This concoction formed from what I had on hand on a cold afternoon. This beef, barley, and mushroom stew is now a home favorite and will hopefully be enjoyed by many generations.

5 medium potatoes, quartered
1 tablespoon olive oil
1 ½ pounds boneless beef sirloin steak, cut into 1-inch cubes
2 (14 ounce) cans beef broth
1 (10.5 ounce) can condensed cream of mushroom soup
½ cup quick-cooking barley
1 medium onion, chopped
1 cup chopped fresh mushrooms
4 cloves garlic, minced
1 teaspoon dried oregano, or to taste
salt and ground black pepper to taste
½ (16 ounce) package frozen mixed vegetables

Steps:

  • Place potatoes in a large pot and cover with water. Bring to a boil. Reduce heat and simmer until they're almost falling apart, about 20 minutes.
  • While potatoes are cooking, heat olive oil in a medium pan over medium-high heat. Add steak and brown on all sides, 5 to 7 minutes total.
  • Pour beef broth and condensed soup into the bottom of a slow cooker and set to Low. Add barley. Drain potatoes and add to the cooker. Add steak, including pan juices and oil, followed by onion, mushrooms, garlic, oregano, salt, and pepper.
  • Cover and cook on High for 1 hour. Add frozen vegetables and continue to cook until barley and vegetables are tender and steak is cooked through, about 2 hours more.

2 quarts vegetable broth or 2 quarts chicken broth
1 quart water
1/2 cup white wine
2 cups sliced button mushrooms
1 ounce dried shiitake mushrooms or 1 ounce dried porcini mushrooms, crumbled
3/4 cup pearl barley
3/4 cup brown lentils
1 onion, diced
4 garlic cloves, minced
2 medium carrots, diced
2 medium potatoes, peeled and diced (about 1 lb)
2 teaspoons dried savory
3 bay leaves
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage
1/2-1 teaspoon ground black pepper
salt, to taste
1 (10 ounce) box frozen chopped spinach (optional)
1 (15 ounce) can petite diced tomatoes (optional)
2 -3 teaspoons fresh lemon juice (optional)
parmesan cheese (optional)

Steps:

  • Combine everything except optional ingredients in slow cooker. Cook on high 4-6 hours or low 8-12 hours. If using spinach and/or tomatoes, add 2 hours before serving. If using lemon juice and/or parmesan cheese, add just before serving.

1 sweet potato, cubed
1 tablespoon olive oil
salt and pepper
1/4 cup green lentil, washed and picked over
1/4 cup uncooked barley
1/2 teaspoon salt
1 tablespoon olive oil
14 cremini mushrooms
1/2 medium yellow onion, chopped
1/4 cup carrot, chopped
1 stalk celery, chopped
3 garlic cloves, minced
2 1/2 cups low sodium vegetable broth
1/4 cup red wine
1 tablespoon tomato paste
1 tablespoon soy sauce
1/2 teaspoon smoked paprika
1/4 cup chopped fresh parsley

Steps:

  • Mix sweet potato, oil and salt and pepper. Toss and place on baking sheet.
  • Bake at 400 deg for 30 minutes.
  • Melt butter in large dutch oven over med-high heat. Add the onions. Cook until softened, about 5 minutes. Stir in mushrooms and 1/4 t. salt. Cook until they have softened and browned, 10 - 15 minutes. (This salt is necessary to get the liquid out of the mushrooms.).
  • Stir in the carrots and garlic. Cook for 1 minute. Stir in the broth, barley, lentils, thyme and 1/2 teaspoons salt (if desired). Bring to simmer. Cook until barley is tender, about 50 minutes. Season with salt and pepper before serving.
  • Divide into 2 oven safe bowls and top with the sweet potatoes.
  • Bake at 350 deg. for 30 minutes.
  • Serve with biscuits or bread.

2 cups onion, thinly sliced
8 ounces sausage meat
1 cup celery, chopped
1 cup carrot, sliced
2 cloves garlic, minced
1 bay leaf
5 cups shitake mushrooms, thinly sliced
1 1/2 cups portabello mushrooms, chopped
1/2 cup uncooked pearl barley
3 15.75 ounce cans chicken broth, fat-free & less sodium
2 tablespoons brandy
1 teaspoon salt
1/2 teaspoon black pepper
1/3 cup fresh parsley, coarsely chopped

Steps:

  • Heat oil in large dutch oven over medium heat. Add onion; cook 5 minutes or until slightly soft. Remove casings from sausage. Add sausage to pan; cook 8 minutes or until sausage is browned, stirring to curmble. Add celery, carrot, garlic, and bay leaf; cook 10 minutes or until onions are golden brown, stirring frequently. 2 cups carrot juice
10 ounces shiitake mushrooms, stems removed and reserved, caps sliced
2 tablespoons extra-virgin olive oil
4 tablespoons unsalted butter
1 cup instant barley
1 medium onion, chopped
1 stalk celery with leaves, finely diced
1/4 teaspoon dried rosemary, crumbled
Kosher salt and freshly ground pepper
4 medium carrots, cut into 1/2-inch pieces
4 cups kale or mustard greens, stems removed and leaves torn
1 tablespoon grated peeled ginger

