Fulfill all of your snack cravings with these cheesy, crunchy air-fried pasta chips! Cheddar cheese powder pairs with hot sauce for a salty, spicy bite, all wrapped in a fun-filled lasagna chip!

2 tablespoons cheddar cheese powder
1 ½ teaspoons chili powder
1 teaspoon onion powder
1 teaspoon kosher salt
6 dried lasagna noodles, cooked according to package instructions and drained, still warm
1 tablespoon avocado, or canola oil
1 teaspoon hot sauce
salsa, for serving

Steps:

  • In a small bowl, stir together the cheddar cheese powder, chili powder, onion powder, and salt until evenly combined.
  • In a medium bowl, toss the warm lasagna noodles with the avocado oil and hot sauce until well coated. If any noodles stick together, separate them and make sure all sides are coated in oil.
  • Preheat the air fryer to 390˚F (200°C) for 5 minutes.
  • Layer three of the lasagna noodles to the air fryer basket. Cook for 6 minutes, tossing every 2-3 minutes and watching carefully to avoid burning, until the pasta is beginning to brown and crisp.
  • Add the cooked pasta chips to the same medium bowl and tear into smaller pieces. Toss with half of the spice mixture. Repeat with the remaining lasagna noodles. Let the lasagna chips cool slightly before serving, about 5 minutes. The chips will continue to crisp as they cool.
  • Serve the pasta chips with salsa for dipping.

8 ounces orecchiette or other small shaped pasta
1 tablespoon vegetable oil
1 medium onion, chopped
1 medium green bell pepper, chopped
2 cloves garlic, minced
2 cups, cooked chicken, shredded
1 (11-ounce) can corn kernels, drained
1 (4.5-ounce) can green chiles, drained
1 cup ricotta cheese
1 1/2 cups Monterey jack cheese, shredded and divided
1/2 teaspoon chili powder
1 1/2 cups salsa, divided (pick your favorite)
Green onions, chopped
Tortilla chips

Steps:

  • Heat oven to 375°F. Cook pasta according to package directions. Drain. While pasta is cooking, heat oil in skillet over medium heat. Add onion and bell pepper and cook, stirring frequently, until tender, about 5 minutes. Add garlic and cook an additional 30 seconds. In a large bowl, combine pasta, onion mixture, chicken, corn, chilies, ricotta cheese, 1/2 cup Monterey jack and chili powder. Spoon some salsa onto the bottom of a 9x13-inch casserole dish and spread to cover the bottom of the dish. Spoon chicken mixture on top of salsa. Top with remaining salsa and spread evenly with remaining cheese. Bake until mixture is heated through, about 20-25 minutes. Spread chopped green onions over the top of the dish and serve over tortilla chips.

On a message board that I frequent someone asked for some rice cooker recipes. I had often wondered if I could cook other things in my little rice cooker, but never looked into it. So, today, I decided to do a search to see what I could find. This recipe was inspired by a Mac and Cheese recipe that I saw. I hope you all enjoy it as much as we did!

1 (10 3/4 ounce) can Campbell southwest-style pepper jack soup
10 3/4 ounces 2% low-fat milk (use soup can) or 10 3/4 ounces skim milk (use soup can)
1 (15 ounce) can pinto beans with jalapeno peppers
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
salt and pepper
2 cups shell pasta or 2 cups other similar sized pasta
1 cup cooked ground beef (optional) or 1 cup cooked ground turkey (optional)
garnish with shredded cheese (optional)
chopped onion (optional)
tomatoes, and (optional)
lettuce (optional)

Steps:

  • Add first two ingredients to rice cooker and mix.
  • Add the remaining ingredients and turn on. I have an on/off rice cooker and it took about 25 minutes to cook.
  • Let stand 5 minutes.
  • Note: This recipe is spicy. If you prefer something less spicy you can use: 1 can condensed cheese soup, 1 can milk (use soup can), 1 can regular pinto beans, 1 package taco seasoning, 2 cups pasta.

1 (350 gram) package Kraft Deluxe Velveeta on Shells Pasta & Sauce
1 pound extra-lean ground beef Marc's
1 (35 gram) package 40%-less-sodium taco seasoning mix
3/4 cup light sour cream
3/4 cup Cracker Barrel Shredded Light Mozza-Cheddar Cheese, divided
3/4 cup salsa
1/2 cup coarsely crushed tortilla chips

Steps:

  • Heat oven to 400°F. Prepare Kraft Deluxe Velveeta as directed on package. Meanwhile, cook meat with taco seasoning mix as directed on package. Stir sour cream into prepared Kraft Deluxe Velveeta. Spoon half the Kraft Deluxe Velveeta mixture into 8-inch square baking dish; top with layers of meat mixture, half the shredded cheese and remaining Kraft Deluxe Velveeta mixture. Cover. Bake 15 min.; top with salsa, remaining cheese and crushed chips. Bake, uncovered, 5 min.
