GRANDMA'S OATMEAL CAKE
My Grandma's Oatmeal Cake is an old-fashioned cake made with rolled oats and a delicious coconut almond topping.

Steps:
- Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
- Add the oatmeal and butter to a bowl and pour boiling water on top. Set aside.
- In a mixing bowl combine the eggs, brown sugar, and white sugar and mix well.
- In a separate bowl sift together the flour, cinnamon, baking soda, nutmeg, and salt.
- Add to the bowl with eggs and sugars and stir to combine.
- Add the oatmeal mixture and stir to combine.
- Bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
- While the cake is baking, make the topping by combining all the ingredients in a bowl.
- Remove the cake from the oven and turn the oven to high broil.
- Spread the topping evenly over the warm cake and place under the broiler for 2-4 minutes or until the coconut is golden brown.

- 1. Preheat oven at 350 degrees. Pour boiling water over oatmeal and set aside for 20 minutes.
- 2. Cream butter and sugars. Add eggs. Beat well.
- 3. Add vanilla and oatmeal mixture.
- 4. Add flour, baking soda, salt, cinnamon, and nutmeg. Mix well.
- 5. Pour into a greased 9x13 inch pan.
- 6. Bake for 30 minutes.
- 7. For Topping: Melt butter. Add coconut, nuts, brown sugar, and milk.
- 8. Mix well.
- 9. Frost cake when you take it out of the oven.
- 10. Broil until the top is brown. Watch it carefully so it doesn't burn.

- 1. Stir together the boiling water and oatmeal until there are no lumps, and let cool in refrigerator. (you can use leftover oatmeal if desired, use at room temperature). Combine sugars,oleo and eggs beat well then add the flour, cinnamon, soda and salt. Blend well then add cooled oatmeal and blend well. Pour into sprayed 9x13-inch cake pan. Bake in 350^ oven for 40-50 minutes. --- Frosting: In a small saucepan combine butter,sugar and milk, heat to boiling. Remove from heat add vanilla, coconut and pecans.
