1 (1-pound) loaf bread or pizza dough (fresh, or frozen and thawed)
Nonstick cooking spray
1/2 cup grated Parmesan
1 tablespoon butter
1/2 cup unsalted butter, softened
1 pound assorted wild mushrooms (chanterelle, oyster, shiitake, crimini, portobello, etc.), stemmed and sliced
1/2 cup chopped yellow onion
2 cloves fresh garlic, minced or 2 teaspoons jarred, minced
1 teaspoon dried thyme
6 cups reduced-sodium chicken broth
1 cup dry white wine
1/2 chopped fresh parsley leaves
Salt
Freshly ground black pepper
1 cup lowfat milk
1 cup andouille sausage
1 cup chopped arugula
1/4 cup chopped walnuts

Steps:

  • Preheat oven to 450 degrees F. Coat a large baking sheet with cooking spray.
  • Break dough into 8 equal pieces and roll each piece into a thick rope shape. Twist each 'rope' piece into a knot. Place balls on prepared baking sheet and spray with cooking spray. Sprinkle with Parmesan to coat surface. Bake 8 minutes, until golden brown.
  • Meanwhile, melt butter in a large stock pot over medium heat. Add mushrooms, onion and garlic and cook 5 minutes. Add thyme and cook 1 minute. Add chicken broth and wine and bring to a simmer, about 1 minute. Simmer 5 minutes.
  • While soup is simmering, blend softened butter with chopped fresh parsley and salt and pepper. Remove Parmesan knots from the oven.
  • Remove soup from the heat and, using an immersion or stand blender, puree until smooth Return the soup to low heat, add milk and andouille sausage and simmer 1 minute to heat through.
  • Ladle soup into bowls and top with arugula and walnuts. Serve rolls on the side with parsley butter.

1 large white cabbage
2 cups rice, uncooked
1 large onion, chopped
2 tablespoons butter
1/4 cup dried mushroom (Boletus or Porcini, washed and drained)
3 (6 ounce) jars whole mushrooms, drained
2 tablespoons butter
2 medium onions, chopped
salt & freshly ground black pepper
2 tablespoons butter
1/4 cup onion, chopped
1 cup fresh mushrooms, chopped
1 tablespoon all-purpose flour
1/2 cup beef broth or 1/2 cup vegetable broth
2 teaspoons fresh parsley, chopped
salt & freshly ground black pepper
1/4 cup sour cream

Steps:

  • Prepare the rice according to the directions on the package.
  • Remove the core from the cabbage and place the full head in a large pot of boiling water.
  • Cover and cook for about 3 minutes.
  • Remove the cabbage from the water and let cool until it's easy to handle.
  • Then remove the softened whole leaves from the head and stack them on a platter for filling.
  • Thin out the tough vein near the stem portion of the leaf to make easier rolling.
  • Prepare the mushroom filling by placing the dried and bottled mushrooms in a medium saucepan.
  • Cover with water and bring the mushrooms to a boil over medium-high heat.
  • Reduce the heat to simmer and continue to cook the mushrooms for about 1 hour.
  • Strain off the liquid and grind the mushrooms in a food processor or blender.
  • Meanwhile, melt two tablespoons of butter in a large skillet over medium heat and sauté the two medium chopped onions until transparent, about 5 minutes.
  • Mix the two medium sautéed onions with the mushrooms and a dash of salt and pepper to taste.
  • Sauté the one large chopped onion in two tablespoons of butter in a skillet over medium heat until transparent.
  • Add the mushroom filling and cooked rice to the large fried onion.
  • Line the bottom of a casserole dish with cabbage leaves not suitable for stuffing.
  • Save about 6 good, whole leaves and fill the stem portion of each leaf with 2 or 3 heaping tablespoons of the rice mixture.
  • Place the stuffed leaves seam-side down in the casserole dish.
  • PREPARE THE MUSHROOM SAUCE by melting two tablespoons of butter in a large skillet over medium heat.
  • Sauté the 1/4 cup chopped onions until tender.
  • Add the one cup of freshly chopped mushrooms and cook for about 10 minutes.
  • Sprinkle the flour over the mixture and blend well.
  • Slowly pour in the broth and stir constantly until the mixture thickens.
  • Remove from the heat source and stir in the parsley, then season with salt and pepper to taste.
  • Let the sauce cool a bit, then add the sour cream and blend well.
  • Cover the stuffed cabbages with the mushroom sauce and bake the casserole, uncovered, in a 350-F degree oven for one to one-and-a-half hours.
  • Serve warm.
  • Makes a great companion for plain roast beef.

