MINTY MUSHY PEAS

Minty Mushy Peas image

This is a fantastic recipe that is so quick and so simple and uses our reliable friends the frozen peas, which work really well here. Great with fish, meat or even as a vegetarian dish with a big dollop of butter on top.

Provided by Jamie Oliver

Categories     side-dish

Time 10m

Yield 4 servings

Number Of Ingredients 6

2 tablespoons olive oil
1 bunch spring onions, chopped
1 handful fresh mint, leaves picked
1 pound (500 grams) frozen peas
2 large knobs butter
Sea salt and freshly ground black pepper

Steps:

  • Heat the oil in a pan and add the chopped onions, mint, and peas. Cover and leave for a few minutes to steam. Mash with a potato masher. You can do this with a food processor as well, just pulse it until smooth. Whether mashing or pulsing, when it's done add the butter and season very carefully, to taste.

TRADITIONAL BRITISH MUSHY PEAS

Traditional British Mushy Peas image

Mushy peas are the traditional accompaniment to authentic British fish and chips. In the UK they would be traditionally made using marrowfat peas, but this version uses much more readily available dried split green peas.

Provided by Food Network

Categories     side-dish

Time 8h45m

Yield 6 servings

Number Of Ingredients 5

2 cups dried split green peas
1 tablespoon baking soda
Salt
2 tablespoons unsalted butter, at room temperature
Fish and chips, for serving

Steps:

  • Put the split green peas in a large pot with the baking soda and enough water to cover the peas four times over. Cover and allow to rehydrate in the fridge overnight.
  • Drain the peas in a colander and rinse with cold water to remove any lingering baking soda.
  • Return the peas to the pan and cover with cold water by 1/2-inch. Add some salt, bring to a boil and then reduce the heat to a simmer. During the simmering, discard any pea foam that forms on top using a slotted spoon. The peas are done cooking once they just lose their bite, 30 to 40 minutes. Overcooking results in soup, which isn't what we're going for.
  • Remove from the heat, add the butter and stir to fully incorporate. Taste and add more salt if required.
  • Serve immediately with fish and chips, or cool and store for up to 3 days.

MUSHY PEAS

Mushy Peas image

So here is the story behind me and mushy peas. I love peas, but I don't like mushy peas (like the kind that come out of a can mushy, not like this recipe mushy), so when I read about mushy peas and fish and chips, my curiosity was piqued -- the description sounded good. So of course I went in search of a recipe. I have no looked back! This is so good! I eat it when we have real fish and chips and when we have grilled fish and sweet potato chips! It is also a great side for pork chops or potroast in place of the mashed potatoes! I found this on allrecipes.com sometime back in 2008. Very good!

You can also buy these peas canned but they are quite expensive and are so easy to make. These peas are also common in England as Pub Fare. I love them served with good Bangers (sausages) and a green saladWhat we call Baking soda in Canada is known elsewhere as bicarbonate of soda.

CRISPY OVEN FISH FRY WITH MUSHY PEAS

Crispy Oven Fish Fry with Mushy Peas image

Provided by Rachael Ray : Food Network

Time 1h15m

Yield 4 servings

Number Of Ingredients 19

5 tablespoons butter
3 cups panko crumbs
1 tablespoon seafood seasoning (recommended: Old Bay) or Szeged Fish spice, a palmful
1 tablespoon granulated onion, a palmful
1 tablespoon granulated garlic, a palmful
1 lemon or lime, zested
A couple tablespoons freshly chopped thyme leaves
A couple tablespoons finely chopped chives
1 1/2 to 2 pounds cod, cut from the thickest part of fillets shaped into 8 rectangular batons
Salt
2 extra-large egg whites, beaten to frothy
1 cup packed flat-leaf parsley
1 cup packed fresh mint
3 cups freshly shelled peas or frozen and defrosted organic peas, patted dry
1 tablespoon extra-virgin olive oil
2 large shallots, finely chopped
2 cups chicken stock-in-a-box
Freshly ground black pepper
Malt vinegar

Steps:

  • Heat the oven to 400 degrees F. Arrange a baking rack over the top of a baking sheet.
  • Melt 4 tablespoons butter over low heat in small pot. Put the bread crumbs in a shallow dish and douse with the melted butter and toss to combine. Season with seafood seasoning, granulated onion powder, granulated garlic, citrus zest, thyme and chives.
  • Clean and pat the fish dry, then season with salt, to taste. Coat the fish in egg whites, then gently press them into the bread crumbs to coat evenly, then arrange them on the baking rack. Bake on center rack of the oven until the fish is white and flaky and the crumbs are golden, about 20 minutes.
  • Meanwhile, add the parsley and mint to a food processor and pulse to finely chop, then scrape into a bowl and set aside. Return the base to the processor; do not rinse the base. Add the peas and pulse until very finely chopped.
  • In a medium saucepan, heat 1 tablespoon of extra-virgin olive oil, a turn of the pan, and the remaining butter over medium heat. Add the shallots and saute for 5 minutes, then add the stock and peas and bring to a bubble over medium-high heat. Cook the fresh peas for about 10 minutes, and about 6 to 7 minutes, if using frozen defrosted peas. When most of the liquid has evaporated, season with salt and pepper, to taste, and stir in the herbs. Remove from the heat.
  • Spoon pools of not-so-mushy peas onto each dinner plate and top with crispy fish batons. Douse the fish with lots of malt vinegar and enjoy!

