlic powder (i use alot)
1 clove garlic, crushed
1 t italian seasoning
DO NOT COMBINE THESE IN TO MEATLOAF
2 slices of bread (i use the heels since noone in my house likes them)
ketchup to spread on top
additional parmesan for on top

Steps:

  • 1. Combine all meatloaf ingredients in a large bowl and with clean hands mix all together until completely mixed.
  • 2. In a loaf pan put your two slices of bread (the heels work best) in the bottom. (this soaks up the grease and ensures meatloaf doesnt burn on bottom)
  • 3. Form meat mixture into a loaf and place in pan. I then push mine in so that it takes up the whole pan.
  • 4. Bake in 350 degree preheated oven for an hour and 10 to 15 minutes. Remove from oven and drain off any grease there might be. Now cover top of meatloaf with ketchup (you can also use tomato soup, i usually do) and sprinkle with parmesan.
  • 5. Return to oven and continue baking until meatloaf is completely done. Another 10 to 15 minutes usually depending on oven.
  • 6. Remove from oven and allow to cool a bit so meatloaf does not fall apart when cutting. You can cut it right in the pan (just remember the bread is on the bottom) or invert it onto a serving plate, remove bread and cut and serve.

1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.

3 lbs ground beef
1 egg
1 cup sweet bell pepper, diced
1 cup onion, diced
2 tablespoons ketchup
1 whole mustard seeds
1 pinch thyme
1 pinch salt and pepper
2 tablespoons peanut oil
1 garlic clove, minced
1 lb shiitake mushroom, sliced
1 lb portabella mushroom, sliced
1 lb chanterelle mushroom, sliced
salt
1 tablespoon marjoram
1 1/2 cups beef or 1 1/2 cups vegetable stock
fresh cracked black pepper

Steps:

  • Preheat oven to 450 degrees. Mixx all ingredients very well. Bake in a 4 x 4 x 9 inch baking pan. Bounce pan on counter until packed, then bake for 50 minutes.
  • PREPARATION OF THE SAUCE:.
  • Heat oil in pan, add garlic and mushrooms and salt and cook until soft. Add marjoram and remove from heat. Use equal parts of meatloaf fat and flour and make brown roux in heavy saute pan over medium high heat. Add stock while stirring, then strain. Return gravy to pan, add mushrooms and reduce until thickened. Season with fresh pepper.
