Green peppers stuffed with a mixture of ground beef, rice, and onion, seasoned with fresh garlic, cumin, coriander, and cayenne pepper, and held together with tomato sauce are topped with shredded mozzarella cheese and baked.

2 ½ cups water
1 cup brown rice
1 teaspoon olive oil, or as needed
6 large green bell peppers, halved and seeded
1 ½ pounds lean ground beef
1 onion, diced
1 (15 ounce) can tomato sauce
2 cloves garlic, minced
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground cayenne pepper
salt and ground black pepper to taste
2 cups finely shredded mozzarella cheese

Steps:

  • Bring 2 1/2 cups water to a boil in a saucepan; add rice and stir. Reduce heat, cover, and simmer until the rice is tender, 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Drizzle olive oil in a 9x13-inch casserole dish.
  • Fill a separate saucepan with water and bring to a boil; add green bell peppers and simmer for 3 minutes. Transfer peppers to a bowl of ice water until peppers are cooled. Arrange peppers in the prepared casserole dish.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Return skillet to heat; mix onion and cooked rice into ground beef. Pour tomato sauce into ground beef mixture and stir to combine.
  • Mix garlic, coriander, cumin, cayenne pepper, salt, and black pepper into ground beef mixture. Simmer until flavors have combined, 10 minutes. Remove from heat and spoon 2 to 3 tablespoons ground beef mixture into each bell pepper half. Sprinkle mozzarella cheese over each filled pepper. Cover casserole dish with aluminum foil.
  • Bake in the preheated oven for 15 minutes. Remove aluminum foil and continue to bake until cheese is bubbling and melted, about 15 more minutes.

1 cup uncooked white rice
3 large green bell peppers, halved and seeded
1 ½ pounds lean ground beef

garlic powder to taste
salt to taste
ground black pepper to taste

Steps:

6 medium fresh tomatoes, peeled, seeded and chopped
1 medium onion, chopped
3 celery ribs, diced
1 can (8 ounces) tomato sauce
1 cup water
2 teaspoons salt, divided
1/2 teaspoon pepper, divided
4 medium green peppers
1 pound lean ground beef (90% lean)
1 cup instant rice, cooked
1 teaspoon dried basil

Steps:

  • In a large saucepan or Dutch oven, combine tomatoes, onion, celery, tomato sauce, water, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to a boil. Reduce heat and simmer, 10-15 minutes. , Meanwhile, cut tops off the green peppers and remove seeds; set aside. In a bowl, combine ground beef, rice, basil and remaining salt and pepper; mix well. Fill peppers with beef mixture. Carefully place peppers in tomato sauce. Spoon some sauce over tops of peppers. , Cover and simmer until beef is cooked and peppers are tender, 40-45 minutes.

½ cup uncooked Arborio rice
2 green bell peppers, halved and seeded
1 tablespoon olive oil
2 green onions, thinly sliced
1 teaspoon dried basil
1 teaspoon Italian seasoning
1 teaspoon salt
1 pinch ground black pepper
1 tomato, diced
½ cup crumbled feta cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  • In a medium saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and simmer for 20 minutes. Remove from heat, and set aside.
  • Place the peppers cut-side down on the prepared baking sheet. Roast 25 to 30 minutes in the preheated oven, or until tender and skin starts to brown.
  • While the peppers are roasting, heat oil in a medium skillet over medium-high heat. Cook the onions, basil, Italian seasoning, salt, and pepper in oil for 2 to 3 minutes. Savory and delightfully easy-to-make stuffed green peppers are a great healthy option for lunch or dinner! Simply stuff tender green bell peppers with cheesy ground beef and rice filling, cover them with tomato sauce, and bake until golden!

6 green bell peppers
each, salt & pepper ((to taste - plus ¼ teaspoon salt for the boiled peppers))
1 lb ground beef
⅓ cup onion ((chopped))
¼ tsp garlic powder
14 ½ oz diced tomatoes
½ cup long grain white rice ((uncooked))
½ cup water ((plus more for mixing with the canned tomato soup))
1 tsp Worcestershire sauce
1 cup cheddar cheese ((shredded))
21 ½ oz tomato soup ((2 10.75 ounce cans condensed soup))

Steps:

  • Over high heat, bring a large pot of salted water to a boil. Cut the tops off the bell peppers and remove the seeds. Drop the peppers in the boiling water and allow them to cook for 5 minutes. Use tongs to remove the peppers. Salt the inside of each bell pepper with a ¼ teaspoon of salt, or to taste, then set them aside for later.
  • In a skillet over medium-high heat brown the ground beef with the chopped onions for 5-6 minutes. Drain off the excess fat and season with garlic powder, salt, and pepper.
  • Next, add the canned tomatoes, rice, water, and Worcestershire sauce. Stir to combine then cover and allow to simmer for 15 minutes, or until rice is fully cooked. Remove from heat, then stir in the cheese.
  • Preheat the oven to 350°F (175°C). Use a spoon to scoop an equal amount of the ground beef and rice mixture into each bell pepper. Place the bell peppers on a baking dish with the open side up.
  • In a medium mixing bowl, combine the tomato soup with a small amount of water - Just enough to make it a gravy consistency. Pour the sauce over each of the peppers.
  • Cover with foil and bake for 25-35 minutes. The peppers should be heated through and the cheese should be melted and bubbly. Remove from the oven and allow to cool for 2-3 minutes before serving.