VEGAN MUSHROOM AND LEEK ROLLS

Classic sausage rolls are filled with a meat-based sausage mixture, but this hearty vegan version substitutes mushrooms, fennel and plenty of leeks, along with almond butter for creaminess and farro for a delightfully chewy texture. These are best served warm from the oven, or reheated if they cool down. Ketchup is a traditional sausage roll accompaniment, but these are so flavorful on their own they don't need it.

1/2 teaspoon kosher salt, plus more as needed
1/4 cup farro
5 tablespoons extra-virgin olive oil
1 teaspoon cider vinegar or white wine vinegar
1 1/4 pounds mixed mushrooms, diced (about 8 cups)
2 large leeks, white and light green parts, cut lengthwise and sliced into 1/4-inch half-moons (about 2 cups)
1 cup diced fennel
2 teaspoons fresh thyme leaves, chopped
2 garlic cloves, finely grated or minced
1 teaspoon tomato paste
Pinch of red-pepper flakes (optional)
2 tablespoons soy sauce
1/2 cup creamy almond butter
1/4 cup chopped fresh parsley, cilantro or dill
1 (13- to 17-ounce) package frozen vegan puff pastry, thawed but still cold

Steps:

  • Bring a small pot of salted water to a boil, then add farro. Cook until tender, 20 to 30 minutes. Drain well and drizzle with 1 tablespoon olive oil and the vinegar while still warm, tossing to combine. Let the farro cool.
  • Heat oven to 375 degrees and line rimmed baking sheet with parchment paper.
  • While the farro cooks, prepare the filling: In a large skillet, heat 3 tablespoons olive oil over high heat. Add mushrooms and cook until just tender and golden brown, stirring infrequently so the mushrooms have a chance to sear, 8 to 12 minutes. Lower heat to medium and add remaining 1 tablespoon olive oil, leeks and fennel. Cook until leeks and fennel soften, 8 to 12 minutes. Add thyme, garlic, tomato paste, 1/2 teaspoon salt and pinch of red-pepper flakes, if using, and cook for another minute or until fragrant.
  • Add soy sauce to deglaze pan, scraping up the browned bits on the bottom. Transfer mushroom mixture to large mixing bowl and set aside to cool.
  • Add cooled farro, almond butter and herbs to mushrooms, and mix well.
  • Place the puff pastry dough between two sheets of parchment paper, and roll to about 1/8-inch thick. Cut pastry into 4 equal rectangles. In the center of each pastry, dollop a quarter of the mushroom mixture, forming it into a long "sausage" running lengthwise on the pastry strip.
  • Lightly brush one long edge of the pastry with water (to help seal the dough). Starting with the unbrushed sides of the pastry, firmly fold the pastry over the filling to make long rolls, pinching dough to seal. Place on prepared baking sheet, seam-sides down.
  • Bake until the pastry is golden brown, about 35 to 40 minutes. Serve warm.

