Whole wheat dough:
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon kosher salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into pieces
1 tablespoon apple cider vinegar
Galette:
1 cup ricotta
Kosher salt
3 tablespoons olive oil, divided
4 ounces maitake mushrooms, torn, and/or crimini mushrooms, thinly sliced
1 garlic clove, finely chopped
1 large bunch Swiss chard, ribs and stems removed, leaves cut into bite-size pieces
All-purpose flour (for parchment)
1 large egg, beaten to blend
1 cup mixed fresh tender herbs (such as flat-leaf parsley, cilantro, dill, and/or chives)
1 teaspoon finely grated lemon zest
1 teaspoon fresh lemon juice
Flaky sea salt (such as Maldon)

Steps:

  • For whole wheat dough:
  • Pulse all-purpose flour, whole wheat flour, and salt in a food processor to combine. Add butter and pulse until mixture resembles coarse meal with a few pea-size pieces of butter remaining.
  • Transfer mixture to a large bowl; drizzle with vinegar and 1/4 cup ice water. Mix with a fork, adding more ice water by the tablespoonful if needed, just until a shaggy dough comes together; lightly knead until no dry spots remain (do not overwork). Pat into a disk and wrap in plastic. Chill at least 2 hours.
  • DO AHEAD: Dough can be made 2 days ahead. Keep chilled.
  • For galette:
  • Preheat oven to 400°F. Season ricotta with kosher salt and pepper; set aside.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add mushrooms; season with kosher salt and pepper and cook, stirring occasionally, until golden brown and crisp, about 5 minutes. Transfer to a small bowl.
  • Heat 1 tablespoon oil in same skillet over medium heat. Cook garlic, stirring, until fragrant, about 30 seconds. Add half of chard, season with kosher salt and pepper, and cook, tossing, until slightly wilted. Add remaining chard and cook, tossing occasionally, until completely wilted, about 4 minutes. Remove from heat; season with salt and pepper. Set aside.
  • Roll out dough on a lightly floured sheet of parchment to a 14" round about 1/8" thick. Transfer on parchment to a baking sheet. Spread three-fourths of ricotta over dough, leaving a 1 1/2" border. Top with reserved chard, then mushrooms. Dollop remaining ricotta over vegetables. Bring edges of dough up and over filling, overlapping as needed, to create a 1 1/2" border; brush with egg. Bake galette, rotating once, until crust is golden brown and cooked through, 35-40 minutes. Let cool slightly on baking sheet.
  • Toss herbs with lemon juice and remaining 1 tablespoon oil in a small bowl; season with pepper. Top galette with herbs, zest, and sea salt.

This savory version from Dorie Greenspan's "Everyday Dorie: The Way I Cook" is filled with a mix of sauteed bacon, leeks, and mushrooms tossed with fresh herbs, grated Parmesan, and best of all, chopped walnuts -- both the flavor and crunch are unexpected.

1 1/2 cups unbleached all-purpose flour
2 tablespoons sugar
1/2 teaspoon fine sea salt
1 stick cold unsalted butter, cut into 16 pieces
1/4 cup ice water
4 slices bacon
1 tablespoon extra-virgin olive oil, plus more for drizzling
1/2 pound mushrooms, such as white, cremini, wild, or a mix, trimmed and coarsely chopped
2 leeks, white and light-green parts only, split, washed, and thinly sliced (or 1 large sweet onion, such as Vidalia, thinly sliced, rinsed, and patted dry)
1 clove garlic, finely chopped
Fine sea salt and freshly ground pepper
3 tablespoons dry white wine
2 tablespoons heavy cream
3 tablespoons chopped walnuts
1/4 cup finely grated Parmesan
Leaves from 2 thyme sprigs

Steps:

