MUSHROOM-QUINOA VEGGIE BURGERS WITH SPECIAL SAUCE
These hearty mushroom, black bean and quinoa veggie burgers are a healthy and satisfying homemade alternative to store-bought veggie burgers. And they take just 25 minutes of active time to prep, so while they're special enough for entertaining, they're quick enough for weeknight dinners.

- Place mushroom, black beans, almond butter, 1 tablespoon mayonnaise, pepper, paprika, 1/2 teaspoon garlic powder and salt in a food processor. Pulse, stopping once or twice to scrape down the sides, until a coarse mixture forms that holds together when pressed. Transfer to a bowl and add quinoa and oats; stir well to combine. Refrigerate for 1 hour.
- Meanwhile, whisk ketchup, mustard and the remaining 2 tablespoons mayonnaise and 1/4 teaspoon garlic powder in a small bowl until smooth.
- Shape the mushroom mixture into 4 patties.
- Heat oil in a large grill pan or nonstick skillet over medium-high heat. Add the patties and cook until golden and beginning to crisp, 4 to 5 minutes. Carefully flip and cook until golden brown, 2 to 4 minutes more.
- Serve the burgers on buns with the special sauce, lettuce, tomato and onion.

SOUTHERN MUSHROOM-BEEF BURGERS

- Make the pimiento cheese: In a bowl, mix both cheddars, the cream cheese, pimientos, mayonnaise, chives, garlic powder, cayenne and paprika. Season with salt and black pepper. Add the reserved pimiento liquid to loosen slightly. Cover and refrigerate until ready to serve.
- Make the patties: In a bowl, combine the beef, mushrooms, Worcestershire sauce, onion powder, paprika, garlic powder, 1 1/2 teaspoons salt and 1 tablespoon black pepper. Form into 6 extra-large patties, about 8 ounces each. Make a little indentation in the center of each patty.
- Preheat a grill pan to medium-high heat. Grill the patties for 4 minutes on each side, or until the internal temperature reaches 150˚ F to 155˚ F (I like my burger medium well), topping each patty with a large dollop of the pimiento cheese during the last 1 to 2 minutes of cooking. If you like your patties more on the rare side, take them off the grill when the internal temperature reaches 140˚ F. Remove the patties and cover with foil for about 5 minutes. While the burgers rest, slather the buns with melted butter and place them on the grill for about a minute (keep an eye on them to avoid burning).
- Make the sauce: Mix the mayonnaise and barbecue sauce in a small bowl. To assemble the burgers, spread the barbecue mayonnaise on the bottom buns. Top with the lettuce and tomatoes. Add the burgers, red onions and pickles. Place the bun tops on the burgers.
AIR FRYER JUICY LUCY MUSHROOM BURGERS
The Juicy Lucy burger is a twist on a traditional burger where the cheese is melted inside the patty. This meat-free version is inspired by Shake Shack's 'Shroom Burger. Portobello mushrooms are stuffed with a cheesy mixture, breaded and air fried until golden brown with gooey cheese on the inside. They're served on brioche buns with lettuce, tomato and a special sauce that will keep you coming back for more!

- Preheat a 3.5-quart air fryer to 400 degrees F.
- Toss together the mushrooms, oil, 1/4 teaspoon salt and a few grinds of pepper. Place the mushrooms in the air-fryer basket and fry until tender, about 3 minutes per side. Transfer to a plate to cool, 5 to 8 minutes.
- Meanwhile, stir together the Cheddar, Havarti cheese, cream cheese, chili powder, garlic powder and onion powder in a medium bowl. Divide the mixture into 4 portions. Form each portion into a disk about 3 1/2 inches wide to fit inside the mushroom caps.
- Once the mushrooms are cool enough to handle, horizontally cut off the upper third of each mushroom cap. Place 1 cheese disk inside each mushroom, gill-side up, and sandwich with the top of the mushroom cap, pressing down to cover the cheese filling.
- Whisk the flour and 1/4 teaspoon salt in a small baking dish. Whisk the egg in a second baking dish. Put the panko in a third baking dish.
- Dredge the mushrooms in the flour, shake off any excess and coat in the egg mixture. Allow the excess egg to drip off, then coat in the panko, pressing to adhere. Spray the mushrooms with the cooking spray and place in the air fryer basket. Cook until golden brown, about 4 minutes per side.
- Mix together the mayonnaise, barbecue sauce and ketchup in a small bowl. Spread a generous layer of the sauce on both sides of the buns. Add to each bottom bun 1 lettuce leaf, 1 tomato slice and 1 mushroom burger. Finish with the bun tops, slice in half and serve.
MUSHROOM AND BEEF BURGERS
These hamburgers - cut through with roasted mushrooms - are inspired by the versions cooked by the chef Scott Samuel of the Culinary Institute of America. The recipe came to The Times in 2013, in Martha Rose Shulman's "Recipes for Health" column. They are here made of half beef, half roasted mushrooms, though Mr. Samuel went two parts meat to one part mushrooms. Either way, they are incredibly moist.

- In a large bowl, mix together the beef, roasted mushroom base, onion, salt, pepper, Worcestershire sauce, herbs, and egg. Form 6 to 8 patties and place them on a plate or a lightly oiled sheet pan. Refrigerate for 30 minutes.
- Preheat the oven to 425 degrees. Line a sheet pan with parchment. Heat 1 or 2 large, heavy skillets over medium-high heat and add enough oil to lightly coat the bottom (about 1 tablespoon). When the pans are hot, add the patties and cook for 4 minutes on each side. Transfer to the parchment-lined sheet pan and place in the oven for 5 minutes. Remove from the oven, let sit for a couple of minutes, and serve.

- For the sauce: Heat olive oil in a pan over medium heat. Add red onion and sauté for 1-2 minutes. Add the sliced mushrooms and sauté for another 2-3 minutes. Season with salt.
- Add white wine and cream to deglaze the mushrooms. Let simmer for 5 minutes.
- For the burgers: Cook patties on the BBQ or stovetop until cooked through and toast the buns.
- Slice the figs.
- Top the patties with mushroom sauce and sliced fig and place in the buns.