1/2 pound white mushrooms or exotic mushrooms like portobello, cremini or shiitake or some combination
1/4 cup unsalted butter, plus additional butter for brushing
3 tablespoons flour
1 cup light cream or half-and-half
1 tablespoon minced chives
1 teaspoon lemon juice
Salt and pepper to taste
21 slices white supermarket bread (1 or 2 loaves)

Steps:

  • Wash, trim and finely chop the mushrooms. Saute them in butter for 3 or 4 mintues. Remove from heat, and blend in the flour. Stir in the cream, and return to medium heat, cooking until the mixture thickens. Remove from heat. Stir in the chives and lemon juice. Season with salt and pepper, and cool.
  • Remove the crusts from the bread, and make each slice thin with a rolling pin. Spread each slice with some of the mushroom mixture; roll up and place on baking sheets, seam side down. Brush with additional melted butter.
  • Pack and freeze, if desired, or refrigerate.
  • To serve, defrost the rolls, if they have been frozen. Preheat the oven to 400 degrees. Toast the rolls on all sides for about 15 minutes, until the rolls are golden. Cut in half and serve warm, not hot.

This mushroom dish is dairy-free, gluten-free, and vegan. If you are sugar conscious, I would recommend trying it with quinoa instead of with rice and skipping the raisins. I love this, because it looks and tastes just like meat! You wouldn't even know that it's completely vegan! It is savory, sweet, a little spicy, and perfect for Thanksgiving dinner. It can be used as a side dish, but also filling enough as a main dish.

1 large head cabbage, cored
2 tablespoons olive oil, divided
1 medium onion, minced
¼ cup fresh thyme leaves, divided
3 cloves garlic, chopped
¾ pound mushrooms, finely chopped
½ cup raisins
1 teaspoon ground cinnamon
¾ cup walnuts, roughly chopped
1 teaspoon sea salt, or to taste, divided

1 (16 ounce) can crushed tomatoes, divided

Steps:

  • Bring a large pot of lightly salted water to a boil. Drop cabbage into the pot and fully submerge in the water. Cook for 10 minutes. Remove from water and allow to cool enough to handle, about 10 minutes. Pull leaves off carefully.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add onion, 1/3 of the thyme, and garlic. Cook until onions are translucent, about 5 minutes. Add mushrooms, raisins, and cinnamon and cook for about 3 minutes. Stir in walnuts and season with 1/3 of the sea salt. Transfer mixture to a large bowl and add rice; stir stuffing into a uniform mixture.

8 uncooked lasagna noodles
2 tablespoons olive oil
1 pound ground turkey
1 (8 ounce) package sliced fresh mushrooms
2 tablespoons Italian seasoning

1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cloves garlic, minced
1 (20 ounce) jar marinara sauce
½ cup shredded mozzarella cheese
½ cup ricotta cheese
¼ cup grated Parmesan cheese
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spray a large baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain and reserve pasta in a bowl of cold water.
  • Heat olive oil in a large skillet over medium-high heat. Cook and stir turkey, mushrooms, Italian seasoning, salt, and black pepper until turkey is evenly browned.
  • Stir spinach and garlic into turkey mixture until heated through, about 1 minute more; remove from heat and allow to cool slightly.

  • Bake in the preheated oven until sauce is bubbly, 30 to 40 minutes. Sprinkle remaining 1 1/2 cups mozzarella cheese over the rolls and return to oven.
  • Continue baking until cheese is melted, about 5 minutes more.

2 cups sliced shiitake mushrooms
1 cup sliced button mushrooms
1 cup sliced cepes, chanterelles or oyster mushrooms (optional)
2 cups leek julienned
1 cup bean sprouts
1/2 cup hoisin sauce
2 minced serrano chile
1 tablespoon minced garlic
1 tablespoon minced ginger
2 tablespoons canola oil
1 cup chopped scallions
1/2 cup chopped cilantro
1 (4 ounce) package bean thread (rice vermicelli), blanched, refreshed and cut up
Salt and black pepper to taste
1 package lumpia wrappers. Other types are egg roll and spring roll wrappers. I prefer lumpia.
Eggwash (1 egg and 1/2 cup of water)
1/4 cup fresh mint chiffonade
1 teaspoon sugar
1/4 cup thin soy sauce
Juice of 1 lemon

Steps:

  • In a hot wok or saute pan add the oil followed by the garlic, ginger and chile. Be careful not to burn. Add the hoisin and briefly saute to get the raw taste out. Add the shiitakes, leeks and bean sprouts. Check for seasoning. Let cool in a strainer and drain well. When cool, add the cilantro, scallions and bean thread. Lay out a lumpia wrapper with corner facing you. Place a small mound at the bottom, moisten edges with eggwash and roll bottom corner towards the middle. Fold in both sides and continue rolling. Finish roll and let rest. Deep fry at 350 degrees until golden brown, about 5 minutes. Serve with mint dipping sauce.
  • Mix all ingredients in a small bowl.

