These easy cheesy nachos are loaded with fresh ingredients. Serve with salsa, sour cream, and guacamole for a definite crowd-pleaser!

1 pound lean ground beef
2 tablespoons taco seasoning
⅓ cup water
⅔ cup black beans (drained and rinsed)
8 ounces tortilla chips
4 cups cheddar (shredded, and/or Monterey Jack cheese)
4 green onions (sliced and divided)
toppings as desired

Steps:

  • Preheat oven to 375°F.
  • Brown ground beef in a skillet until no pink remains. Drain fat. Stir in taco seasoning, water and black beans. Simmer 5 minutes or until sauce thickens and water evaporates.
  • Meanwhile, spread tortilla chips onto a baking sheet. Top with ½ of the cheese, the beef mixture, remaining cheese, and half of the green onions.
  • Bake 8-10 minutes or until cheese is melted and bubbly.
  • Remove from oven and add remaining green onions & desired toppings. Serve hot with salsa and sour cream.

16 ounces tortilla chips
1 pound ground beef
2 tablespoons taco seasoning
1/4 cup water
15 ounce can refried beans
4 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup guacamole
1/3 cup sliced olives
1/2 cup fresh salsa
1/3 cup roughly chopped cilantro
1/4 cup sliced or pickled jalapenos
1/4 cup diced red onion
1/4 cup sliced green onion

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat a large skillet over medium-high heat. Add in ground beef. Use a spoon to break up the meat and cook 8 to 10 minutes until beef is fully cooked through. Drain excess grease. Add in taco seasoning, stir, and cook 60-90 seconds.
  • Pour in water and add in refried beans. Stir to combine and cook until heated through. Keep warm.
  • Spread chips out onto a baking sheet (or other desired oven-safe baking dish including a 9x13 pan, cast iron skillet, or even a pie plate).
  • Sprinkle 2 cups of the cheese over the chips. Dot with the beef and bean mixture. Top with remaining 2 cups of cheese.
  • Bake in the 350 degree oven for 5 to 7 minutes, until cheese is fully melted.
  • Remove from heat and add additional toppings as desired. Serve warm.

2 tablespoons all-purpose flour
1 cup milk
7 slices processed American cheese
½ teaspoon salt

  • In a medium saucepan over medium heat, melt butter and stir in flour. Pour in the milk and stir until the mixture thickens. Stirring constantly, mix in cheese and salt. Continue to cook and stir until cheese has melted and all ingredients are well blended, about 15 minutes.

1/3 cup roma tomato, seeded and chopped
1/4 cup green onion, finely chopped
1 lb lean ground beef
1 tablespoon taco seasoning mix
1/4 cup pickled jalapeno pepper, finely chopped
8 slices bread (thick)
1 1/2 tablespoons light sour cream (or as needed)
2 cups sharp cheddar cheese, grated
1 teaspoon hot sauce (or to taste)
1 avocado, peeled, pitted and cut into small pieces
1 cup monterey jack pepper cheese, grated
1/4 cup salsa
2 tablespoons cilantro, chopped
1 1/2 tablespoons butter, spread (or as needed)

Steps:

  • In a small bowl, combine tomatoes with green onions; stir well and set aside. In a large saucepan over medium heat, add ground beef and cook half way before adding taco seasoning; stir well. When the meat is almost cooked, add pickled jalapeños and gently combine. Remove from the heat and transfer into a colander to drain the fat very well to prevent the sandwich from getting soggy.
  • To assemble the sandwich, working on only 4 slices bread, spread a thin layer of sour cream and then add about ¼ cup of Cheddar cheese over. Distribute beef mixture evenly on top of the cheese. If you want spicier, add a few drops of hot sauce over the meat.
  • Place avocado pieces on top of the meat followed by a ¼ cup of Pepper Jack cheese on each. Spoon tomato mixture over evenly and to hold everything in place, add another ¼ cup sharp Cheddar cheese on top. Add 1 tablespoons salsa per slice and sprinkle with cilantro. Place a slice of bread, press down gently and spread a thin layer of butter, covering the entire surface.
  • Place sandwiches on a baking sheet lined with foil and transfer to the oven under the broiler with the rack positioned about 8-inches from the top. When they get nice and brown, remove from the heat, carefully flip them over and butter the other side with a thin layer of butter. Return to the oven and broil until golden brown. Remove from the oven and serve immediately.

1 ½ tablespoons butter
1 tablespoon cornstarch
½ cup milk, or more as needed
1 ½ cups shredded Cheddar cheese
2 tablespoons cream cheese
1 teaspoon taco seasoning mix
½ teaspoon hot pepper sauce

Steps:

  • Melt butter in a saucepan over medium-high heat. Whisk in cornstarch until paste forms, 30 seconds to 1 minute. Whisk in milk gradually until smooth, 1 to 2 minutes. Simmer until thickened to sauce consistency, about 2 minutes.
  • Whisk Cheddar cheese, cream cheese, taco seasoning, and hot sauce into milk mixture until smooth, 1 to 2 minutes more. Add more milk as needed for desired consistency. Keep warm until ready to use.