  • Crust:Pulse flour, sugar, and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal and there are some small flake-size pieces and some larger pea-size pieces. Add a little of the ice water and pulse; add some more and pulse; continue until all the water is in. Now work in longer pulses, stopping to scrape sides and bottom of bowl if needed, until dough forms bumpy curds that hold together when pinched.
  • Turn dough out onto a clean work surface and gently knead to bring it together. Gather into a ball, flatten into a disk, and place between two large sheets of parchment. Roll out dough to a 12-inch circle. Slide dough, still between sheets of parchment, onto a baking sheet or cutting board and refrigerate at least 2 hours or, well wrapped, up to 3 days. (Dough can also be frozen, well wrapped, up to 2 months.)
  • When you're ready to use the dough, let stand on counter for a few minutes, until it's pliable enough to lift and fold without cracking.
  • Filling:Place bacon in a heavy skillet and cook over medium heat, turning occasionally, until crispy and golden brown on both sides. Transfer to a paper towel-lined plate, pat dry with more paper towels, and let cool completely. Finely chop bacon or cut into slender strips. Pour off all but 1 tablespoon fat from skillet; set skillet aside.
  • Preheat oven to 400 degrees with rack in center.
  • Pour oil into skillet with bacon fat and heat over medium. Add mushrooms, leeks or onion, and garlic; season lightly with salt. Cook, stirring, until vegetables are softened, about 5 minutes. (Mushrooms will release liquid, and then, as you continue to cook, take it up again.) Add wine and cook, stirring and scraping bottom of skillet, until it evaporates, 1 to 2 minutes. Pour in cream and cook, stirring, until mostly absorbed. Remove from heat; stir in bacon, pepper (to taste), walnuts, 2 tablespoons cheese, and thyme. (Filling can be made ahead and refrigerated, covered, up to 3 days.)
  • Peel top sheet of parchment off dough; leave dough on bottom sheet of parchment and keep on baking sheet. Scrape filling onto dough; using a spatula, spread into a 9-inch circle. Lift the bare border of dough and fold over filling. As you fold, dough will pleat on itself (don't worry about being neat or getting everything even). (Galette can be made up to this point and refrigerated for a few hours before baking; bake straight from refrigerator.)
  • Bake until crust is deeply golden and filling is hot, 30 to 35 minutes. Transfer sheet to a wire rack and sprinkle remaining 2 tablespoons cheese over the filling, and if desired, the crust. Drizzle with oil, if desired. Let cool about 10 minutes or let cool to room temperature, then cut with a pizza wheel and serve. Galette is best served within a few hours of baking.

1 3/4 cups all-purpose flour
2 teaspoons sugar
3/4 teaspoon kosher salt
3/4 cup unsalted butter, cut into pieces and chilled
2 tablespoons chilled vodka (optional)
1 tablespoon apple cider vinegar
1 1/2 lbs mushrooms (such as shitake, beech, maitake, chanterelle, and or or oyster)
1/4 cup extra virgin olive oil
3 garlic cloves, finely grated, divided
kosher salt, freshly ground black pepper
8 ounces whole milk ricotta cheese
1/4 cup grated parmesan cheese
1 tablespoon chopped fresh thyme leave
8 ounces grated whole milk mozzarella
2 fresno bell peppers, thinly sliced
6 scallions, root ends trimmed
5 fresh thyme sprigs

Steps:

