2 cups water
1 pound mung bean sprouts
1 baby carrot, cut into matchsticks
1 green onion, cut into 1-inch pieces
1 teaspoon sesame oil
1 teaspoon crushed garlic
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon sesame seeds

Steps:

  • Bring water to a boil in a saucepan. Add mung beans; cook until tender, about 5 minutes. Drain. Rinse under cool running water to stop the cooking process. Drain well; transfer to a bowl.
  • Combine baby carrot and green onion in a small microwave-safe bowl. Cover with water and place in the microwave for 30 seconds. Drain.
  • Stir baby carrot and green onion into the bean sprouts in the bowl. Add sesame oil, garlic, salt, pepper, and sesame seeds; mix by hand until combined.

LENTIL, QUINOA, AND MUNG BEAN SALAD

Packed with fiber, protein, and potassium and lightly dressed with fresh lemon juice and olive oil. This is a family favorite that is always requested for cookouts. I sometimes add a little honey as the acid in lemons can vary depending on the lemon that is used. Top each serving with a little feta, if desired.

½ cup dried green mung beans
4 cups water, plus more for soaking
½ cup green lentils, rinsed
1 bay leaf
1 cup quinoa, rinsed
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
1 tablespoon distilled white vinegar
1 teaspoon honey
1 teaspoon salt
ground black pepper to taste
⅓ cup light olive oil
½ English cucumber, diced
1 Roma tomato, diced
½ red bell pepper, cut into 1/2-inch pieces
½ cup chopped green onions
½ cup chopped fresh parsley

Steps:

  • Place mung beans into a large container and cover with several inches of cool water; let soak, 8 hours to overnight.
  • Bring 2 cups salted water to a boil in a medium pot. Add lentils and bay leaf, cover, and simmer over low heat for 18 to 20 minutes. Drain and set aside to cool.
  • Meanwhile, drain mung beans. Bring 2 cups salted water to a boil in a small pot. Add mung beans, cover, and simmer over low heat for 20 to 25 minutes. Drain and set aside to cool.
  • Bring 2 cups salted water and quinoa to a boil in a medium pot. Reduce heat and simmer, uncovered, until all water has been absorbed, 15 to 20 minutes. Remove from heat, cover, and let steam for 5 minutes. Set aside to cool.
  • Place lemon juice, zest, vinegar, honey, salt, and pepper in the bottom of a large bowl. Drizzle in oil, whisking constantly until dressing is smooth. Add cooled lentils, mung beans, and quinoa; stir to combine. Add cucumber, tomato, bell pepper, green onions, and parsley; stir to incorporate. Refrigerate until cool, about 1 hour. Taste and adjust salt, if necessary.

This is a variation of one of my favorite salads and is SO incredibly healthy that I get to feel superior when I eat it. ;o) You can use a variety of sprouts; my favorites are mung beans and lentils. The spiciness can be adjusted by altering the chili/jalapeno amount. Some versions of this salad call for cooking the sprouts in a little water for 2 minutes, but I always use them raw - love the crunch! Time doesn't include sprouting your beans/lentils.

3 cups fresh mung bean sprouts
1 pinch turmeric
1 green chili peppers or 1/2 jalapeno, finely minced
1 medium onion, finely chopped
1/2 minced tomatoes, seeds and juice removed
2 tablespoons fresh lemon juice
1/2 teaspoon sugar (optional)
1/2 teaspoon salt
1 large pinch fresh ground pepper
1 -2 tablespoon chopped cilantro

Steps:

  • Mix the chili, onion, tomato, lemon juice, sugar (if using), salt and pepper together in a large bowl.
  • Add the sprouts to the chili mixture, gently combine, then fold in the cilantro.
  • Cover the bowl with plastic wrap and refrigerate until required. Serve chilled.

