TOASTED MUESLI WITH ALMONDS, COCONUT AND DARK CHOCOLATE



Toasted Muesli with Almonds, Coconut and Dark Chocolate image

Simple and delicious toasted muesli with almonds, coconut and dark chocolate. This muesli is a healthy, homemade breakfast. Feel free to change up the mix-ins; just replace the almonds, coconut and chocolate with about 3 cups nuts and/or dried fruit (add the dried fruit after the muesil has cooled, like you do with the chocolate in the recipe below). Recipe yields approximately 7 cups muesli.

4 cups old-fashioned oats
1 1/2 cups sliced almonds
1 1/2 cups large, unsweetened coconut flakes
Scant 1 teaspoon salt
1/2 teaspoon cinnamon
3 tablespoons maple syrup
2 tablespoons melted coconut oil
2 teaspoons vanilla extract
1/2 cup mini dark chocolate chips
Milk of choice (I like almond milk) or plain yogurt
Sliced bananas, berries or fruit of choice

Steps:

  • Preheat oven to 350 degrees Fahrenheit. For easy cleanup, line a large, rimmed baking sheet with parchment paper (I was out, so I did not and it was fine).
  • In a large mixing bowl, combine the oats, almonds, coconut, salt and cinnamon. Mix well. Pour in the maple syrup, coconut oil and vanilla extract and mix well. Do NOT add the chocolate chips; we're saving those for later.
  • Pour the mixture onto your baking sheet and bake until the oats and coconut flakes are lightly golden and fragrant, tossing halfway, about 15 minutes.
  • Let the muesli cool completely before mixing in the chocolate chips (if you add them too soon, the chips will melt and you'll have a delicious mess of chocolatey muesli). Serve individual portions in bowls with almond milk or yogurt. I like to let my muesli rest for a few minutes so the oats soften up a bit. Enjoy!
  • Store cooled muesli in a freezer-safe bag with the air squeezed out. It keeps best in the freezer (no defrosting time required).

Toasting the oats and almonds before soaking them gives this muesli a nuttier flavor.

3/4 cup old-fashioned rolled oats
1/4 cup sliced almonds
1/2 cup plain low-fat (1 percent) Greek yogurt
1/2 cup low-fat (1 percent) milk
1/2 diced apple
2 to 4 tablespoons honey

Steps:

  • Preheat oven to 350 degrees. Place oats and almonds on a rimmed baking sheet. Bake until almonds are golden brown, 7 to 8 minutes; let cool to room temperature. In a small bowl, stir together 3/4 cup of toasted oat mixture, yogurt, and milk. Cover and refrigerate until oats are soft, 1 hour or up to overnight.
  • Spoon muesli into two bowls. Top with apple and remaining toasted oat mixture; drizzle with honey.

1/4 cup sliced almonds
1/2 cup plain Greek-style yogurt (2 percent)
1/4 cup milk
1/2 apple, diced
2 to 4 tablespoons honey

Steps:

  • Preheat oven to 350°F. Spread oats and almonds evenly on a rimmed baking sheet. Bake until almonds are golden brown, stirring occasionally, 7 to 8 minutes. Transfer to a plate, and let cool completely. (The cereal can be stored for up to 1 week in an airtight container.)
  • In a small bowl, stir together 3/4 cup toasted oat mixture, the yogurt, and milk. Cover and refrigerate until oats are soft, about 1 hour, or up to overnight.
  • To serve, spoon muesli into two bowls. Dividing evenly, top with apple and remaining toasted oat mixture; drizzle with honey.

85g porridge oats
15g flaked almonds
15g walnuts ,chopped
15g pumpkin seeds
1 tsp ground cinnamon
80g raisins
15g high fibre puffed wheat (we used Good Grain)
4 apples , no need to peel, grated
fortified oat milk , to serve

Steps:

  • Put the porridge oats in a saucepan and heat gently, stirring frequently until they're just starting to toast. Turn off the heat, then add all of the nuts, pumpkin seeds, and cinnamon, then stir everything together well.
  • Tip into a large bowl, stir to help it cool, then add the raisins and puffed wheat and toss together until well mixed. Tip half into a jar or airtight container and save for another day - it will keep at room temperature. Serve the rest in two bowls, grate over 2 apples and pour over some cold cold milk (you can also use regular or preferred non-dairy milk) at the table. Save the other apples for the remaining muesli.