  • Pastry:.
  • Pulse flour, sugar, and salt in food processor to combine. Add butter and process until largest pieces of butter are pea-size. Transfer to a large bowl.
  • Combine vodka, vinegar and 2 Tbsp. ice water (or 1/4 cup ice water if not using vodka) in a small bowl and drizzle over flour mixture, mixing with a fork to combine. Mix until shaggy pieces form, then knead in bowl a couple of times with your hands to bring together (dough will look very clumpy, dry, with loose bits). Transfer large clumps of dough to work surface, drizzle 2 teaspoons ice water over remaining flour mixture in bowl and knead again to bring it together. Place on top of dough on work surface. Press into a single mass, incorporating dry bits, then pat down to make a 3/4"-thick square. Using a bench scraper or knife, divide dough into 4 pieces. Stack pieces on top of one another, placing any unincorporated dry bits in between layers, and press down to combine. Form dough into a 3/4"-thick square and repeat process 3 more times. Flatten into 3/4" rectangle and wrap tightly in plastic. Chill at least 2 hours.
  • Place a rack in the lowest part of the oven; preheat to 375°. Let dough sit at room temperature 5 minutes to soften. Roll out dough on a lightly floured surface to ⅛" thick and about 18 x 13". It's ok if the edges are shaggy and it's not quite rectangular! Place on a parchment-lined rimmed baking sheet and chill while you prepare the toppings.
  • Toppings and Assembly:.
  • Toss mushrooms, oil, half of garlic, 1 1/2 teaspoons salt and pinch of pepper in a large bowl until completely coated. Stir ricotta, parmesan, chopped thyme leaves, 3/4 teaspoons kosher salt, 1/2 teaspoons pepper and remaining garlic in a small bowl until combined.
  • Sprinkle mozzarella evenly over top of cold pastry. Dollop ricotta evenly over top. Arrange scallions next and spread green ends out so they fan and overlap across the galette. Top with mushrooms, fresnos and thyme sprigs. Bake on lowest rack until the crust is golden brown and the cheese is brown in spots. 50-65 minutes. Let cool 30 minutes and remove thyme sprigs before serving.
  • Do Ahead: Dough can be made 5 days ahead. Keep chilled, or freeze up to 1 month.

10 white mushrooms
2 portobello mushroom caps
1 bunch spinach, washed and coarsely chopped

1 teaspoon herbes de provence

Steps:

  • To make crust:.
  • Preheat oven to 350 degrees.
  • Mix the flour and salt. Drizzle the olive oil over the flour and cut in with a fork, combining lightly until the mixture resembles coarse meal. Sprinkle water over the flour, a tablespoon at a time, and mix lightly with a fork. With your hands, press the pastry lightly into a ball, wrap in waxed paper, and let rest in the refrigerator at least 20 minutes.
  • For the rest:.
  • Chop the shallots and place them in a frying pan with the olive oil. Saute over medium heat until they begin to soften. Lower the heat and add the wine. Slice the white and portobello mushrooms, and add them to the pan, cooking until they soften and release their liquid. Add the spinach, salt, pepper and herbs and cook until the spinach is wilted.
  • On a wide surface, roll out the dough between two sheets of parchment paper until it becomes a 1/4-inch-thick circle. Arrange the vegetable mixture in the middle of the dough, and loosely gather the dough around the filling, leaving an opening at the top (the dough won't close completely). Place the galette on a new sheet of parchment paper on a baking sheet and bake in the middle of the oven until filling is bubbly and crust is lightly browned, about 35 to 40 minutes.

Sour Cream Pastry:
1 1/4 cup all-purpose flour, chilled in freezer for 10-15 minutes
1/4 teaspoon salt
1/2 cup (1 stick) frozen unsalted butter, cut into small chunks
1/4 cup sour cream, very cold
2 teaspoons fresh lemon juice
1/4 cup ice water
Mushroom & Goat Cheese Filling:
2 tablespoons unsalted butter
1 1/2 lbs thinly sliced mushrooms (equal amounts of shiitake and cremini)
1/2 large yellow onion, finely julienned
3-4 cloves of garlic, smashed
1/2 cup dry sherry
large sprig of fresh thyme
large sprig of fresh rosemary
salt
pepper
5 ounces Humboldt Fog goat cheese (or another ripened young goat cheese), seperated
Prepare crust:
1.Combine salt and flour in bowl. Add chunks of butter and using a pastry cutter, cut the butter into the flour until the mixture resembles coarse meal and butter pieces are no bigger than the size of small peas.
2.In another bowl, whisk together the ice water, cold sour cream, and lemon juice.
3.With fingertips or wooden spoon, slowly add the liquid mixture to the dry mixture until large lumps form.
4.Pat all the lumps into a large ball--do not overwork the dough. Cover with plastic wrap and refrigerate for 1-2 hours (if dough is too soft after an hour, allow to chill for another hour).

