My mom gave me a fundraiser cookbook, and this is the recipe I've used most. My whole family is on board. For toppings, think sour cream, tomatoes, jalapeno and red onion. -Judy Hughes, Waverly, Kansas

Number Of Ingredients 10

1 pound ground beef
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup fresh or frozen corn, thawed
3/4 cup uncooked instant rice
1/2 cup water
1 envelope taco seasoning
1/2 teaspoon salt
1 cup shredded Colby-Monterey Jack cheese
1 package (16 ounces) tortilla chips
Optional toppings: Sour cream, sliced fresh jalapenos, shredded lettuce and lime wedges

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in tomatoes, corn, rice, water, taco seasoning and salt. Bring to a boil. Reduce heat; simmer, covered, until rice is tender and mixture is slightly thickened, 8-10 minutes., Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is melted, about 5 minutes. Divide tortilla chips among 6 plates; spoon beef mixture over chips. Serve with toppings as desired.

16 ounces tortilla chips
1 pound ground beef
2 tablespoons taco seasoning
1/4 cup water
15 ounce can refried beans
4 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup guacamole
1/3 cup sliced olives
1/2 cup fresh salsa
1/3 cup roughly chopped cilantro
1/4 cup sliced or pickled jalapenos
1/4 cup diced red onion
1/4 cup sliced green onion

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat a large skillet over medium-high heat. Add in ground beef. Use a spoon to break up the meat and cook 8 to 10 minutes until beef is fully cooked through. Drain excess grease. Add in taco seasoning, stir, and cook 60-90 seconds.
  • Pour in water and add in refried beans. Stir to combine and cook until heated through. Keep warm.
  • Spread chips out onto a baking sheet (or other desired oven-safe baking dish including a 9x13 pan, cast iron skillet, or even a pie plate).
  • Sprinkle 2 cups of the cheese over the chips. Dot with the beef and bean mixture. Top with remaining 2 cups of cheese.
  • Bake in the 350 degree oven for 5 to 7 minutes, until cheese is fully melted.
  • Remove from heat and add additional toppings as desired. Serve warm.

1 lb lean (at least 80%) ground beef
1 can (11 oz) whole kernel corn with red and green peppers, drained
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained
8 oz Mexican prepared cheese product (from 16-oz loaf), cut into cubes
6 oz nacho-flavored tortilla chips (about 64 chips)

Steps:

  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain.
  • Reduce heat to medium. Add corn and tomatoes to beef in skillet; cook until thoroughly heated and desired consistency, stirring occasionally.
  • In small microwavable bowl, microwave cheese cubes and 2 teaspoons water uncovered on High 15 seconds; stir and repeat until cheese is melted and smooth.
  • Divide tortilla chips evenly among 6 plates. Top with beef mixture; drizzle with melted cheese. Garnish with chopped fresh cilantro, if desired.

1 tablespoon olive oil, optional
1 pound lean ground beef (I used 90% lean)
one 1-ounce packet taco seasoning (I used medium heat, reduced sodium)
8 cups corn tortilla chips (I used Hint of Lime)
one 13-ounce jar Cowboy Caviar (or a thick black bean, corn, red pepper salsa)
2 to 3 cups shredded Mexican cheese blend
2 green onions, sliced into thin rounds
1 to 2 tablespoons cilantro or to taste, minced

Steps:

  • Preheat oven to 350F.
  • To a large skillet, add the optional oil, ground beef, and cook beef over medium-high heat for about 5 minutes, or until cooked through; stir and crumble as it cooks.
  • Evenly sprinkle the taco seasoning and stir; set aside.
  • To a separate oven-safe skillet, add half the chips, evenly top with half the beef, half the cowboy caviar, and half the cheese.
  • Repeat the layering process with the remaining half of the chips, beef, cowboy caviar, and cheese.
  • Bake for about 10 minutes, or until cheese is melted.
  • Evenly sprinkle with the green onions, cilantro, and serve immediately. Nachos are best warm and fresh.

2 large green peppers, sliced
1 large sweet onion, sliced
1 tablespoon olive oil
2 packages (12 ounces each) Hawaiian sweet rolls
1-1/2 pounds sliced deli roast beef
12 slices provolone cheese
3/4 cup butter
1-1/2 teaspoons dried minced onion
1-1/2 teaspoons Worcestershire sauce
1 teaspoon garlic powder

Steps:

  • In a large skillet, cook green peppers and onion in oil over medium-high heat until tender, 8-10 minutes. Without separating rolls, cut each package of rolls in half horizontally; arrange bottom halves in a greased 13x9-in. baking pan. Layer with roast beef, pepper mixture and cheese; replace top halves of rolls. , In a small saucepan, melt butter, dried onion, Worcestershire sauce and garlic powder. Drizzle over rolls. Cover and refrigerate 8 hours or overnight., Preheat oven to 350°. Remove rolls from refrigerator 30 minutes before baking. Bake, uncovered, 15 minutes. Cover with foil; bake 10 minutes longer until cheese is melted.
