½ large watermelon, diced
1 cucumber, diced
1 red onion, chopped
salt, to taste
feta cheese, to taste
⅓ cup balsamic vinegar

Steps:

  • Cut a large watermelon in half lengthwise.
  • Dice half of the watermelon and save the rind for later.
  • Place watermelon, cucumber, red onion, salt, and balsamic vinegar into large bowl and mix together.
  • Pour salad into hollowed out watermelon rind (optional).
  • Enjoy!

2 tablespoons white wine vinegar
1 lime, zested and juiced
1/4 cup extra-virgin olive oil
1 red onion, thinly sliced
4 cups seeded watermelon chunks
1 cup crumbled feta cheese
1/4 cup mint chiffonade
2 cups baby arugula

Steps:

  • Add the white wine vinegar, lime zest and juice to a small bowl. Whisk in the olive oil and season with salt and pepper. Add the thinly sliced red onion and let marinate for 5 to 10 minutes as you prepare the rest of the salad.
  • Add the watermelon, feta, mint, and arugula to a large bowl. Toss with the vinaigrette and serve immediately after dressing.

Refreshing, sweet and spicy, this salad is the edible equivalent of a crisp beer on a hot summer's day. It pushes the watermelon-feta-mint combination to new heights with a Mexican-inspired flavor profile of lime, jalapeño and cilantro. It's also easy to prepare, requiring little more than a knife, a bowl and a whisk. Enjoy it as soon as it's assembled, as the salty dressing draws the juice out of the fruit fairly quickly and the salad can lose its fresh crunch. 2 tablespoons apple cider vinegar
1 teaspoon fresh lime zest, plus 2 tablespoons juice
1 tablespoon honey
1 jalapeño, thinly sliced
Kosher salt and black pepper
1/4 cup finely chopped red onion
1 1/4 pounds fresh watermelon, chilled
1 1/4 pounds fresh pineapple, chilled
4 ounces feta, crumbled (about 2/3 cup)
1 packed cup small cilantro sprigs, or 1/3 packed cup torn fresh mint

Steps:

  • In a large bowl, stir together oil, vinegar, lime zest and juice, honey and jalapeño. Season generously with salt and pepper. Add the red onion and toss to coat. Let marinate, 10 minutes.
  • While the onions marinate, chop the watermelon and the pineapple into 1-inch cubes, discarding any seeds. Add watermelon and pineapple to the vinaigrette and toss to coat; season to taste. Refrigerate until serving.
  • When ready to serve, add feta and herbs to salad and toss to coat. Sprinkle with Tajin, if using, and serve immediately.

1 small red onion, halved and sliced into thin half-moons
2 tablespoons lime juice, or more to taste
2 tablespoons extra-virgin olive oil
1 seedless watermelon, cut into cubes
3 baby cucumbers, seeded and cut into cubes
1 cup crumbled feta cheese
½ cup mint leaves, sliced thinly

Steps:

  • Mix red onion with lime juice in a bowl; set side to marinate at least 10 minutes. Stir olive oil into mixture.
  • Toss watermelon, baby cucumbers, and feta cheese together in a large bowl. Pour the red onion mixture over the watermelon mixture; toss to coat. Sprinkle mint over the salad; toss.

This is a recipe my mum used to make in summer. Very refreshing and nice. It would probably work with a balsamic vinaigrette.

parsley (chopped) or mint (chopped)

Steps:

  • Scoop out a whole watermelon using a small curler (so that the flesh is in balls).
  • Dice two or three white onions and fresh mint- to taste (or parsley in a pinch).
  • Mix through and enjoy.