2 lb ground beef (lean as possible)
2 lb ground pork
1 red bell pepper minced
1 white onion minced or grated
2 c pre-make jasmine rice and cook it with an 1/8th cup raisins sliced
2 slice stale white bread in a saucer of cold milk
2 medium carrots grated into 1 cup catsup
2 Tbsp garam masala ( amazon.com)
2 Tbsp garlic powder
2 Tbsp onion powder
1 Tbsp kosher salt or sea salt
2 Tbsp freshly ground pepper
2 large eggs beaten
1/2 c water
2 large savoy cabbage cored and steamed to a pilabel bright green
2 box gramini mushrooms sliced and (sauted in garlic butter butter).
1 c heavy cream
3 c whole milk
1 stick real butter can be replaced with olive oil

Steps:

  • 1. Add first all 13 of the ingredients and mix them together with your hands. cover and set aside, ( use small amounts of the water to make the mixture a little moist as you like it)
  • 2. Steam Savoy cabbage and cut out stems. place the cabbage leaf on a dinner plate and role about a 2 by 2 inch plump little log shape of the filling in leaf by folding both sides of cabbage over the sides. then slowly roll and tuck cabbage roll up, and place seam side down the repeat till all meat is rolled.
  • 3. chop up remaining cabbage and place in a large rectangular glass baking pan, and then fill this pan with the finished rolls of cabbage and add some water to the pan. place in a 350 degree oven and bake for 45 mins.
  • 4. in a 4 quart pot add mushrooms and bring to a a medium heat add cream and milk then bring to a boil.and lower a bit as this mixture can reduce till it becomes a sauce. Set on low and add 2 bouillon cubs one beef and one chicken let cook till rolls are baking then, pour over rolls and raise this sauce till pan is 3/4 full around cabbage rolls. and return to hot oven for 15 to twenty minutes more. Remove and spread the rest of the mushrooms on top.

1 medium head of cabbage
1/3 cup water
8 ounces dirty rice mix (Zatarain's New Orleans Style Dirty Rice Mix)
2 1/2 cups water
2 tablespoons oil
1 lb Italian sausage
2 tablespoons margarine
1/4 cup onion, chopped
1 1/2 cups fresh mushrooms, chopped
5 tablespoons flour
12 ounces chicken broth (or 2 chicken bouillon cubes, in 12 oz. water)
1/2 cup whipping cream
1/4 cup milk
1/2 teaspoon salt
1 teaspoon black pepper

Steps:

  • Cut cabbage head in half.
  • In a glass bowl add 1/3c water and cabbage halfs.
  • Cover with paper towel and heat in microwave oven for 3-5 minutes. Til tender.
  • Remove cabbage and drain water. Let cool.
  • In a medium saucepan add 2 1/2c. water and oil and bring to a boil. Reduce heat.
  • Add Zatarain's New Orleans Style Dirty Rice Mix and simmer 25 minutes.
  • While rice is cooking, brown Italian sausage in a frying pan and drain grease.
  • When rice is fully cooked (no existing water).
  • add cooked sausage and mix together.
  • Stuff meat mixture in cool cabbage leaves.
  • Place in a lightly greased 13x9 baking dish.
  • Set aside.
  • Preheat oven to 350'.
  • In a medium saucepan add margarine, melt and add chopped onion and saute 2 minutes.
  • Add chopped mushrooms and saute another 2 minutes.
  • Add flour and stir well.
  • Add chicken broth,salt and black pepper and whipping cream and stir until thicken on medium heat. Remove from heat.
  • Pour over stuffed cabbage rolls and place in oven for 10 minutes.

