OLD-FASHIONED APPLE DUMPLINGS



Old-Fashioned Apple Dumplings image

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

1-1/2 cups water
1-1/2 cups sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons butter
3 to 6 drops red food coloring, optional
DUMPLINGS:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup shortening
1/3 cup 2% milk
6 small tart apples, peeled and cored
4 teaspoons sugar, divided
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 teaspoons butter, softened
3/4 cup heavy whipping cream

Steps:

  • For syrup, in a small saucepan, bring the water, sugar, cinnamon and nutmeg to a boil, stirring occasionally. Remove from the heat; add butter and food coloring if desired. Stir until butter is melted; set aside. , For dumplings, in a small bowl, combine the flour, baking powder and salt; cut in shortening until crumbly. Gradually add milk, tossing with a fork until dough forms a ball. , On a lightly floured surface, roll dough into an 18x12-in. rectangle. Cut into six squares. Place an apple in the center of each square. , Combine 2 teaspoons sugar, cinnamon and nutmeg; sprinkle over apples. Dot with butter. Bring up corners of pastry to center; pinch edges to seal. , Place in a greased 11x7-in. baking dish. 4 small apples
4 teaspoons sugar
4 teaspoons cinnamon
nutmeg
1/4 cup butter

  • roll out pie crust. cut into 4 even sections.
  • peel, core, and quarter apples.
  • place 1 whole apple into 1 section of dough. fill with 1 teaspoons sugar, 1 teaspoons cinnamon, a pinch of nutmeg, and 1 pat of butter. bring up sides of dough to enclose apple. place in greased baking dish.
  • repeat with rest of apples.
  • bake at 350F for 20 minutes or until apples are soft.

2 cups all-purpose flour
1 ½ cups white sugar
2 teaspoons baking powder
1 teaspoon salt
2 eggs, beaten
1 cup vegetable oil

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

I don't know where my mom got this recipe....it may have been from my grandma...but this was one of my few favorite deserts growing up. It is good for breakfast with milk too! She told me that she was making these last weekend, and I just had to post the recipe. If only I could make them taste as good as she. The trick is using Cortland Apples from Pennsylvania...unfortunately I can't find them anywhere in Arizona.

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening
3/4 cup buttermilk, although I think my mom substituted with milk soured with lemon juice
8 small apples, peeled, cored and wedged but keep together
4 teaspoons cinnamon
4 tablespoons butter
2 tablespoons sugar
1 cup sugar
1/2 cup water

Steps:

  • Sift flour twice. Once on its own and a second time with the baking soda and salt. Cut in shortening until the mixture is fine, like a cornmeal.
  • Add buttermilk. Mix until a stiff dough forms.
  • Turn dough out on to a floured board and knead slightly.
  • Roll the dough into a 20x10 inch rectangle. Cut into 8 5" squares.
  • Place an apple (already cored, peeled, and sectioned) into the center of each square. Stand it up as if you were putting a puzzle together. Top each apple with 1/2 TBS butter, some sugar, and cinnamon.
  • Fold the corners of each square to the top and center, covering each apple completely. Make sure the tops are sealed well.
  • Place the dumplings on a greased baking pan (a casserole pan) and bake for 15 minutes at 425 degrees.
  • In the meantime, make a simple syrup with the 1 cup of sugar and 1/2 cup water (heat until sugar dissolves in a pan).
  • Pour this syrup over the dumplings, and place back in oven to bake for another 15 minutes at 425 degrees.
  • Serve with ice cream for desert or milk for breakfast! Yummy!

When we were in elementary school, we lived in a house that had 3 apple trees. In the fall it was our job to pick up the apples for my mother. We came home from school to the wonderful aroma of her apple dumplings baking for supper. These are a little different than many recipes, but we loved them, and I have used this recipe for years. I put it here to share and keep safe (in case it wanders off.) :) I am posting the sauce recipe just after the directions.

2 cup(s) all purpose flour
4 teaspoon(s) baking powder
1 teaspoon(s) salt
1 cup(s) milk
1 teaspoon(s) cinnamon

4-5 large apples, chopped (we used jonathon, but granny smith would work well

Steps:

  • Coat chopped apples with cinnamon and brown sugar.
  • Mix flour, baking powder, salt and milk to make a dough.
  • Roll the dough into a rectangle and cover with the chopped apple mixture.
  • Roll the apples and dough up, as you would for cinnamon rolls. Cut in 1 inch slices and place in buttered baking 9 X 13 baking dish.