Shawarma Stuffed Peppers image

These stuffed peppers are inspired by the flavors of one of my all-time favorite street foods, shawarma. Shawarma is a Middle Eastern dish consisting of seasoned meat cooked on a spit and then shaved thin. The spice combination typically found in shawarma is savory, warm and totally addictive!

2 tablespoons olive oil or canola oil
1 yellow onion, chopped
Kosher salt and black pepper
2 teaspoons Shawarma Seasoning, homemade (recipe follows) or store-bought
1 pound ground turkey
1 cup cooked basmati rice or 1 cup cauliflower rice
One 14-ounce can diced tomatoes
4 large or 6 small bell peppers
1/4 cup tahini
1 lemon
Fresh herbs (such as cilantro, parsley or mint), for serving
2 tablespoons garam masala
2 tablespoons curry powder
1 tablespoon powdered chicken bouillon
2 teaspoons ground turmeric

Steps:

  • In a large skillet or pot, heat the oil over medium-high heat. Add the onions and a pinch of salt and cook, stirring, until soft, 5 to 7 minutes. Add the Shawarma Seasoning and cook for another minute. Add the ground turkey and season with 1/2 teaspoon salt and a few turns of black pepper. Brown the turkey, breaking it up with a wooden spoon or spatula. When it's all cooked through and no longer pink, reduce the heat to low.
  • If you're using cauliflower rice, microwave it (covered in a bowl or in the bag it came in if the package says that it's okay) for 3 minutes. Add the basmati rice or cauliflower rice to the skillet and stir in the tomatoes. Taste and adjust the seasoning as desired.
  • Cut off the tops of the bell peppers, core them and place them in a casserole dish. Fill the peppers with the turkey mixture and then bake for 35 minutes.
  • Meanwhile, make the tahini sauce. Stir together the tahini, 3 tablespoons cold water
  • water, 1 tablespoon lemon juice and salt and pepper to taste until smooth. When the peppers are done, squeeze them with additional lemon juice, top with a nice big blob of tahini sauce and a pile of fresh herbs. Enjoy!
  • Combine the garam masala, curry powder, powdered chicken bouillon and turmeric in a small bowl and whisk together. Store in an airtight container.

Another Slovak favorite, this is one of my Mom's great recipes. Again, uses condensed tomato soup (see my Velveeta Mac and Cheese for another way tomato soup compliments a recipe). So good, it rivals Stouffer's frozen in the store. Compare them for yourself!

5 medium green peppers
1 lb ground beef, uncooked
1 cup cooked rice (Minute Rice works well)
1 (10 ounce) can condensed tomato soup
3/4 cup water
2 eggs
1 teaspoon sugar
2 teaspoons minced garlic
2 teaspoons diced onions
2 teaspoons seasoning salt

Steps:

  • Slice tops horizontally off of 4 large or 5 medium-sized green peppers. Cut out the seeds and membrane from inside each pepper and rinse with water. Arrange in baking dish.
  • Prepare 1 cup of rice per package instructions. When done, allow rice to cool slightly (the cooler the rice, the easier to handle).
  • In mixing bowl, break up raw ground beef. Add garlic, onion, and seasoned salt. Crack 2 eggs into mixture. Add the cooled rice and mix all together using hands in a mixing bowl (as if you were making a meatloaf or burger patties).
  • Once mixture is combined, fill each green pepper to the top (Note: If there is any mixture left over, you can shape into meatballs for a pasta dinner).
  • In a small bowl, empty contents of tomato soup can. Add 3/4 cup of water. Add 1 teaspoon of sugar to cut the acidity of the tomato soup. Stir to combine, then pour over green peppers in baking dish.
  • Place baking dish in oven, uncovered, for 70 to 90 minutes at 350 degrees. Check beef mixture in peppers near the end of cooking time to make sure beef is cooked thoroughly.
  • Remove from oven. Spoon tomato mixture over top of green peppers and serve.

The cinnamon and allspice give these stuffed peppers a really special flair! I usually make a little extra rice (Jasmine is my personal favorite) and serve the peppers with the extra rice and some of the tomato sauce. You can make these ahead and freeze them if you make them through the "stuffed" part. You can adjust the spices to your taste. I have no idea where I got this recipe but I've been making these for over 35 years!

4 large green peppers
1 medium onion, chopped
1 lb ground beef
2 teaspoons butter, melted
1 (8 ounce) can tomato sauce
1/2 teaspoon salt
1/2 cup shredded cheese

Steps:

  • Cut off tops of green peppers, remove centers and discard.
  • Cook peppers in boiling water for approximately 5 minutes.
  • Drain and set peppers aside.
  • Saute onion in butter until tender, add ground beef, cook until browned, drain well.
  • Stir in remaining ingredients except for the cheese.
  • Stuff peppers with meat mixture and place in an 8-inch square baking dish.
  • Bake at 350 degrees for 15 minutes.
  • Sprinkle tops of green peppers with cheese and bake until cheese melts.