  • Saute together for 3 to 4 minutes and then add canned, crushed tomatoes, basil, oregano, salt and pepper. Stir together and let it simmer on medium, low heat.
  • While sauce is simmering, combine artichokes, spinach, gorgonzola, and mozzarella cheese in a sauce pan over medium, low heat. Add salt and pepper and stir until cheese in melted and all the ingrediants are combined.
  • Take the eggplant and cut off both ends and discard. Cut the eggplant lengthwise into 1/4 inch slices.
  • Salt and pepper the strips of eggplant and spoon the cheese mixture onto one end of the eggplant. Roll the mixture up in the eggplant and secure with toothpicks.
  • Repeat with the rest of the rolls.
  • Spoon some of the sauce into the bottom of a baking dish. Place the eggplant rolls in the dish and cover with remaining sauce.
  • Bake at 325 degrees for 25 minutes or until eggplant in tender. During the last 5 minutes of baking sprinkle parmesan cheese on top. Add chopped basil for garnish when done.

1 tablespoon minced garlic
1/2 tablespoon grated fresh ginger
2 scallions, sliced thin
1 lb mixed wild mushroom (such as chanterelle, crimini, oyster, shiitake)
2 cups shredded napa cabbage
1 carrot, grated
1 tablespoon hoisin sauce
1 tablespoon oyster sauce
2 ounces bean thread noodles, blanched and chopped
1/2 cup bean sprouts
2 tablespoons chopped cilantro leaves
kosher salt
fresh ground black pepper
spring roll wrappers
1 egg, beaten
vegetable oil, for frying
1/2 cup Dijon mustard
1/4 cup hot water
1/4 cup rice vinegar
1 teaspoon toasted sesame oil
1 tablespoon sugar

Steps:

  • Heat oil in a skillet or wok over high heat. Add the garlic, ginger, and scallions and cook for 1 minute. Add the mushrooms and cook for another minute.
  • Add the cabbage and carrot and cook until the cabbage starts to wilt, about 2 minutes.
  • Stir in the hoisin and oyster sauces; toss to coat the mixture.
  • Remove from the heat and mix in the noodles, sprouts, and cilantro; season to taste with salt and pepper. The filling should be moist but not wet. Remove from heat and allow to cool.
  • Lay a spring roll wrapper on a flat surface on an angle so it looks like a diamond. Spoon 2 tablespoons of the filling near the bottom corner of the wrapper and fold up to enclose the filling. Fold in the 2 sides. Paint the top seam of the wrapper with beaten egg. Continue rolling up to form a tight cylinder.
  • Pour about 1-inch of oil in a skillet or wok and heat to 350 degrees F. Fry the spring rolls, turning to cook all sides, until browned, about 2 minutes. Drain on paper towels and keep warm. Serve with Mustard Dipping Sauce.
  • For the Mustard Sauce: Mix all ingredients together and stir until the sugar dissolves.