Steps:

  • Prepare Filling: 5.Heat very large (more surface area the better) skillet over very high heat. Add butter, followed by mushrooms, spreading into a single layer with a wooden spoon. Continue to saute--the mushrooms will quickly begin to release their moisture--keep cooking until most of the liquid has evaporated. 6. Add the sliced onion and smashed garlic and continue to saute until the onions are translucent--and the mushrooms and onion begin to caramelize and the bottom of the pan has formed a nice light brown fond. 7.Remove the pan from heat and deglaze with the dry sherry. Place back on the heat, add the sprigs of thyme and rosemary, and continue to cook over medium high heat until all of the sherry has evaporated. Season with salt and pepper to taste. 8.Remove and spread out on a baking sheet and allow to cool to room temperature. (Before using, discard the large sprigs of thyme and rosemary and garlic cloves). Assemble the Galette: 9.Preheat the oven to 400 degrees (F). 10.Remove the dough from the fridge and on a floured work surface, roll out into a 12-inch round. Transfer to a parchment lined baking sheet. 11.Crumble 3 ounces of the goat cheese into a bowl, add the (cooled) mushroom mixture, and stir gently. 12.Spread the mixture into the center of the dough--leaving a 1 1/2 inch border on the sides. Fold and pleat the edges of the dough border over the mushrooms--leaving the center exposed. 13.Bake for 30 minutes--remove from the oven--sprinkle with remaining 2 ounces of goat cheese--and continue to bake for another 5-10 minutes. 14.Remove from oven, allow to stand for 5 minutes on cooling rack. Transfer to serving plate. Serve hot, warm, or at room temperature.

For the Dough:
1¼ cups AP flour
½ cup whole wheat flour
1 TBSP. sugar
¾ tsp. salt
10 TBSP. unsalted butter, cut into ½" pieces and kept cold
7 TBSP. ice water
1 tsp. apple cider (or white wine) vinegar
For the Filling:
1¼ lbs. Cremini mushrooms, thinly sliced
2 TBSP. olive oil
1 lb. leeks, sliced ½" thick and thoroughly washed (about 3 cups)
2 tsp. fresh thyme, minced
2 TBSP. half and half (or light cream)
1 TBSP. Dijon mustard
--- --- salt and pepper
2 tsp. olive oil
3 oz. goat cheese, crumbled
1 lrg. egg, lightly beaten
--- --- salt

Steps:

  • For the Dough: Process the flours, sugar, and salt in food processor until combined, 3 to 4 pulses. Add the butter and pulse until it forms pea-size pieces. In a small bowl, measure the ice water and add the vinegar. Drizzle it over the dry ingredients and pulse a couple of times, until the dough just starts to pull away from the sides of the processor. Do not overwork the dough (see note below).
  • Transfer the mixture to the center of a large sheet of plastic wrap, press gently into a rough 4-inch square, and wrap tightly. Refrigerate for at least 30 minutes.Transfer the dough to a lightly floured work surface. Roll into an 11x8-inch rectangle with the short side of the rectangle parallel to the edge of your work surface. Using a bench scraper, bring the bottom third of the dough up, then fold the upper third over it, folding it like a business letter into an 8x4-inch rectangle. Turn the dough 90 degrees counterclockwise. Roll out the dough again into 11x8-inch rectangle and fold into thirds again. Turn the dough 90 degrees counterclockwise again and repeat rolling and folding into thirds. After the last fold, fold the dough in half to create a 4-inch square. Press the top of the dough gently to seal. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes or up to 2 days.
  • For the Filling: Clean the mushrooms, cut them into small pieces (about ½") and then dry-sauté (without any fat) them in a hot, 12" skillet for 5-6 minutes, stirring frequently. Remove the mushrooms from the skillet to a bowl and reserve. To the same skillet, heat the olive oil over medium heat. Add the leeks (white part and pale green part only) and the thyme, cover, and cook, stirring occasionally, until the leeks are tender and beginning to brown, 5 to 7 minutes. Transfer the leeks to the bowl with the mushrooms. Stir in the half and half (or cream) and the mustard. Season with salt and pepper to taste. Set aside.
  • Adjust an oven rack to the lower middle position, place a pizza stone on the rack, and heat the oven to 400 °F. Remove the dough from the refrigerator and let stand at room temperature for 10 minutes. Roll out the dough on a generously floured work surface into a 14" circle about ⅛-inch thick. (Trim the edges as needed to form a rough circle.) Transfer the dough to a parchment paper-lined rimmed baking sheet. Using a fork, prick the dough a few times. Brush the top of the dough with 1 tsp. of olive oil.
  • Spread half of the filling evenly over the dough, leaving a 2-inch border around the edge. Sprinkle with half of the goat cheese, cover with the remaining filling, and top with the remaining goat cheese. Drizzle the remaining 1 tsp. of oil over the filling. Grasp 1 edge of the dough and fold up the outer 2 inches over the filling. Repeat around the circumference of the dough, overlapping it every 2 to 3 inches; gently pinch the pleated dough to secure but do not press the dough into the filling. Brush the dough with the egg and sprinkle evenly with salt. Lower the oven temperature to 375 °F.
  • Bake until the crust is deep golden brown and the filling is beginning to brown, 35 to 40 minutes. Cool the tart on the baking sheet on a wire rack for 10 minutes. Using an offset or wide metal spatula, loosen the tart from the parchment and carefully slide the tart off the parchment and onto a cutting board. Cut into wedges, and serve.

10 tablespoons unsalted butter, cut into ½-inch pieces and chilled
7 tablespoons ice water
1 teaspoon white vinegar
Filling:
1 1/4 pounds shiitake mushrooms, stemmed and sliced thin
5 teaspoons olive oil
1 pound leeks, white and light green parts only, sliced ½ inch thick and washed thoroughly (3 cups)
1 teaspoon minced fresh thyme
2 tablespoons crème fraîche
1 tablespoon Dijon mustard
Salt and pepper
3 ounces Gorgonzola cheese, crumbled (3/4 cup)
1 large egg, lightly beaten
Kosher salt
2 tablespoons minced fresh parsley
Adjust oven rack to lower middle position, place pizza stone on oven rack, and heat oven to 400 degrees. Remove dough from refrigerator and let stand at room temperature for 15 to 20 minutes. 1/3 cup nonfat sour cream
1/2 teaspoon salt (to taste)
fresh ground pepper
1/2 cup scallion, chopped
1/4 cup parsley, chopped

Steps:

  • To prepare crust: Whisk whole-wheat flour, all-purpose flour, baking powder and salt in a medium bowl. Puree cottage cheese in a food processor. Add oil, milk and sugar; process until smooth. Add the dry ingredients and pulse 4 to 5 times, just until the dough clumps together. Turn out onto a lightly floured surface and knead several times, but do not overwork. Press the dough into a disk, dust with flour and wrap in plastic wrap. Refrigerate for at least 20 minutes.
  • Meanwhile, prepare filling: Heat oil in a large nonstick skillet over medium-low heat. Add leeks and cook, stirring often, until tender, 3 to 5 minutes. (Add water, if necessary, to prevent scorching.) Add mushrooms and increase heat to medium-high; cook, stirring occasionally, until the mushrooms are tender and the liquid has evaporated, 3 to 4 minutes. Let cool.
  • Whisk egg, sour cream, salt and pepper in a large bowl. Add scallions, parsley and the mushroom mixture; toss to coat.
  • To assemble & bake galette: Preheat oven to 400°F Coat a baking sheet with cooking spray.
  • On a lightly floured surface, roll dough into a rough 15-inch circle about 1/4 inch thick. Roll it back over the rolling pin and transfer to the prepared baking sheet. Spread the filling over the dough, leaving a 2-inch border all around. Fold the border up and over the filling to form a rim, pleating as necessary. Brush egg glaze over the rim.
  • Bake the galette until the crust is golden, 25 to 35 minutes. Let cool on the baking sheet on a wire rack for 5 minutes. Slide onto a serving platter and serve hot or at room temperature.

