My family absolutely loves when I make this! It looks complicated, but it's really not. I got this out of a Paula Deen magazine. Just a few hints...I use flexible cookware when I bake and the first time I made this I had to use 3 regular sized loaf pans. The next time I used two flexible bunt pans it turned out great! I couldn't find one on here that used brown sugar in place of white. So I thought I would share this one. I don't know how many servings this makes, all I know is that it will feed my brood and then some. **Note: I have substituted Splenda Brown Sugar and light sour cream as well; it still turns out fantastic! Please let me know what you think!

6 medium very ripe bananas
2 tablespoons vanilla extract
2 cups firmly packed brown sugar
1 1/2 cups vegetable oil
1 cup sour cream
4 large eggs
3 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 cup ground pecans
2 cups miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350. Grease two (6x9 inch) loaf pans.
  • In a small bowl, mash bananas together with vanilla.
  • In a large bowl combine brown sugar, oil, sour cream, and eggs, stirring until combined.
  • In a medium bowl, combine flour, baking soda, baking powder, and salt. Gradually add to sugar mixture, stirring until just combined. Stir in banana mixture, ground pecans, and mini chocolate morsels.
  • Pour into pans and bake for 1 hour and 15 minutes, or until wooden pick inserted in center comes out clean. Let cool in pans for 15 minutes; remove from pans, and cool completely on wire racks.

This was one of my favorite recipes my mom made when I was growing up. I have used pecans instead of walnuts.

1 1/2 cup(s) all purpose flour
1/8 teaspoon(s) salt
1/3 cup(s) butter, melted
3/4 cup(s) sugar
3 - bananas, very ripe
1 - egg, beaten
1 teaspoon(s) vanilla
1 teaspoon(s) baking soda
1/2 cup(s) walnuts, chopped

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 9 x 5 inch loaf pan.
  • In a bowl, Mach the bananas until smooth. Stir the melted butter into the mashed bananas.
  • Mix in the baking soda and salt.
  • Stir in the sugar, egg and vanilla.
  • Mix in the flour. Then stir in the nuts.
  • Pour into the prepared loaf pan.
  • Bake for 1 hour or until done. A toothpick inserted into the middle should come out clean.
  • Remove from oven and cool on a wire rack. When cooled, remove from the pan and slice.

Mama's Banana Bread is wonderful for breakfast (try it toasted) with sweet cream butter, midday with coffee, or a late night snack. It's so easy to make, don't wait for the holidays....have it for the family all year long!!

8 ounces butter (2 sticks)
2 cups sugar
2 large eggs
2 cups mashed bananas (about 6 medium bananas)
1/4 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, sift together flour, salt, and baking soda. Set aside.
  • Melt butter. In a large mixing bowl, with hand mixer, beat butter and sugar together until well blended. Add eggs, ONE AT A TIME, mixing well after each egg. Add mashed bananas and vanilla extract. Mix together.
  • Fold in the flour mixture and walnuts. Blend until all the flour is moist.
  • Grease two 9x5x3-inch loaf pans. Divide batter equally between the 2 pans.
  • Bake 1 hour or until center of loaf is firm and toothpick inserted comes out clean.

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

This recipe was one of my favorites passed down from my mother. Whether on a rainy day with a hot cup of warm cocoa, or waking up to eat for breakfast, this bread is an instant classic!

1 3/4 c flour
2/3 c sugar
1/2 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1/2 c butter, softened
2 eggs, beaten
1 c mashed bananas (2 medium ripe bananas)
1/2 c pecans or walnuts, chopped (optional)

Steps:

  • 1. Preheat oven to 350*. Grease and flour 9x5 loaf pan. In large bowl, use a whisk and mix all dry ingredients.
  • 2. With a pastry blender, cut in shortening until mixture resembles course crumbs. With a fork, stir in mashed bananas & eggs until blended. (Also add nuts here if desired).
  • 3. Spread batter evenly in pan. Bake 55 minutes to 1 hour until toothpick inserted in center comes out clean.