Steps:

  • Bring the carrot juice, 3 cups water and the mushroom stems to a boil in a saucepan over medium heat. Meanwhile, heat the olive oil and 2 tablespoons butter in a pot over medium-high heat. Add the mushroom caps and barley and cook until the barley is toasted, about 5 minutes.
  • Add the onion, celery and rosemary to the pot and season with salt and pepper. Cook, stirring occasionally, until the onion is translucent, about 2 minutes. Add the carrots and cook 2 more minutes.
  • Increase the heat to high and add half of the carrot juice mixture, leaving the mushroom stems in the pan. Bring to a boil and cook, stirring occasionally, until the liquid is almost absorbed, about 6 minutes.
  • Add the remaining carrot juice mixture, the kale and ginger and cook, stirring, until the barley and vegetables are tender, about 5 minutes. Stir in the remaining 2 tablespoons butter, then ladle the stew into bowls.

5 cups vegetable broth or 5 cups mushroom broth
1/2 cup pearl barley
5 cups mushrooms
2 cups kale
1 large onion, chopped
flour, to thicken (I used about 3/4 cup)
pepper, to taste

Steps:

  • Boil the broth. Once it's boiling, add the barley.
  • While the barley cooks, slice the mushrooms. And saute them in oil. (trying to get them to release as much juice as possible).
  • While the barley and mushrooms cook, chop the kale.
  • Then, take the flour, and the same amount of broth and whisk them together, and add it to the soup. (It will thicken more later).
  • By the time the mushrooms are cooked, and the kale is chopped, the barley should be a little more than half done, add the mushrooms and onions, and stir occasionally.
  • Once the barley is almost cooked through, add the kale, and pepper.
  • Wait a few minutes stirring occasionally, and enjoy!

2 T olive oil
1 T butter
½ medium yellow onion, diced
1 carrot, diced (to match the onion)
1 clove garlic, minced
1 lb mixed variety mushrooms, like button, shiitake, baby bellas, or oyster, sliced ¼ inch thick
¼ c red wine
2 T soy sauce, divided
½ c pearl barley
4 sprigs fresh thyme
1 bay leaf
4 c vegetable stock (one 32-oz box)
3 T fresh flat-leaf parsley, chopped

Steps:

  • Heat olive oil and butter in a large, heavy-bottom stock pot over medium-high heat. Add onion, carrot, and garlic and sauté until lightly browned. Add mushrooms and continue cooking until they have released their juices and are browned. Add red wine and 1 tbsp soy sauce. Cook, stirring occasionally, until liquid is reduced by half. Add barley, thyme, and bay leaf, sautéing for 1 minute. Add the vegetable stock and bring mixture to a boil, then lower heat, cover, and simmer for about 1 hour. (If soup seems too thick, more broth can be added to thin it out.) Before serving, remove thyme stems (leaves will come off during cooking) and bay leaf. Stir in remaining 1 tbsp soy sauce, and season to taste with salt and pepper. Sprinkle stew with chopped parsley before serving.

3 tsp garlic, crushed (2 tsp for barley, 1 tsp for mushroom marinade)
1 medium onion, diced
6 Tbsp olive oil, (2 Tbsp for barley, 4 Tbsp for mushroom marinade)
1 28 oz can tomatoes, fire-roasted, diced
4 cups chicken or vegetable stock
1 cup pearl barley
4 Portobello mushrooms (3-4 inches wide), stems cut off
1/4 cup balsamic vinegar
2 tsp soy sauce (low sodium)
1 tsp herbes de provence (1/2 tsp for barley, ½ tsp for mushroom marinade)
½ tsp cracked black pepper
Fresh or frozen peas (optional)

Steps:

  • Whisk together 4 tablespoons olive oil, balsamic vinegar, soy sauce, ½ tsp herbes de provence, 1 tsp crushed garlic, and black pepper. In a glass roasting dish, sprayed with oil, layout caps, gills facing down, and pour marinade over. Marinate for one hour, turning mushrooms over several times. Meanwhile, in a heavy stew pot, cook onions and garlic in 2 Tbsp olive oil until softened, 3-5 minutes. Add can of tomatoes, ½ tsp herbes de provence, and stock, heat until bubbling. Add barley. Cover and reduce heat to low simmer. Cook for an hour or so, until it reaches a stew-like consistency and barley is thoroughly cooked. Last 15 minutes stir occasionally to prevent catching on the bottom of the pot. If there's too much liquid, cook without lid until it reaches the desired consistency. 30 minutes after starting the barley, set the oven to preheat at 450 degrees (or 425 on convection setting). Roast mushrooms, gill side down, 15 minutes. Turn mushrooms over and roast 5 minutes more. Pull mushrooms from marinade and chop into bite size pieces. Add the marinade and mushrooms to cooked barley. Stir to blend. If needed, add salt to taste. Fresh or frozen peas can also be added.
