You won't believe that this Mushroom and Beef Skillet only takes about half an hour to make! I'll show you one of my favorite shortcuts for a creamy sauce without tons of work.

1 pound lean ground beef
1 clove garlic (minced)
1 tablespoon olive oil
1/4 cup onion (chopped)
1 10 1//2 ounce can condensed cream of mushroom soup
1 soup can of water
8 ounce package of fresh mushrooms
1 cup shredded mozzarella
Chopped fresh parsley

Steps:

  • In a large skillet add olive oil and mushrooms. Cook over medium heat for 3-5 minutes. Set mushrooms aside.
  • In the skillet cook beef, onion and garlic on medium heat until the beef is no longer pink. Drain.
  • Add soup, water and mushrooms. Stir and cook until hot.
  • Top with Cheese. Cover and cook until cheese melts. Sprinkle with parsley.

Steak served with a sophisticated but easy pan sauce of shiitake mushrooms, tarragon, white wine, shallot, and butter. Impress your sweetheart with this dish!

1 (12 ounce) sirloin steak
salt and freshly ground black pepper to taste
2 tablespoons oil, or as needed
⅓ cup shiitake mushrooms, stems discarded, caps thickly sliced
½ shallot, sliced
1 clove garlic, peeled
⅓ cup dry white wine
⅓ cup beef broth
¼ cup butter, cubed
2 tablespoons chopped fresh tarragon

Steps:

  • Season steak with salt and pepper on both sides.
  • Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. Add steak and cook until it is beginning to firm and is hot and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Remove steak from skillet and set aside. Tent with foil to keep warm. Discard oil remaining in the skillet.
  • Reduce heat to medium-low and cook mushrooms, shallot, and garlic, stirring frequently, until softened, about 5 minutes. Pour in white wine and cook until slightly reduced. Pour in beef broth. Reduce heat to low and stir in butter, 1 cube at a time, stirring well after each addition. Stir in tarragon. Season with salt and pepper. Serve mushroom sauce over the steak.

Roasted potatoes combined with mushrooms and soup make an easy skillet supper.

1 lb lean (at least 80%) ground beef
1/4 cup chopped onion
1 bag (19 oz) Value Size frozen roasted potatoes with garlic & herb sauce
1 can (18 oz) Progresso™ Vegetable Classics creamy mushroom soup
1 jar (4.5 oz) sliced mushrooms, drained
1 cup shredded mozzarella cheese or Oaxaca cheese (4 oz)
Chopped fresh parsley

Steps:

  • In 12-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked. Drain.
  • Add frozen potatoes. Cook 8 to 10 minutes, stirring frequently, until potatoes are tender. Add soup and mushrooms; cook and stir until mixture is hot.
  • Top with cheese. Cover; cook about 2 minutes or until cheese is melted. Sprinkle with parsley.

1-1/2 pounds red potatoes (about 6 medium), cut into 1-1/2-inch pieces
1 pound ground beef
1/2 pound sliced fresh mushrooms
1 medium onion, halved and sliced
3 tablespoons all-purpose flour
3/4 teaspoon pepper, divided
1/2 teaspoon salt, divided
1 can (14-1/2 ounces) beef broth
2 tablespoons butter, softened
1/2 cup half-and-half cream
1/2 cup french-fried onions

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat to medium; cook, uncovered, until tender, 10-15 minutes., Meanwhile, in a large skillet, cook and crumble beef with mushrooms and onion over medium-high heat until no longer pink, 6-8 minutes; drain. Stir in flour, 1/2 teaspoon pepper and 1/4 teaspoon salt until blended. Gradually stir in broth; bring to a boil. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring occasionally., Drain potatoes; return to pan. Mash potatoes to desired consistency, adding butter, cream and the remaining salt and pepper. Spoon into bowls; top with beef mixture. Sprinkle with fried onions.

This is a great, fast, and easy recipe, with minimal cleanup. It's a very hearty dish, which is great for a cold winter day. NOTE: My recipes are notoriously salty, since I'm a salt-o-holic, so you may want to adjust the ingredients to satisfy your own sodium intake.

2 lbs ground beef
1 medium onion, diced
3 (10 1/2 ounce) cans cream of mushroom soup
2 (1 ounce) packets onion soup mix
1 (10 ounce) jar sliced mushrooms, drained
1 (14 ounce) can beef broth
4 tablespoons butter or 4 tablespoons margarine
1 (12 ounce) package egg noodles
black pepper (to taste)

Steps:

  • Brown ground beef.
  • Add onions during browning.
  • Drain grease.
  • Add cans of Cream of Mushroom Soup.
  • Add packets of Onion Soup Mix.
  • Over low-medium heat, stir mixture until smooth.
  • Add mushrooms.
  • Add Beef Broth.
  • Add black pepper.
  • Stir thoroughly until well-mixed.
  • Reduce heat to simmer.
  • Simmer for 20-30 minutes, covered.
  • Cook egg noodles in separate pot, according to directions.
  • While noodles are cooking, add butter or margarine.
  • Stir and cover, continuing to simmer.
  • Drain noodles, and return to pot.
  • Add ground beef/soup/mushroom mixture to noodles, and stir thoroughly.
  • Serve and enjoy.