1 pound assorted mushrooms, such as shiitake or oyster or hanshimiji
2 tablespoons vegetable oil
3 large shallots, peeled and finely chopped
2 tablespoons finely grated ginger
2 teaspoons five spice powder
1/2 cup finely chopped scallions
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons Asian toasted sesame oil
1 pound package egg roll wrappers
1/2 cup water
1/2 cup peanut oil for frying
1/4 cup warm honey
2 tablespoons soy sauce
1/2 pound raw shrimp, peeled, de-veined, and roughly chopped
1/2 cup bok choy, chopped
1/2 teaspoon dried chili pepper flakes
2 tablespoons vegetable oil
2 tablespoons sesame oil
2 tablespoons low sodium soy sauce
3 tablespoons rice wine vinegar
2 tablespoons sugar
3 tablespoons cornstarch
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Remove any hard fibrous stems from the mushrooms and clean carefully by brushing the mushrooms with a damp cloth or mushroom brush to remove excess dirt. Place the mushrooms in a food processor and pulse quickly to chop into 1/4-inch bits.
  • Heat 2 tablespoons vegetable oil in a large skillet over high heat until hot but not smoking. Add the mushrooms to the pan and saute until the mushrooms begin to sweat, about 2 to 3 minutes. Add the chopped shallots and ginger and saute until translucent. Sprinkle in the five spice powder and chopped scallions, season with salt and pepper and stir in the sesame oil. Set aside to cool.
  • Lay out the egg roll wrappers and cut into 4 equal squares. Brush a square of wrapper with some water, place a dollop of the mushroom mixture in the center and roll the sides of the wrapper inwards to enclose the filling. Rolling away from yourself, roll up the wrapper into a cigar shape and enclose the filling completely. Seal the ends with some of the water. Continue to finish filling the wrappers and refrigerate them several hours to firm them before cooking.
  • Heat the oil in a deep skillet to 345 degrees. Fry the spring rolls, in batches, until crisp. In a bowl, combine the ingredients of the dipping sauce and serve with the spring rolls.
  • Place all of the ingredients into the bowl of a food processor and pulse rapidly to a very coarse texture. Do not make too soft or pasty. Fill the springroll wrappers with the shrimp filling and follow all directions for cooking.;

1/2 pound sliced fresh mushrooms
2 medium leeks (white portion only), thinly sliced
3 celery ribs, thinly sliced
1/2 cup hoisin sauce
2 tablespoons minced fresh gingerroot
2 tablespoons rice vinegar
2 tablespoons reduced-sodium soy sauce
1 tablespoon packed brown sugar
1 tablespoon sesame oil
2 garlic cloves, minced
1/2 cup sliced water chestnuts, chopped
3 green onions, thinly sliced
42 egg roll wrappers
Oil for frying
Sweet-and-sour sauce or Chinese-style mustard, optional

Steps:

  • In a large skillet, cook turkey over medium heat 8-10 minutes or until no longer pink, breaking into crumbles. Transfer to a 5-qt. slow cooker., Stir in mushrooms, leeks, celery, hoisin sauce, ginger, vinegar, soy sauce, brown sugar, sesame oil and garlic. Cook, covered, on low 4-5 hours or until vegetables are tender. Stir water chestnuts and green onions into turkey mixture; cool slightly., With 1 corner of an egg roll wrapper facing you, place 2 tablespoons filling just below center of wrapper. Freeze option: Cover and freeze unfried egg rolls on waxed paper-lined baking sheets until firm. Transfer to airtight freezer containers; return to freezer. 3/4 pound mushrooms, trimmed and quartered
1/4 pound shallots (about 3), minced
5 tablespoons unsalted butter
1/4 cup Worcestershire sauce
1/4 cup grated Cheddar
14 very thin slices firm white sandwich bread
Garnish: 28 long fresh chives

Steps:

  • In a food processor mince mushrooms in 2 batches. In a 10-inch non-stick skillet cook shallots in 2 tablespoons butter over moderate heat, stirring, until golden. Add mushrooms with salt to taste and cook over moderate heat, stirring occasionally, until dark brown and very dry, about 15 minutes.
  • Add Worcestershire sauce and simmer, stirring occasionally, until sauce is evaporated and mixture is very dry, about 5 minutes. Remove skillet from heat and stir in Cheddar. (Filling may be made 3 days ahead and chilled, covered.)
  • Discard crusts from bread and with a rolling pin flatten each slice into a rectangle. In a small saucepan melt remaining 3 tablespoons butter.
  • On a work surface arrange a bread slice with a long side facing you and mound a level tablespoon filling along long side. Roll up bread jelly-roll fashion. Arrange roll, seam side down, in a shallow baking pan. Make more rolls with remaining bread and filling in same manner, arranging in pan in one layer, touching each other, and keeping covered with plastic wrap.
  • Brush mushroom rolls all over with melted butter and rearrange, seam sides down and barely touching, in pan. Chill mushrooms rolls, covered, at least 1 hour and up to 1 day.
  • Preheat oven to 425°F.
  • Bake mushroom rolls in upper third of oven 15 minutes, or until golden. Halve rolls crosswise and tie a chive around each half.

