Enjoy this, my friends! If you're on the fence about meatloaf, or even if you've written it off entirely as something you'd never ever try, give this a shot. Consider it adventure eating, like huitlacoche. Or calf nuts.

Number Of Ingredients 14

1 cup whole milk
6 slices white bread
2 lbs ground beef
1 cup parmesan cheese, freshly grated
1/4 teaspoon seasoning salt
3/4 teaspoon salt
fresh ground black pepper
1/3 cup flat leaf parsley, minced
4 whole eggs, beaten
10 slices bacon, thin
1 1/2 cups ketchup
1/3 cup brown sugar
1 teaspoon dry mustard
Tabasco sauce

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Pour milk over the bread slices. Allow it to soak in for several minutes.
  • Place the ground beef, milk-soaked bread, Parmesan cheese, seasoned salt, salt, black pepper, and parsley in a large mixing bowl.
  • Pour in beaten eggs.
  • With clean hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!).
  • Lay bacon slices over the top, tucking them underneath the meatloaf.
  • Make the sauce. Add ketchup, brown sugar, dry mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
  • Bake for 45 minutes.
  • Pour another 1/3 of the sauce over the top.
  • Bake for another 15 minutes.
  • Slice and serve with remaining sauce.
  • Serve with mashed potatoes. Yummy!

My mother was hungry for meatloaf, so I wanted to make something different and found this recipe. I didn't use the bacon as I felt there was enough fat in the ground beef and believe me, it didn't need it. I added onion and peppers to mine, as I can't imagine a meatloaf without. Number Of Ingredients 16

2 lb ground beef
6 slice bread
1 1/4 c milk
1/2 - 2/3 c chopped onion
1 medium green bell pepper, chopped
1 1/4 c shredded parmesan cheese
1 tsp kosher salt
1/2 tsp each ~ season salt & fresh cracked black pepper
4 eggs, beaten
1/4 c fresh chopped parsley
GLAZE
GLAZE
1 1/2 c ketchup
1/3 c brown sugar
1 tsp ground mustard
1/2 tsp dijon mustard

Steps:

  • 1. Preheat oven to 350 degree F. In a bowl add bread and milk. Swish around so all bread is soaking the milk. Leave set for 15 minutes or so. In a large bowl, add ground beef, seasonings, eggs, parsley, soaked bread, peppers, onions and Parmesan cheese. Mix well, I use my hands.
  • 2. I split the mixture in half and shaped 2 loaves. Placed in a 9 x 13 baking dish. Make glaze by placing all ingredient in a bowl, and whisk until thoroughly blended. Spoon half the glaze between the 2 loaves. Bake for 45 minutes. Add more glaze and continue baking another 20 - 25 minutes or until meat is completely cooked.
  • 3. Leave set up before cutting, as this is a very tender loaf. Quite delicious! Enjoy!

Nonstick cooking spray, for the pan
6 slices Texas toast, cubed
1/2 cup milk
2 pounds ground beef
6 strips crisp cooked bacon, chopped
2 large eggs
2 red onions; 1 finely chopped and 1 thinly sliced
1 cup plus 2 tablespoons ketchup
1/4 cup plus 1 tablespoon mustard
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 ounces Cheddar, cut into small cubes, plus 1 cup grated Cheddar
1/4 cup grated yellow onion (from about 1/2 onion)
Dill pickle chips, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
  • Mix together the bread and milk in a bowl and set aside.
  • Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
  • Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
  • Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
  • Slice and serve with the sliced red onions and dill pickle chips.

Dash or 2 hot sauce (more if you like)
Dash or 2 Worcestershire sauce

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F.
  • Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, salt, some pepper, seasoned salt and parsley in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain.
  • Lay the bacon slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.
  • Next, make the tomato sauce: Pour the ketchup into a bowl. Add the brown sugar and dry mustard, and splash in the hot sauce and Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.
  • Bake for 45 minutes, and then pour over another one-third of the remaining tomato sauce over the meatloaf. Bake for an additional 20 to 25 minutes; the meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.
  • Serve with the remaining tomato sauce on the side as a dipping sauce.