1/2 teaspoon salt
2 tablespoons white distilled vinegar
2 tablespoons sesame oil
1 tablespoon sugar
salt and pepper
1 tablespoon toasted sesame seeds

Steps:

  • In a 5- to 6-quart pan over high heat, bring 2 quarts water to a boil.
  • Add 1 pound rinsed mung bean sprouts and 1/2 teaspoon salt.
  • Cook until sprouts begin to wilt but still retain a slight crunch, 4 to 5 minutes. Drain well and pour into a bowl.
  • Add 2 tablespoons white distilled vinegar, 2 tablespoons Asian sesame oil, 1 tablespoon sugar, and salt and pepper to taste.

2 eggs
3/4 cup milk
3/4 cup water
1 tablespoon canola oil
1 cup all-purpose flour
1/2 tablespoon black sesame seeds
2 tablespoons chives, chopped finely
1 tablespoon toasted orange rind
Pinch of salt
1/2 tablespoon canola oil
1/2 teaspoon sesame oil
1 head of broccoli
1 1/2 cups bean sprouts
2 oranges, sectioned
1/4 cup chopped cashews
1 carrot, finely julienned
1 tablespoon hoisin sauce
2 bunches watercress, stems removed
1 cup mung bean sprouts
1/2 cup garlic sprouts (optional)
Juice of 1/2 lemon
1/2 tablespoon canola oil
Salt and freshly cracked pepper, to taste

Steps:

  • Beat the eggs and add the milk, water and oil. Whisk in flour and strain through a fine mesh sieve. Add remaining ingredients and refrigerate for at least 1/2 hour.
  • Separate the broccoli into florets. Heat both oils together over a high heat and char the broccoli for approximately 4 to 5 minutes. Add remaining ingredients, ensuring that the hoisin sauce is the last, and stir fry for 30 seconds. Remove from heat and set aside.
  • Coat a nonstick 12 inch skillet with vegetable oil and put over a low flame. Ladle 1 ounce of crepe batter into skillet and tilt to spread to the edges of the pan. When surface is dry, remove the crepe and repeat this process to make 8 crepes.
  • Fill the crepes and roll them. Brown the crepes in a nonstick skillet, on all sides, adding a few drops of canola oil as necessary.
  • Toss salad ingredients together. Arrange 2 crepes on each plate and top with salad.

1 tablespoon finely chopped cilantro
1 clove pickled garlic, minced
1 chile, thinly sliced
1/3 cup white vinegar
1/4 cup sugar
Salt
8 ounces mung bean (cellophane) noodles, soaked in hot water, drained
1/2 pound prawns, boiled and thinly sliced
3 green onions, thinly sliced
2 stalks celery, thinly sliced, plus light green leaves roughly chopped
1 tomato, cored, seeded and cut into strips
1/4 cup dried shrimp, crisp fried and cooled
Green lettuce, leaves washed
Cilantro leaves

Steps:

  • Place the cilantro, garlic and chile in a mortar and grind to a paste, or use a blender. Transfer this mixture to a saucepan, and add the vinegar, sugar and salt. Heat to a boil, remove from the heat and cool. Set aside.
  • Cut the soaked noodles into 3-inch lengths. Mix the noodles, prawns, onions and celery together in a bowl. Pour the dressing over the top and toss gently to coat. Add the tomato, and shrimps and gently toss again.
  • Serve on lettuce leaves with cilantro leaves garnishing the top.

1 cup dry mung beans
1 bunch scallion, trimmed and sliced thinly
1/2 bunch of fresh mint, washed and chopped finely (about 1/2 cup)
1/2 cup extra virgin olive oil
3 tablespoons red wine vinegar
1/2 teaspoon salt
2 eggs, hard boiled for garnish
16 black olives, pitted for garnish

Steps:

  • Place the dried mung beans in a large bowl of water and let soak overnight. Drain.
  • Bring a large pot of water to a boil. Add mung beans and boil for 10 minutes.
  • Drain the mung beans and repeat the process with a fresh pot of boiling water, this time for 7 minutes.
  • Drain mung beans and rinse under cold water. Drain well and place in a large bowl.
  • Add scallions, mint, olive oil, vinegar and salt and toss to combine.
  • Divide among serving dishes, garnish with hard boiled eggs, black olives and fresh mint leaves.
