NANA'S APPLE CRUMBLE

A family favorite, this apple crumble was originally my grandmother Hazel's recipe which my mom made on a regular basis. She would make two at a time to take to sick or shut-in friends, or to potlucks. There is never any left. Serve warm with French vanilla yogurt.

7 large Cortland apples - peeled, cored, and sliced
1 cup white sugar
1 tablespoon ground cinnamon, or more to taste
1 cup all-purpose flour
¼ cup brown sugar
⅓ cup unsalted butter, cubed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread apples in an even layer in a deep dish pie plate or 8-inch square glass casserole dish. Cover with white sugar, then top with cinnamon.
  • Combine flour and brown sugar for topping in a bowl. Add butter and cut in with a pastry blender. Spread topping evenly over apple mixture and pat down.
  • Bake in the preheated oven until apple mixture is bubbling and topping is browned, about 55 minutes.

3 lbs apples
1/2 cup sugar
1 tablespoon cinnamon
1 egg
1 pinch table salt
1 teaspoon vanilla
1/3 cup vegetable oil
1 teaspoon baking powder
1 1/2 cups all-purpose flour

Steps:

  • Combine sugar and cinnamon. Remove 2 tbsp to a small bowl.
  • Peel and slice apples. Sprinkle the remaining cinnamon-sugar over the apples.
  • Mix remaining ingredients well. Add ice water if needed to achieve a good consistency.
  • Dive dough in half and roll out. Place one piece in the bottom of a 9" pie plate. Add the apples. Cover with the second piece of dough. Crimp the edges. Cut a vent in the top crust. Sprinkle reserved cinnamon-sugar over top.
  • Bake in preheated 350F oven about 1 hour or until golden brown.

5 medium apples (macoun or cortland if you can get them) peeled, cored and sliced 1/2" thin
cinnamon and sugar to lightly coat the apples (~ 1-2 tsp each)
a generous Tbsp honey
a squeeze of lemon juice
crust:
1 c. flour
1 c. sugar
1/2 c. wheat germ
1/2 c. ground walnuts
3/4 c. melted butter
1 egg lightly beaten

Steps:

  • prepare the apples and coat with honey, lemon juice, cinnamon and sugar. pour into a standard pie plate or equivalent-sized baker. preheat oven to 350F, then get the crust ready. mix together flour, sugar, wheat germ and walnuts. add butter and stir until even, then add egg and mix until smooth. pour it over the apples, mushing with a spatula to make sure it squeezes in between them. bake for 50-60 minutes or until lightly golden. spectacular if served with vanilla or pumpkin ice cream!

PIES:
2 Pillsbury pie crusts
2 apples
1/4 cup sugar optional
1/4 teaspoon cinnamon, optional
ICING:
1 teaspoon softened butter
1 cup powdered sugar
1/2 teaspoon vanilla
1 to 3 tablespoons milk

Steps:

  • Peel the apples and chop them up. Put them in a pot with the sugar and cinnamon. Heat on low until apples are soft and sugar is dissolved. Remove from pot and mash into very small chunks. Roll out the pie crust on a lightly floured board. Using a 3 inch cookie cutter, cut out about 7 circles. Place a scant teaspoon of the cooked apples in the middle of the round. Using very cold water and your fingers, wet all the way around the pie, fold it over and crimp edges with the fork and make a slit in the top. Put a little oil in a skillet and let it get hot first, then place the little pies in the skillet and cook for 2 to 3 minutes on each side. Take them out of the oil when they are cooked and place on a wire rack with paper towels on them so that will take off the excess oil. Whisk icing ingredients together until smooth and drizzle over warm pies. Serve.
