1/4 pound bulk spicy pork or Mexican-style sausage
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 pound American cheese, cubed
3/4 cup salsa
Tortilla chips or raw vegetables

Steps:

  • In a 1-1/2-qt. microwave-safe container, cook sausage, green pepper and onion on high for 1-2 minutes or until sausage is fully cooked; drain. Add the cheese and salsa. Cover and microwave on high for 1-2 minutes, stirring frequently until cheese is melted and mixture is smooth. Serve with tortilla chips or vegetables.

While it may not always look appetizing, this dip is always gone when we make it for parties or family events. Everyone asks for the recipe and can't believe how easy it is. Sometimes we substitute ground turkey for the ground beef and no one can tell the difference.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (16 ounce) package Velveeta cheese
1 (16 ounce) jar medium chunky salsa (or salsa of your choice)

Steps:

  • Brown ground beef and add taco seasoning as directed on packet. We usually use a little less water though.
  • Chunk the Velveeta and add to crockpot.
  • Pour in jar of salsa and add the prepared meat.
  • Let melt together in the crockpot, stirring occasionally.
  • At times, we have been in a hurry and used the microwave to help speed up the melting process for the Velveeta. Then just add the melted Velveeta to the other ingredients in the crockpot to keep warm and melty for dipping!
  • We have also used Mexican style Velveeta and Pepper jack, and it was just as good. Feel free to experiment.

1/4 cup chopped fresh cilantro
Tortilla chips

Steps:

  • Combine beer, cumin, dried oregano and garlic powder in heavy medium sauce-pan. Bring to simmer. Add beans and salsa; stir until heated through. Add Velveeta cheese; stir until cheese melts, about 3 minutes. Stir in cilantro. Transfer to bowl. Serve warm with tortilla chips.

2 pkg (8 oz.) cream cheese, softened
2 - 3 tomatoes, chopped
2 small cans chopped green chile peppers
1 medium onion, chopped
1 jar(s) taco sauce
16 oz monterey jack cheese, shredded

Steps:

  • 1. Spread cream cheese in 13 x 9 baking dish. Mix chili peppers, tomatoes, and onion; spread over cream cheese. Spread taco sauce over top and cover with shredded cheese. Bake 30 minutes at 350 degrees; cool 10 minutes. Serve with nacho chips. For 8 x 8 pan, cut recipe in half.

1 shallot, diced
6 cloves garlic, minced
2 fresh Habanero peppers (finely diced)
4 tsp butter
Quart of half and half
2-4 Tbsp. of corn starch
1.5 lb grated extra sharp cheddar cheese (Tillamook)
1 lb. grated pepper jack cheese(Tillamook)
8 oz. cream cheese (cut into small cubes)
1 can diced green chills(hot)
3/4 cup diced Jalapeños
3/4 cup diced Roasted Red Peppers
2 cans Hormel chili without beans
Tortilla chips for dipping
1 TBSP Franks Red Hot Sauce (optional)

Steps:

  • In a heavy large pot, melt butter on medium heat. Put in garlic and shallots and one half of the diced habanero peppers and sauté for about 3-5 minutes or until tender. Wisk in half and half and slowly bring to a boil (stirring often). Mix corn starch with cold water so it is dissolved and then slowly whisk in to the milk sauce base to thicken the mixture. Return the mixture to a boil. Slowly stir in cream cheese until melted. Add cheddar and pepper jack and stir until melted. Add Chili, Jalapeños, Red Peppers, Green chilies and the other half of the habanero peppers. Mix together and let simmer for 5 minutes for the ingredients to get to know each other. Transfer contents to keep dip hot. Serve with tortilla chips. Alternately, you can add Franks Hot sauce (or your favorite hot brand) to spice up the mixture a bit, although it is plenty spicy without it.

