1/4 cup evaporated milk
1/4 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds ground beef
SAUCE:
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2/3 cup evaporated milk
2/3 cup water

Steps:

  • In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. In a large oven-proof skillet, brown meatballs; drain. Combine sauce ingredients; pour over meatballs. Bake, uncovered, at 350° for 30 minutes or until meat is no longer pink.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine beef, onion, rice, seasoned salt, garlic salt, bread crumbs, and evaporated milk. Shape into 1 inch meatballs. Place meatballs on rimmed baking sheet.
  • Bake in preheated oven until brown, about 15 minutes.
  • Melt butter in a skillet over medium heat. Add mushrooms and sprinkle with salt; saute until mushrooms release their moisture and soften, about 10 minutes. Add the wine, water, soup, salt, and sage to saucepan; stir to combine.
  • Transfer meatballs to the sauce and simmer until cooked through and hot, 30 minutes.

2 eggs

1 can(s) cream of mushroom soup
2 pinch salt & pepper (to taste)

Steps:

  • 1. In a large sauce pan add cream of mushroom soup (do NOT add any water).
  • 2. Roll ground beef into meatballs, about walnut size or 1"; place them in mushroom soup in pot. Make a single layer.
  • 3. Add salt & pepper to taste.
  • 4. Cook on medium heat, uncovered for about 30-40 minutes until meatballs are cooked.
  • 5. Serve over potatoes, egg noodles or bread. Dad loves it- goes great with green beans.

It is rare that meatballs can be described as light, but these are. You bake them in the oven at a low temperature and the result is a very tender meatball. The mushroom base renders a flavor that is more vegetal than meaty. The recipe is easy to double and the meatballs freeze well. They are great to have on hand.

1 cup cubed Italian bread (2 ounces)
1/4 cup milk
1 medium carrot (about 4 ounces), cut in 1/4 inch dice
2 teaspoons extra virgin olive oil
1/2 pound lean ground beef
1/2 pound roasted mushroom base (just under 1/2 recipe, about 1 1/3 cups)
1/4 cup finely chopped onion
3 tablespoons beaten egg (1/2 extra large egg)
2 tablespoons finely chopped flat-leaf parsley
Salt to taste (about 3/4 teaspoon)
Freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees. Put the bread in a bowl, toss with the milk (add a little more milk if 1/4 cup isn't enough to moisten all the bread) and let soak for 20 minutes.
  • Meanwhile toss the carrots with 2 teaspoons olive oil on a parchment-covered sheet pan and roast for 15 to 20 minutes, stirring every 5 minutes, until tender and lightly browned (you can also make the mushroom base at this time).
  • Squeeze the milk out of the bread and crumble the bread into a large bowl. Add the beef, mushrooms, carrots, onion, egg, parsley, salt, and pepper and mix together well.
  • Turn the oven down to 300 degrees. Line a sheet pan with parchment. Working in batches, pulse the meat and vegetable mixture in a food processor fitted with the steel blade until pasty. Return to the bowl. Fill a small bowl with water for dipping your hands, then with wet hands form 1-ounce balls, which will be about the size of a golf ball, and place them on the parchment-lined baking sheet. You will need to keep wetting your hands.
  • Bake 40 minutes, or until the meatballs are nicely browned. Remove from the oven and if desired, simmer for up to an hour in tomato sauce. I like to serve these with spaghetti.

1/2 cup instant rice or 1/2 cup cooked rice
1/2 cup milk
1/2 teaspoon Kitchen Bouquet
chopped onion
2 tablespoons flour
1 cup cracker crumb
1/2 teaspoon salt
1 (8 ounce) can cream of mushroom soup
0.5 (8 ounce) can water
1 (8 ounce) can milk

Steps:

  • Mix together the meatball ingredients (listed at the top) and form 2.5-3 inch meatballs. put them in an oven acceptable baking dish.
  • Pour the mushroom soup into a pan, use the soup can to measure out 1/2 can of water, and 1 can of milk.
  • Put the water and milk in the saucepan.
  • Stir these three ingredients over medium heat, until all the lumps are out, and the gravy is smooth.
  • Pour the gravy over the meatballs,
  • cover the dish with aluminum foil and cook the meatballs at 350 degrees for one hour (depending on your oven, you might want to break one open to assure its done)
  • Serve with mashed potatoes and steamed veggies!

  • Melt butter in frying pan.

4 cups sliced fresh mushrooms
3 large garlic cloves, minced
3 tablespoons butter (can use more or less)

2 cups frozen peas

2 teaspoons Worcestershire sauce

  • In a skillet fry mushrooms in butter over medium heat for 5-7 minutes or until well browned (adding in the garlic the last few minutes of cooking) remove from skillet, set aside.
  • In a bowl dissolve the cornstarch in a little of the half and half.
  • Add the cornstarch mixture to the skillet with the remaining light cream; whisk and cook, until mixture comes to a boil,and has thickened.

