BAKED MüCVER (COURGETTE & FETA BAKE)

Turn Med-inspired courgette fritters into a large bake - it's easier to cook, more substantial and can be served as lunch with a side salad and garlic yogurt

6 courgettes (about 325g)
2 spring onions, finely sliced
½ small bunch of parsley, finely chopped
½ small bunch of mint, finely chopped
½ small bunch of dill, finely chopped, plus extra to serve
4 eggs
75g grated halloumi
100g crumbled feta
2 garlic cloves, grated
4 tbsp olive oil, plus extra for the tin
80g plain flour
1 tsp baking powder
1 tbsp toasted sesame seeds, plus extra to serve
1 tbsp nigella seeds, plus extra to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Coarsely grate the courgettes into a clean tea towel, wrap and squeeze out all of the excess liquid. Tip into a colander then set aside to drain completely. Meanwhile, tip all of the remaining ingredients into a large bowl. Add the drained, grated courgettes, season and mix.
  • Line a roughly 25-26cm round ovenproof dish or cake tin with baking parchment and drizzle with the extra olive oil to cover the surface. Heat the dish in the oven for 5 mins.
  • Carefully remove the dish from the oven and pour the courgette mixture over the hot oil (this will ensure the mixture browns on the bottom). Sprinkle with the extra sesame and nigella seeds and bake for 35 mins until golden brown on top. Leave to rest for at least 20 mins before serving scattered with more dill.

4 medium zucchini (grated)
3 eggs
1/3 cup flour
7 -8 fresh onions
3 tablespoons dill weed
3 tablespoons fresh spearmint
3 tablespoons fresh parsley
1/2 teaspoon salt
1/2 teaspoon black pepper (powdered)
1/2 teaspoon baking powder
4 tablespoons olive oil

Steps:

  • squeeze the juice of grated zucchini.
  • mince dill, onion, spearmint and parsley.
  • mix with grated zucchini
  • add eggs flour, salt, pepper and baking powder
  • mix all to form a batter
  • pour tablespoonful of batter into hot olive oil in the pan.
  • Fry in hot oil for 3 minutes each side.
  • serve hot with turkish yogurt with garlic.

I suggest placing the cooked fritters in the oven at 200ºF/100ºC to keep them warm while cooking the second batch. If you have a lot of zucchini, please double the ingredients. They can be easily heated in an oven toaster or oven. If you don't want to bother making the yogurt sauce, I think you can eat fritters plain or with gluten-free ketchup. 1 cup plain yogurt (regular or Greek cowàs milk yogurt or non-dairy regular or Greek yogurt)
1/4 cup cucumber, finely diced
2 tablespoons fresh dill, chopped
1 tablespoon lime juice (from a 1/2 lime)
1 garlic clove, grated (optional)
salt
pepper
2 1/2 cups zucchini
4 tablespoons green onions, chopped
2 tablespoons fresh dill, chopped
2 eggs
4 tablespoons gluten-free flour or 4 tablespoons rice flour
1/2 teaspoon salt
3 ounces feta cheese, crumbled (I used goat milk feta cheese.)
oil (for cooking)

Steps:

  • Shred zucchini and set aside.
  • In a small bowl, mix yogurt, cucumber, dill, lime juice, garlic (if used), salt and pepper to make a yogurt sauce. Set aside.
  • Squeeze water out of the shredded zucchini.
  • In a bowl, mix zucchini, green onions, dill, eggs, flour and salt. Fold in cheese.
  • Heat a frying pan, spray oil and pour the zucchini mixture (1/6 of the mixture for each fritter).
  • Cook each side about 3 minutes or until nicely browned. You need to cook all the fritters in two batches if you don't have a large griddle.
  • Infuse love and serve with the yogurt sauce.

  • Place grated zucchini in colander, sprinkle w/ salt and let drain for 15 minutes Squeeze out excess water and place in large bowl with SCALLIONS, DILL, PARSLEY, EGGS, PAPRIKA. Mix well Season with salt\pepper Stir in cheese and flour a little at a time, incorporate well Heat oil in skillet, then lower heat to medium Drop a tablespoon of batter to fry. do not crowd.
