5-LAYER MEXICAN DIP OR NACHOS SUPREME
This is a spectacular layered dip to serve out of a glass trifle dish or casserole. Goes together in minutes, and can be made ahead. It's great served either hot or at room temperature with warm tortilla chips (we like it with Tortilla Scoops) and an ice cold beer or margarita. Optional: Add strips of grilled carne asada or pollo asada and layer in a dish for a killer nachos supreme! Tip: I use recipe #117797 for the seasoning.

- In a 13 x 9-inch glass serving dish, spread the refried beans.
- Mix together the sour cream, mayonnaise and seasoning mix. Spread this on top of the beans.
- Put on a layer of the chopped green chiles (both cans). Note: You may substitute 8 ounces of chunky salsa for the chopped green chiles.
- Mix together the diced avocados, lemon juice, salt and garlic powder. Spread this on top of the green chiles.
- Mix together the shredded cheese, green onions, chopped tomatoes and chopped olives. Sprinkle this on top. Garnish with chopped fresh cilantro.
- May be served right away, or cover and chill for up to 24 hours. -OR-, to serve hot:, bake at 350 degrees F until hot and bubbly, about 15 minutes.
- Serve with warm tortilla chips (we like Tortilla Scoops).
- TO MAKE NACHOS SUPREME:.
- Layer dip with tortilla chips and sliced carne asada steak, pollo asada, seasoned ground beef, or shredded chicken; top with extra shredded cheese and diced green chiles. Bake or microwave briefly until heated through and the cheese has melted. Enjoy!
DELICIOUS NACHOS SUPREME
Perfect party food! --- this is one of my all time favorite nacho recipes that I have made many times in the past, and I guarantee you will love this! --- all amounts may be adjusted to taste and double the recipe if desired but keep the garlic no more than 2 tablespoons, if you really want to go all out add in a can of drained black beans to the ground beef mixture! 1/2 pound Italian sausages with casings removed can be mixed with the ground beef if desired, to turn up the heat use a package of taco seasoning mix or spicy salsa and add in cayenne or dried chili flakes --- for the best flavor make certain to brown the meat well :)

- In a large skillet cook the ground beef with onions, garlic, jalapeno peppers, green bell pepper and chili powder; cook stirring until meat is no longer pink; drain all fat well, continue to cook until the meat is well browned (the beef must be well browned!).
- Add in refried beans, salsa; cook stirring until heated through.
- Add in 3/4 cup grated cheddar cheese; stir until melted.
- Place the tortilla chips on a large serving platter.
- Top with ground beef mixture, then sprinkle the top of the HOT ground beef mixture with about 1-1/2 cups (or to taste) grated cheddar cheese.
- Top with sour cream, green onions, chopped tomatoes and sliced black olives.
- Serve hot or warm.

- Heat olive oil in a skillet over medium-high heat. Add ground beef substitute and fry for 1 to 2 minutes. Stir in water and taco seasoning. Continue to cook and stir until cooked through, about 8 more minutes.

- 1. Preheat oven to 350ºF Line large cookie sheet with parchment paper and set aside Cut jalapeno peppers in half, remove stem, seeds and veins Cut tomatoes into quarters Cut stems off cilantro Place pepper, tomatoes and 1/2 of cilantro in food processor and pulse until coarsely chopped. Leave in food processor for later use. Reserve rest of cilantro leaves for garnish Brown beef with half of chili seasoning, drain fat and set aside.
- 2. Whisk together sour cream, salt, pepper, garlic and balance of chili seasoning Set aside
- 3. Place tortillas in a single layer on prepared cookie sheet and bake for 8-10 minutes (until just barely turning brown) Remove from oven and allow to cool; they will crisp up as they cool.
- 4. Spread equal portions of mixtures on each tortilla in this order: Browned and drained beef Sour cream mixture Tomato, jalapeno and cilantro mixture Grated cheese Turn oven to broil, return loaded tortillas to oven and broil until cheese is melted and bubbly (2-3 minutes)

- 1. Brown ground beef in a 12" frying pan over medium heat. Chop larger chunks down finely while cooking. Drain.
- 2. Stir in 1/2 cup of water and taco seasoning blend. Cover and simmer over low/warm heat for 10 minutes, stirring occasionally.
- 3. Warm 1 1/2 cups of queso cheese in microwave safe bowl, stirring every 30 seconds until hot.
- 4. Chop lettuce and dice jalapenos while the cheese is warming.
- 5. With a draining spoon, serve the beef evenly onto 4 plates. Top each plate of beef with 1/4 cup of shredded cheese.
- 6. Pour 1/4 cup of salsa on each plate of beef. layer tortilla chips around the beef on the plate.
- 7. Top the beef and chips with the warm queso cheese.
- 8. Add your lettuce and jalapenos evenly. Drop 1 tbsp of sour cream in the center. Serve immediately.