1 lb hot country breakfast sausage (pork)
2 lb velveeta light cheese food, cut in cubes
2 can(s) ro_tel diced tomatoes and green chilies
2 Tbsp chopped pickled jalapeno peppers (or more)

Steps:

  • 1. Crumble and brown the sausage in a skillet over medium high heat until browned and a bit crispy. Drain off fat and set aside.
  • 2. Place Velveeta cheese cubes and Ro-Tel in a large microwaveable bowl. Heat on high about 3-5 minutes, stirring after each minute, until cheese is completely melted and Ro-Tel is well blended and smooth.
  • 3. Stir in Jalapeno peppers and the drained sausage, combining well. Serve warm, or in a smaller crock pot with a very low or warm setting. Serve with tortilla chips, or baked pita triangles.
  • 4. To make baked pita triangles, cut a package of pita bread into fourths using a pizza cutter. Spread out on a wire rack over a baking sheet. Brush with olive oil and sprinkle with salt if desired. Bake at 350 degrees about 10-12 minutes, until crisp but not too brown. Cool on rack; package in an air-tight container.

3 lb velveeta cheese cubed
1 lb lean pork sausage, good quality
1 can(s) green chilies, 7 ounces
1 can(s) cream o mushroom soup, undiluted
1 can(s) rotel diced tomatoes, undrained
1 jar(s) roasted red peppers, drained & chopped, optional
2 lb ground round, may use chuck or reg beef

Steps:

  • 1. Cube the Velveeta Cheese into medium size cubes and set aside till needed.
  • 2. Add both the Ground Round and Pork sausage to a medium size skillet and cook over medium high heat.
  • 3. Cook meats until browned, but remove excess liquid that accumulates. Note although we used Ground Round there was still an excess accumulation of fat. Removing the fat keeps the dip nice and thick.
  • 4. Chop onion & Roasted red peppers if using into medium size pieces.
  • 5. Add the cooked ground meat along with the chopped roasted peppers, undrained chilis, & diced tomatoes, cream of mushroom soup. I USED A 6 QUART CROCK POT.
  • 6. Add the cubed Velveeta and diced onions. Stir and mix together with a large spoon.Follow Manufactures Direction for cooking. I cooked on high for 1 hour, then removed lid and stirred. Then cooked an additional 45 minutes till cheese was melted and mixture was thick and rich. Depending on your crock pot may require MORE OR LESS TIME AS NEEDED.
  • 7. Serve with chips of choice as well as optional sliced pickled jalapeno's if desired. notice how thick rich and cheesy the dip is. Add chips & a few friends & ENJOY.
  • 8. NOTE: ONCE DIP IS READY TURN TO WARM SETTING. BE AWARE OF ANY CONDENSATION THAT FORMS ON LID IF LEAVING FOR AN EXTENDED PERIOD OF TIME AS THIS MAY DILUTE YOUR DIP.

1 tablespoon butter
1 tablespoon flour
1 teaspoon salt
1 1/2 cups of cold milk
175 g red leicester cheese
100 g soft cheese (philly, etc...)
1/2 tablespoon of chopped red chile (or the paste)

Steps:

  • Make a simple bechamel sauce with the flour, butter, milk.
  • melt butter on medium heat, stirring in flour and cooking until golden.
  • add cold milk, turn up the heat to med/high, and stir constantly to avoid scalding, stir until thickened.
  • turn heat back to med and add GRATED red leicester cheese (has to be red leicester, won't taste right or be the right color other wise).
  • stir in red leicester, add 100g of soft cheese, stir through until melted and smooth.
  • add 1/2 tbs of chopped (really fine) chili's or red chili paste and stir in until smooth.
  • take off heat and serve.
  • also nice cold, has been used as the sauce for mac and cheese quite successfully, baked potato topping with bacon (kind of tastes like wendy's) and also -- if you want you can stir in some jalapeño peppers. (Make sure you drain them if canned.).

2 lb lean ground beef
1 can(s) 7 ounces green chili peppers
1 can(s) cream of mushroom soup
1 can(s) rotel tomatoes
3 lb velveeta cheese, cubed
1 medium onion ,chopped
2 pkg large white tortilla chips
extra jalapeno's as a side(optional)

Steps:

  • 1. Brown ground beef and pork sausage in a large pot or skillet, and drain off any excess fat.
  • 2. Add cooked meat to crock pot, then add remaining ingredients. Stir to mix, add the velveeta, and stir to distribute throughout meat. Cover and heat on medium to low till cheese has melted.
  • 3. When cheese has melted stir, turn heat setting to low, and serve over tortilla chips. Can serve jalapeno's on the side.
