Time 18m

Yield 4

Number Of Ingredients 12

cooking spray
8 ounces lean ground beef
1 tablespoon water
1 teaspoon taco seasoning
¼ teaspoon cayenne pepper
salt and freshly ground black pepper to taste
5 ounces thin corn tortilla chips
2 cups shredded Cheddar cheese
½ (15.25 ounce) can black beans, rinsed and drained
⅓ cup salsa, or to taste
3 tablespoons sliced green onions
⅓ cup sour cream, or more to taste

Steps:

  • Preheat the air fryer at 360 degrees F (182 degrees C) for about 5 minutes. Line the air fryer basket with foil or a parchment liner, and spray with cooking spray.
  • Heat a small skillet over medium heat and cook ground beef until browned and crumbly, about 3 minutes; drain grease. Stir in water, taco seasoning, cayenne, salt, and pepper. Remove skillet from heat.
  • Set tortilla chips in the basket, spreading them out and overlapping slightly so the melted cheese won't drip through the open gaps. Evenly sprinkle Cheddar cheese over the chips. Only add a couple of layers of chips with cheese in between in the fryer basket, or just add a single layer and cook in batches.
  • Evenly distribute ground beef and black beans over the cheese, sprinkle green onions on top, and add spoonfuls of salsa.
  • Transfer the basket into the air fryer and cook until cheese is melted and starting to slightly brown on the edges, 4 to 6 minutes. The nachos will cook evenly and quickly but watch closely so they don't burn.
  • Remove nachos to a serving plate, garnish with sour cream, and serve immediately. Put extra toppings in small bowls and let everybody customize their nachos.

DELICIOUS NACHOS

Delicious Nachos image

Great quick snack and very delicious. My DH and I will often have these for lunches on weekends or when I just don't feel like cooking. I never measure what I'm putting on this; I just put what looks right - so my measurements are estimates. Very easy to adjust to individual tastes - for example I don't like tomatoes and my DH doesn't like black olives so those two items get put on separate halves of the nachos.

Time 6m

Yield 1 plate nachos, 2 serving(s)

Number Of Ingredients 9

10 -15 tortilla chips
2 tablespoons refried beans (or black beans)
1 cup cheese (cheddar or Mexican mix, whatever you have around)
1/2-1 jalapeno, chopped (optional)
1/2 cup salsa (I use Salsa)
1/2 avocado, chopped (or mashed)
2 tablespoons sour cream
1 tablespoon black olives, chopped (or sliced)
1 tablespoon tomatoes, chopped

Steps:

  • Spread the chips evenly on a plate.
  • Spread the beans on top of the chips. If you use refried beans, put little globs of them on the chips around the plate - these don't spread easily.
  • Cover with the cheese.
  • Sprinkle the chopped jalapenos over the cheese.
  • Microwave for 1 minute or until all the cheese is melted.
  • Spread the salsa over the nachos(try not to get too watery of salsa b/c that will make your chips watery).
  • Spread the sour cream over the salsa.
  • Spread the avocado, black olives, and tomatoes over the sourcream.
  • Enjoy! We usually end up making a second plate.
