4 tablespoons unsalted butter (divided)
1 pound baby bella mushrooms (thinly sliced)
8 ounces cream cheese ( (reduced fat is ok or regular) softened)
2 cups shredded Gruyere or Swiss cheese (divided)
4 tablespoons minced chives (divided)
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
1 clove clove (minced)
1/8 teaspoon salt
1/8 teaspoon pepper
16 slices bread
4 large eggs
2 cups skim milk ((or any kind of milk))

Steps:

  • In a large skillet, melt 1 tablespoon of butter then add mushrooms and cook until soft; set aside.
  • In a small bowl, mix together the softened cream cheese, 1 cup Gruyere cheese, 2 tablespoons chives, tarragon, garlic, salt and pepper until blended. Spread over one side of each bread slice. Spoon mushrooms over half of the slices; place remaining bread slices over the top, spread side down.
  • In a large shallow bowl, whisk together the eggs, milk and melted butter. Dip both sides of sandwiches into egg mixture.
  • In a large skillet, toast sandwiches in remaining butter in batches for 2-3 minutes on each side or until golden brown. Sprinkle with remaining cheese and chives.

24 medium mushrooms, about 1 pound
6 tablespoons reduced-fat stick margarine
1 small onion, chopped
1/4 teaspoon garlic powder, or 2 cloves garlic, minced
1 (3-ounce) package low-fat cream cheese, softened
3 tablespoons grated Parmesan
2 tablespoons chopped fresh parsley leaves, or 2 teaspoons dried parsley flakes
1 cup packaged herb-seasoned stuffing croutons

Steps:

  • Preheat oven to 425 degrees F.
  • Remove stems from mushrooms. Chop enough stems to make 1 cup. Melt 2 tablespoons margarine in saucepan. Brush mushroom cap tops with margarine, place top side down in shallow baking pan and brush undersides of caps. Heat remaining margarine in same saucepan. Add chopped mushroom stems, onion and garlic and cook until tender. Stir in cream cheese, combining with fork if necessary. Add Parmesan cheese, parsley and herb seasoned stuffing. Mix thoroughly. Spoon about 1 tablespoon stuffing mixture into each mushroom cap. Bake until heated through.

3 slices bacon
½ (8 ounce) package cream cheese, softened
2 tablespoons grated Parmesan cheese
3 drops Worcestershire sauce
2 dashes ground black pepper
1 pound mushrooms, stems removed
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until crisp and evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate; crumble the drained bacon into a bowl. Stir in the cream cheese, 2 tablespoons Parmesan cheese, Worcestershire sauce, and pepper until evenly mixed. Spoon the filling into the mushroom caps and place into an 8x8-inch baking dish. Sprinkle with the remaining 2 tablespoons of Parmesan cheese.
  • Bake in the preheated oven until the mushrooms are tender and the filling is golden brown, 25 to 30 minutes.

This is great as an appetizer served with a cheese spread or to go with a soup or salad. Cook time includes rising time.

1 (1/4 ounce) package active dry yeast
1 1/2 cups warm water (105F to 115F)
1 tablespoon sugar
1 1/2 teaspoons salt
3 1/2 cups unbleached all-purpose flour (may need a little more or less)
1/2 lb finely chopped fresh mushrooms
1 small onion, finely chopped
1 garlic clove, minced
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • In a large mixing bowl, dissolve yeast in water. Add sugar, salt and half the flour; beat well.
  • Add more flour to make a stiff dough.
  • Cover and let rest 15 minutes.
  • turn out onto floured board. Knead 10 minutes until satiny.
  • Place into greased bowl. Cover and let rise in warm place about 30 minutes.
  • Meanwhile, saute mushrooms, onions and garlic in butter until soft, 10 minutes on low heat.
  • Cool to room temperature.
  • Turn dought out onto oiled board. Divide into two parts.
  • Pat each part out to make a 12-inch square.
  • Spread with mushroom mixture, dividing equally.
  • Roll each part up tightly.
  • Place on cornmeal covered baking sheet.
  • Let rise 1 hour until doubled.
  • Brush with water. Slash loaves in 4 places.
  • Bake at 400F for 20-25 minutes until golden and crusty.

1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package grated Parmesan cheese, divided
1 cup olive oil
20 mushrooms, stems removed

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine the cheese spread, cream cheese, and 1/2 package of Parmesan cheese in a bowl until well blended; cover and refrigerate.
  • Place the olive oil in a bowl. Dip each mushroom in the oil, covering entirely. Place the mushroom face down on a baking sheet lined with parchment paper. Cover mushrooms with another sheet of parchment paper.