  • 1. To make the pastry, in a bowl, combine the flour and salt. Place the butter in another bowl. Place both bowls in the freezer for 1 hour. Remove the bowls from the freezer and make a well in the center of the flour. Add the butter to the well and, using a pastry blender, cut it in until the mixture resembles coarse meal. Make another well in the center. In a small bowl, whisk together the sour cream, lemon juice and water and add half of this mixture to the well. With your fingertips, mix in the liquid until large lumps form. Remove the large lumps and repeat with the remaining liquid and flour-butter mixture. Pat the lumps into a ball; do not overwork the dough. Cover with plastic wrap and refrigerate for 1 hour. 2. Preheat an oven to 400°F. 4. In a large fry pan over medium heat, melt the butter. Add the green onions and saute, stirring occasionally, until soft, about 5 minutes. Add the garlic, rosemary and thyme and continue to cook, stirring, for 1 minute more. Increase the heat to high, add the fresh and rehydrated mushrooms, and saute until the mushrooms are tender and the liquid they released has completely evaporated, 8 to 10 minutes. Transfer to a plate and let cool. 5. On a floured work surface, roll out the dough into a 12-inch round. Transfer to an ungreased baking sheet. Crumble the blue cheese into a bowl, add the cooled mushrooms and stir well. Spread the mixture over the dough, leaving a 1 1/2-inch border. Fold the border over the mushrooms and cheese, pleating the edge to make it fit. The center will be open. 6. Bake until golden brown, 30 to 40 minutes. This is a pretty autumn recipe that can be served as an appetizer or could be a great vegetarian entree!

1 ready-made pie crust (use round style)
1 tablespoon olive oil
1 tablespoon butter
1/8 cup white wine (Chardonnay)
4 whole green onions, chopped (using white & light green parts)
1 medium yellow sweet onion, sliced into rings
4 garlic cloves, minced
1/2 tablespoon fresh rosemary, chopped
1/2 tablespoon fresh thyme, removed from stems
1/4 ounce dried shiitake mushroom
1/4 ounce dried wild mushrooms
16 ounces white button mushrooms, stems removed and roughly chopped
6 sun-dried tomatoes, snipped into small strips
1/2 teaspoon salt
1/4 teaspoon black pepper
6 ounces maytag blue cheese

Steps:

  • Bring 1 c water to boil, remove from heat. Carefully add dreid mushrooms and let sit for 30 minutes.
  • Meanwhile, in large skillet or saute pan, over medium heat, heat oil. When oil is hot add butter then saute green onions until they begin to slightly brown, then add yellow onion and cook until shiny and most liquid has evaporated. Add garlic and herbs, salt & pepper and cook just a minute or so until garlic becomes fragrant. Add white wine, sun-dried tomatoes, button mushrooms and rehydrated mushrooms that have been drained and chopped. Cook until most liquids have evaporated, about 5 minutes. Set mixture aside to cool.
  • On a floured surface, roll out pie crust and transfer to ungreased dark baking sheet.
  • In a medium bowl, crumble bleu cheese and add in the mushroom mixture and blend well. Spoon cheese-mushroom filling onto the center of pie crust and spread, leaving a 1-1/2" border. Fold edges of piecrust toward center, pleating to retain a circular shape; the filling will be exposed.
  • Preheat oven to 400 degree oven. Bake until crust is golden, approximately 25-30 minutes. Remove from ove nand let stand 10 minutes. Slide galette onto a serving plate, garnish with several sprigs of fresh thyme. Cut into 8 wedges and serve.
  • Serves 8 as appetizers.
