Pimiento Cheese-Stuffed Mushrooms image

Stuffed mushrooms are an amazing appetizer. Pimiento cheese-stuffed mushrooms, however, are mind-blowingly divine. With a zippy, melty, cheesy middle and crunchy bread crumb bite on top, these budget-friendly apps won't last long (if they ever make it to the party).

20 (about 1 1/2-inch) white button mushrooms, washed and stems removed (about two 8-oz packages)
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded cheddar cheese (4 oz)
1/4 cup mayonnaise
1 jar (2 oz) chopped pimiento, drained
1/2 teaspoon lemon juice
1/8 teaspoon ground red pepper (cayenne)
1 tablespoon butter
1/4 cup Progresso™ plain panko crispy bread crumbs
2 slices cooked bacon, finely chopped
2 tablespoons thinly sliced green onions

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil and a rectangular cooling rack that fits pan.
  • In medium bowl, toss mushrooms with oil, salt and pepper. Place mushrooms, stem side down, on rack. Bake 11 to 14 minutes or until mushrooms are tender. Remove from oven. There will be some liquid in bottom of pan.
  • Meanwhile, in small bowl, mix cheese, mayonnaise, pimiento, lemon juice and red pepper; stir until blended.
  • In 8-inch nonstick skillet, melt butter over medium heat. Stir in bread crumbs; cook 5 to 6 minutes, stirring constantly, until golden brown. Remove from skillet, and set aside.
  • Carefully turn mushrooms over. Spoon cheese mixture into each mushroom, and top with bread crumbs.
  • Bake 5 to 7 minutes or until cheese is bubbly. Top with bacon and green onions. Serve immediately.

1/3 cup finely chopped fresh parsley
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 pound button or cremini mushrooms

Steps:

  • In a mixing bowl, whisk together the parsley, vinegar and mustard. Drizzle in the olive oil, then season with salt and pepper. Shave or slice the mushrooms thinly, then add to the vinaigrette. Toss to combine and allow to marinate for a few minutes before serving.

I've eaten antipasti like this all over Italy. Sometimes celery is substituted for asparagus, but there's no need at this time of year. Both thick and thin stems will work.

1 pound asparagus
1/2 pound mushrooms, thinly sliced
1/4 cup chopped fresh herbs, such as parsley, tarragon and chives
1 cup baby arugula
2 to 3 tablespoons fresh lemon juice (to taste)
Salt
freshly ground pepper to taste
1 small garlic clove, minced or pureed
5 tablespoons extra virgin olive oil
1 ounce slivered Parmesan

Steps:

  • Steam the asparagus for three to five minutes, depending on how thick the stalks are. It should be tender but still have some bite. Rinse with cold water, and drain for a minute on a kitchen towel. Cut into 1-inch lengths. Place in a salad bowl, and toss with the mushrooms, herbs and arugula.
  • Whisk together the lemon juice, salt and pepper, garlic and olive oil. Toss with the asparagus mixture and the slivered Parmesan, and serve.

2 cups fresh or frozen green beans
1 (4-ounce) jar diced pimentos
1 tablespoon balsamic vinegar
1 tablespoon water

  • Heat oil in a large skillet over medium heat. Add garlic and cook 1 minute. Add green beans and pimento and cook 2 minutes. Add vinegar and water, cover and steam 3 to 5 minutes, until green beans are crisp-tender. Season, to taste, with salt and pepper.

3 tablespoons lemon juice
3 pounds small fresh mushrooms
2 medium carrots, sliced
2 celery ribs, sliced
1/2 medium green pepper, chopped
1 small onion, chopped

1/2 cup sliced pimiento-stuffed olives
1 can (2-1/4 ounces) sliced ripe olives, drained
DRESSING:
1/2 cup prepared Italian salad dressing
1/2 cup red or white wine vinegar
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon dried oregano

Steps:

  • In a large saucepan, bring water and lemon juice to a boil. Add mushrooms and cook for 3 minutes, stirring occasionally. Drain; cool. , Place mushrooms in a large bowl with carrots, celery, green pepper, onion, parsley and olives. In a small bowl, whisk the dressing ingredients. Pour over salad. Cover and refrigerate overnight.

This is an incredibly easy salad to make and it tastes fabulous. When I saw it I didn't think it could be so good considering it uses tinned vegetables but try it for yourself and you will see! Note that it needs at least 4 hours to marinade.

400 g mushrooms (preferable whole button in a glass jar)
400 g artichoke hearts (not frozen)
2 tablespoons red wine vinegar
6 tablespoons extra virgin olive oil
2 minced garlic cloves
3 tablespoons fresh parsley
salt and pepper

Steps:

  • Drain the mushrooms and artichokes well.
  • Mix the oil and vinegar and add the garlic, finely-chopped parsley, salt and pepper.
  • Pour over the mushrooms and artichokes and marinade in the fridge for at least 4 hours and preferable overnight.

PICKLED MUSHROOM SALAD



Pickled Mushroom Salad image

This recipe for roasted mushrooms dressed with sherry vinegar and spices is an adaptation of Patch Troffer's delicious pickled mushrooms at Marlow & Sons, where it's served simply as it is, with a drizzle of chile oil. Mixed with some sliced vegetables and roughly picked herbs, it makes for an excellent snack with a glass of wine, or a fall salad. Or serve it with a spoonful of something creamy, like crème fraîche or mascarpone, and pile everything up on thickly cut toasts.

2 pounds mixed mushrooms, like cremini, maitake, shiitake and trumpet
1/2 cup grapeseed oil
2 teaspoons kosher salt
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1/2 teaspoon black peppercorns
1 piece star anise
1 clove garlic, peeled and finely grated
1 handful cilantro, roughly chopped
1 handful dill sprigs
1 rib celery heart, thinly sliced, plus leaves
3 tablespoons sugar
1/4 cup sherry vinegar
Bread
Crème fraîche, to serve

Steps:

  • Heat the oven to 500. Cut the mushrooms into halves or thick slices, toss with 1/4 cup grapeseed and salt, and divide between two sheet pans. Roast for 10 to 15 minutes, or until the mushrooms are nicely browned.
  • While the mushrooms are roasting, put the coriander seeds, fennel seeds, peppercorns and star anise in a small saucepan over low heat. When they are warm and fragrant, crush in a mortar and pestle or coffee grinder until powdery. Transfer spice to a large mixing bowl with garlic, cilantro, dill, celery rib and any leaves, sugar, remaining grapeseed oil and sherry vinegar.
  • When the mushrooms are nicely browned, add them to the bowl while they're hot. Pour a splash of water into each hot pan, swirl it around and pour over the mushrooms, scraping any browned bits off the pan. Mix well, and taste. Adjust for seasoning. Allow to sit for at least an hour, but ideally overnight in the fridge. Serve with bread and crème fraîche.