SMOKED TROUT FISH CAKES WITH MUSHY PEAS

Smoked trout fish cakes with mushy peas image

These homemade fishcakes, with a horseradish kick are packed with flavour and goodness, perfect for a midweek meal

Provided by Good Food team

Categories     Dinner, Main course, Supper

Time 45m

Number Of Ingredients 8

600g potatoes , diced
2 tbsp hot horseradish (we used English Provender)
200g smoked trout fillets, flaked
zest and juice 1 lemon , plus extra lemon wedges to serve
25g plain flour
400g frozen peas
100ml 3 and a half fl oz hot vegetable stock
1 tbsp vegetable oil

Steps:

  • Cook the potatoes in boiling salted water for about 10 mins, until tender. Drain really well, then return to the pan and steam dry for a few mins. Remove from the heat, add the horseradish, then mash together.
  • Gently stir in the flaked trout, lemon zest and half the juice with some seasoning. When the mixture is cool enough to handle, make 8 patty-shaped cakes, dust each one lightly with flour, then chill for 5 mins to set.
  • To make the mushy peas, put the peas in a pan with the stock and bring to the boil, reduce the heat and cook for 3 mins until tender. Transfer to a food processor, or use a stick blender, and whizz for 30 secs to a crush. Tip them back into the pan, add a squeeze of lemon juice and some seasoning, and keep warm.
  • Heat the oil in a frying pan until hot, cook the fish cakes for 3-4 mins on each side until golden and crisp - you may have to do this in batches. Serve with mushy peas and some extra lemon wedges on the side.

BRITISH MUSHY PEAS (USING REGULAR SPRING PEAS)

British Mushy Peas (Using Regular Spring Peas) image

Mushy peas are the quintessential side veg to accompany fish & chips in the UK. The traditional recipes use marrowfat peas, but more modern versions take advantage of the ordinary English spring peas you can find in any freezer case. This version was bright, refreshing, and while it does taste different from the marrowfat version, it is still quite good. This is also great served with with lamb. Adapted from Tom Aikens version, as seen on Market Kitchen.

Provided by HeatherFeather

Categories     Vegetable

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 5

1 kg frozen peas, rinsed (regular English peas or spring peas)
40 g unsalted butter
2 teaspoons salt (to taste)
pepper, to taste
10 g of fresh mint (a small handful of leaves)

Steps:

  • Heat some water in a saucepan to boiling, then add the peas and cook for about 5 minutes until tender.
  • Drain, but save about 200 ml of the cooking water.
  • Puree in a blender ( or use a stick blender) with butter, mint leaves, salt & pepper to taste, and some of the reserved cooking liquid (adding as much or as little as you feel you need - you want it kind of pasty and gloppy, like loose mashed potatoes).
  • Leave a few chunks. Test for seasoning and adjust as needed.
  • Reheat gently in saucepan if needed.

Pork Medallions with Beans and Rice and Mushy Peas image

Provided by Herb Mesa

Time 1h

Yield 4 servings

Number Of Ingredients 17

4 pork medallions (about 2 pounds)
Kosher salt and freshly ground black pepper
Juice of 2 limes
1/4 cup chopped fresh cilantro, divided
1 tablespoon olive oil
1 medium onion, sliced thin
2 tablespoons olive oil
1 medium onion, diced
1 green pepper, seeded and diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 (14-ounce) can black beans, drained and rinsed
1 teaspoon red wine vinegar
2 bay leaves
1 can sweet peas, drained
1/4 cup fat-free sour cream
1 cup cooked brown rice

Steps:

  • In large bowl, place the pork, a good pinch of salt and pepper, lime juice and half of the chopped cilantro. Let the mixture sit for about 10 minutes.
  • In a medium saute pan, heat 1 tablespoon olive oil over medium heat. Add the sliced onion to the pan and saute, stirring occasionally, until the onions are browned, about 8 to 10 minutes. Season with a little bit of salt. Set aside and keep warm.
  • To make the beans: In a large saute pan, heat 2 tablespoons olive oil over medium heat and add the onion, green pepper, garlic, cumin, and the remaining half of the cilantro. • Remove the pork from the marinade, shake off the excess liquid. Grill the pork for 5 minutes on each side. Cover and keep warm.

  • Divide the rice among 4 plates. Place a piece of pork on each plate. Top the pork with a spoonful of pea puree, then the onions, and then the beans.