1 1/2-2 lbs ground beef 1 oz. envelope dry onion soup mix
1/2 cup water or 1/2 cup beef broth
1 -2 tablespoon Worcestershire sauce
1 egg
3/4 cup breadcrumbs
2 teaspoons garlic salt
about 1 cup water
2 (10 ounce) cans cream of mushroom soup

Steps:

  • In a large bowl mix together all the dry ingredients(Onion Soup mix, bread crumbs & garlic salt) then add in the wet ingredients(water or beef broth, Worcestershire sauce & egg) mix together then add in the ground beef and incorporate all the ingredients together mix well.
  • Now make meatballs about the size of your palm(maybe about 2 inches round) place all the meatballs in a large skillet and cook at medium high heat until cooked all the way through and browned on all sides.
  • Once your meatballs are completely cooked keep the heat at medium high and then add in your water. The water will deglaze the bottom of your pan then add in the 2 cans of Cream of mushroom soup and mix it in with the water stirring until becomes a gravy. Turn the heat down to medium low and cover the skillet and cook until gravy is heated through.
  • Serve with Mashed potatoes spoon the gravy over the meatballs and the potatoes! ENJOY =).

What is better than the best beef grown in the US and the best mushies to grace the genus Pleurotus? Putting them together of course. I work at a restaurant here in town and put this on the menu. It was prototyped with a Gorgonzola cream sauce, but the chef thought we needed a red sauce item on the menu. He's the boss. Great no matter what it is covered in. Serve over your favorite pasta. I prefer fettuccine or lasagna noodle torn into wide strips. Garnish with parsley dust.

  • In a deep sauce pan, heat olive oil over medium high. Add mushrooms and spices for gravy. Saute until browned. Add butter and flour. Cook for one minute. Slowly add beef broth and stir until smooth and thickened. If you are worried about lumps you can reserve some of the broth and make a slurry with that and the flour.

1 lb. extra-lean ground beef
1 cup panko bread crumbs
1 cup finely chopped fresh mushrooms
1/2 cup finely chopped green onions
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1 egg, beaten
1/2 cup HEINZ Chili Sauce
1/4 cup HEINZ Sweet Relish

Steps:

  • Heat oven to 375°F.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Mix first 6 ingredients just until blended; shape into 24 meatballs, using about heaping 1 Tbsp.mixture for each meatball.
  • Place on prepared baking sheet.
  • Bake 20 min. or until done (165°F). About 5 min. before meatballs are done, cook chili sauce and relish in large skillet on medium heat until heated through, stirring frequently.
  • Add meatballs to sauce; turn to evenly coat all sides of meatballs with sauce.

My husband is of Norse heritage - a Danish father, and Swedish mother. When they were still among us, his mom would make a buffet of all the classic stuff-Swedish Meatballs,Swedish Potato Sausage, "Brunabuner"(baked beans with cinnamon)rice pudding with lingenberries,limpa bread caraway cheese...on and on,for Christmas Eve dinner. I have a few of her recipes, but her Swedish Meatball recipe was not real specific.I found this recipe in a cookbook,"365 Ways to Cook Hamburger and Other Ground Meats" and they are truly good. The husbamd likes them even better than Mom's!

1 tablespoon butter
1/2 lb fresh mushrooms, sliced
3/4 teaspoon salt, divided
1/3 cup crushed crisp rye crackers or 1/3 cup dried breadcrumbs
1/2 cup heavy cream, divided
1 egg
2 tablespoons minced onions
2 tablespoons chopped parsley
1/4 teaspoon ground allspice
1/4 teaspoon grated nutmeg
1/4 teaspoon pepper, divided
1 lb ground round (85% lean)
1 tablespoon vegetable oil
2 tablespoons flour
3/4 cup beef broth
extra wide egg noodles or egg, dumpling noodle cooked and drained

Steps:

  • In a large skillet, melt butter over medium heat.
  • Add mushrooms and 1/4 tsp.
  • salt.
  • Cook, stirring often,until mushrooms have given off their liquid,and are slightly browned,about 6 minutes.
  • Transfer mushrooms to a plate and set aside In a medium bowl,combine rye cracker crumbs or bread crumbs,1/4 cup cream.
  • egg,onion,parsley,remining 1/2 tsp.
  • salt,allspice,nutmeg,and 1/8 tsp.
  • pepper; stir with a fork until mixed.
  • Add ground round and mix until well blended.
  • Using about a tablespoon of mixture for each,form into meatballs.

  • Add meatballs and cook, turnng occasionally,until browned all over,about 10 minutes a batch.
  • Sprinkle flour over meatballs and gently turn them until the coated flour is absorbed.
  • Add broth and 3/4 cup of water.
  • Bring to a simmer,scraping up browned bits from the bottom of the pan with a wooden spoon.
  • Reduce heat to low, cover and simmer 5 minutes.
  • Gently stir in cooked mushrooms,remaining 1/4 cup of heavy cream,and 1/8 tsp.

  • Serve on cooked egg noodles.

These delicious meatballs were favorites of my kids when they were growing up. Simple and tasty they made good use of what was usually in my larder. "Cheap and Cheerful", they were economical as well.