1/2 tsp. salt
1/4 tsp. pepper
1 loaf thinly sliced bread
1/3 c. butter

Steps:

  • --- In a large skillet melt 1/4 c. butter, add onions and curry powder, if using; cook until onions are soft. Add mushrooms and parsley; cook over med-high heat, stirring until moisture has evaporated. Stir in flour until well blended. Add cream; bring to a boil, stirring constantly. reduce heat and simmer for 1 - 2 min., or until thickened. Remove from heat, add sherry and seasonings. Let cool; cover and refrigerate until needed. --- Remove crusts from bread slices. Flatten with a rolling pin, and spread each slice with a thin layer of mushroom mixture. Roll up jelly roll style, starting at narrow end, and secure with toothpicks if necessary. Wrap well and refrigerate for up to 1 day, or freeze fro longer storage. --- Cut rolls in half. Place on ungreased baking sheet and brush with 1/3 c. melted butter. (if rolls are frozen, thaw completely before brushing with butter) Bake in a preheated oven 425 deg. for 8 - 10 min. or until crisp and golden. About 40. --- CHOP MUSHROOMS BY HAND, they will be quickly be over processed in a food processor!

1 cup diced zucchini
3/4 cup chopped red bell pepper
3/4 cup chopped onion
1 cup cooked brown rice
1 teaspoon dried basil

1/4 teaspoon black pepper
1/3 cup raisins
1/4 cup walnuts, chopped
1 large head cabbage
2 cups no-salt-added tomato sauce

Steps:

  • In a large saucepan, heat 2 tablespoons water and water saute mushrooms, zucchini, red pepper and onion until tender. Add cooked brown rice, basil, marjoram, thyme, black pepper,raisins and walnuts. Meanwhile cook cabbage in boiling water until leaves fall off head. Set aside 8 large leaves (refrigerate remaining cabbage for another use). Cut out the thick vein from each leaf. Overlap cut ends before filling. Spoon 1/4 to 1/2 cup mushroom/rice mixture onto the thick bottom of each cabbage leaf. Roll the leaf over once, then fold the 2 sides in and finish rolling. Cover bottom of a casserole dish with some of the tomato sauce. Place rolls in the casserole, seam side down. Pour remaining sauce over, covering cabbage completely. Bake at 350 degrees until cabbage is cooked and rolls are heated through, about 30 minutes.

4 dried Chinese black mushrooms
1 skinless, boneless chicken breast, diced
2 ounces boiled ham, finely diced
1 teaspoon minced peeled ginger
Kosher salt
2 teaspoons Chinese rice wine or dry sherry
1 tablespoon toasted sesame oil
1 teaspoon soy sauce, plus more for dipping
1 tablespoon cornstarch
1 large egg white
4 scallions, halved lengthwise and thinly sliced
1/4 cup finely diced jicama
1 large head napa cabbage
Vegetable oil, for frying

Steps:

  • Soak the mushrooms in hot water for 30 minutes; drain. Remove the stems, then dice the caps and place in a food processor. Add the chicken, ham, ginger, 2 teaspoons salt, rice wine, sesame oil, soy sauce, cornstarch and egg white; pulse 3 or 4 times to form a coarse paste. Stir in the scallions and jicama. Cover and chill for 30 minutes.
  • Cut the top 3 or 4 inches off the cabbage and separate the leaves (reserve the bottom for another use). Place a heaping tablespoon of filling in the center of each leaf and roll up to enclose the filling. Place seam-side down on a plate.
  • Heat 1/4 inch of oil in a large skillet over medium heat. Add the rolls and fry until the chicken is cooked through and the cabbage is golden, about 2 minutes per side. Drain on paper towels, then serve with soy sauce.
