Our simple Scotch pancakes make a quick and easy breakfast that the whole family will love. Serve with butter and maple syrup for the perfect brunch treat

Number Of Ingredients 8

200g plain flour
1 tbsp baking powder
pinch of salt
1 tbsp caster sugar
1 tsp ground cinnamon
1 large egg
300ml milk
vegetable oil, to fry

Steps:

  • Add the dry ingredients to a mixing bowl. Beat the egg and milk into the mixture with a handheld or electric whisk. Heat a non-stick frying pan over a medium heat and add some oil.
  • Spoon in a small ladleful of batter to make a pancake about 10cm across. Fry for about 1 min until the edges of the pancake are firm and bubbles have started to appear on the surface. Turn over and fry for another 30 secs till golden on both sides. Serve with your favourite toppings.

These old fashioned Drop Scones, are also called Dropped Scones, Griddle Cakes or Scotch Pancakes. They are easy to make and make a lovely after-school snack, breakfast dish, tea time treat or a dessert dish. The original recipe comes from an old Be-Ro cookbook, that I have shared before here: BE-RO DROPPED SCONES (GRIDDLE CAKES) where you can read all about baking in the kitchen with my mum's vintage Be-Ro cookbook.

Number Of Ingredients 6

4 ozs (115g) Be-Ro SR Flour
1/4 teaspoon salt
1/2 oz (15g) margarine (or butter)
2 ozs (50g) sugar
1 egg (beaten with 3 tablespoons milk)
6 drops lemon essence (or almond or vanilla essence)

Steps:

  • 1. Mix the flour and salt together, then rub in the margarine or butter; add the sugar, and the beaten egg and milk to make a thick batter. Add essence or extract if using. 2. Cook 2 or 3 at a time by dropping spoonfuls of the mixture on a moderately hot, well-greased griddle, or a heavy-based frying pan. 3. Cook until the underside is golden brown and the top is covered with bubbles, about 3 minutes. 4. Turn and brown on the other side. Serve buttered, hot or cold with honey, jam or maple syrup.

3 eggs
3 tablespoons sugar
1 pinch salt

1 1/2-2 cups milk (to mix to a smooth consistency)

Steps:

  • Mix dry ingredients.
  • Add beaten eggs and butter or oil.
  • Add the milk.
  • Put on spoonfuls onto greased hot griddle or frying pan.
  • Turn when'bubbles' appear.
  • Remove from pan and place on wire racks.

1 1/3 cups flour (white or whole wheat)
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 egg
1 1/4 cups milk
3 tablespoons melted butter (I prefer the melted butter) or 3 tablespoons oil (I prefer the melted butter)
1/4 teaspoon vanilla

Steps:

  • Stir flour, baking powder, salt and sugar together.
  • Beat egg, thoroughly; add milk.
  • Make a well in the center of dry ingredients and slowly add egg/milk mixture. Add melted butter and vanilla, stir just until mixed and lumpy,
  • Drop by 1/4 cupful onto hot griddle. So good!

½ teaspoon baking soda
½ cup milk
2 eggs, beaten

Steps:

  • Mix together flour, sugar, cream of tartar, and baking soda in a medium bowl. Add milk and eggs; stir until batter is the consistency of thick cream.