1 (10 1/4 ounce) can condensed mushroom soup
1/2 cup water
1 lb extra lean ground beef
1/2 cup fresh breadcrumb
2 tablespoons minced onions
1 garlic clove, minced
1 tablespoon minced parsley
1 egg

Steps:

  • Stir together the mushroom soup and the water.
  • Mix together in a bowl, the beef, crumbs, onion, garlic, parsley and egg, adding 1/4 cup of the mushroom mixture. Mix in well.
  • Shape into balls and brown in a frying pan in a little bit of fat.
  • When browned, drain off fat and pour the remaining soup mixture over.
  • Cover and simmer for 45 minutes, until tender and tasty.
  • We like this with buttered noodles.

These uber savory meatballs are packed with tons of ingredients with glutamate-the compound responsible for umami. Lentils, onions, garlic, tomato paste, soy sauce and nutritional yeast all play their part in making these vegan meatballs taste meaty. Plus they are full of protein and fiber.

2 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
One 28-ounce can whole peeled tomatoes, crushed by hand
Small handful torn fresh basil leaves
Kosher salt
3 tablespoons extra-virgin olive oil, plus more for brushing the baking sheet
1/3 cup wheat berries
1 cup dry brown lentils, rinsed and sorted
1 small yellow onion, finely chopped
4 ounces shiitake mushrooms, stemmed and roughly chopped
5 cloves garlic, finely chopped
Kosher salt and freshly ground black pepper
3 tablespoons tomato paste
3 tablespoons low-sodium soy sauce
2 tablespoons red wine vinegar
4 teaspoons nutritional yeast
1/2 cup fresh parsley leaves, plus more for garnish
2 slices white bread or 1 hamburger bun, torn into small pieces

Steps:

  • For the sauce: Put the oil and garlic in a medium saucepan over medium heat. Swirl until the garlic is just lightly browned and fragrant, about 4 minutes. Add the tomatoes and 1/2 cup water. Bring to a high simmer, then reduce the heat to medium-low. Add the torn basil leaves and 2 teaspoons salt and simmer, uncovered, until thickened, 20 to 25 minutes.
  • For the meatballs: Meanwhile, preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and brush with oil.
  • Bring a medium saucepan of water to a boil, then add the wheat berries and boil until plump and tender, about 30 minutes. Drain and set aside.
  • Put the lentils in a medium saucepan with 2 1/2 cups water. Bring to a boil, then reduce heat to low and simmer, uncovered, until almost all of the water has evaporated and the lentils are soft, about 15 minutes. Remove from the heat, drain and let cool slightly.
  • Meanwhile, heat the oil in a large nonstick skillet over medium heat. Add the onion, mushrooms, garlic, 1 teaspoon salt and a few grinds of pepper and cook, stirring until soft and lightly browned, about 6 minutes. Add the tomato paste, soy sauce, vinegar and nutritional yeast and cook, stirring, until the liquid has evaporated and is slightly dry, about 2 more minutes. Let cool slightly. Clean out the skillet.
  • Transfer the onion-mushroom mixture to a food processor. Add the cooked lentils, wheat berries and parsley leaves. Pulse until the mixture is combined and crumbly but not mushy.
  • Put the torn bread into a large bowl and cover with 1/4 cup of water. Let sit at least 5 minutes to soften. Using a fork, mash the soaked bread into a paste. Add the lentil mixture to the bowl with the mashed bread and mix by hand until fully incorporated. The mixture should hold its shape when squeezed gently.
  • Shape the mixture by hand into 18 golf-ball sized meatballs. Place about 1 inch apart on the prepared baking sheet. Bake until the meatballs are golden brown on the outside and don't crumble when gently pressed, 25 to 30 minutes.
  • To serve, pour the sauce into a shallow serving bowl. Put the hot meatballs on top of the sauce and garnish with parsley.

1 envelope onion soup mix
1/4 cup dry bread crumbs
1-1/2 teaspoons Worcestershire sauce
1-1/2 pounds ground beef
1/2 pound bulk pork sausage
SAUCE:
1 tablespoon olive oil
1 tablespoon butter
1/2 pound sliced baby portobello mushrooms
1/2 pound sliced fresh mushrooms
1 small onion, halved and sliced
1 garlic clove, minced
1 envelope brown gravy mix
1 teaspoon minced fresh thyme
1 cup water
1/4 cup white wine
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/4 teaspoon coarsely ground pepper

Steps:

  • Preheat oven to 400°. In a large bowl, whisk egg, soup mix, bread crumbs and Worcestershire sauce. Add beef and sausage; mix lightly but thoroughly. Shape into 1-in. balls. Place meatballs on a greased rack in a 15x10x1-in. baking pan. Bake 12-15 minutes or until browned., Meanwhile, in a 6-qt. stockpot, heat oil and butter over medium-high heat. Add mushrooms and onion; cook and stir 6-8 minutes or until tender. Add garlic; cook 1 minute longer. Stir in brown gravy mix and thyme. Add water and wine; bring to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened., Stir in condensed soup, pepper and meatballs; return to a boil. Reduce heat; simmer, covered, 15-20 minutes or until meatballs are cooked through.
