CAROLINA MUD PIE
Steps:
- For the crust: Add the chocolate sandwich cookies to a food processor and pulse until finely ground, then add the salt and pulse again to combine. Drizzle the melted butter into the food processor while running until the mixture resembles wet sand. Press the mixture evenly and firmly into the bottom and up the sides of a 9-inch pie plate. Place in the freezer for 30 minutes to 1 hour.
- For the pie: Stir together the chocolate with the condensed milk and vegetable oil in a small saucepan over medium-low heat and cook, stirring constantly, until smooth, melted and combined. Pour the chocolate mixture into the bottom of the chilled pie crust, using an offset spatula to spread into an even layer. Sprinkle the pecans over the chocolate layer and set aside.
- In a medium bowl, whisk together the pudding mix with the cold milk until very thick. Fold 1/2 cup whipped topping into the pudding, then spread evenly over the chocolate layer. Top with the remaining whipped topping. Refrigerate until set, 4 hours or up to overnight.
- For the garnish: Add the heavy cream and chocolate chips to a small bowl. Microwave for 30 seconds, then stir and microwave again for 10 seconds more. Repeat in 10-second increments until the chocolate is smooth. Sprinkle the pie with the crushed cookies and chopped pecans, then drizzle with the chocolate before serving.

Steps:
- 1. Put all ingredients (for pie filling) in a saucepan and cook until thickened and bubbly. NOTE: I mix beaten egg yolks and milk together in a saucepan then add dry ingredients and butter; whisk until bubbly and thickened.
- 2. Pour into cooled pre-baked pie shell.
- 3. Make the meringue by beating egg whites until stiff. Add sugar one tablespoon at a time.
- 4. Add cream of tartar or baking powder (and vanilla if desired.)
- 5. Beat until stiff.
- 6. Put meringue on top of the pie.
- 7. Bake at 400 degrees 5-8 minutes or until lightly brown.
- 8. Cool on wire rack.
MRS. FAYE'S CHOCOLATE PIE
This came from my fiance's mother. It was one of her signature recipes that was always at family gatherings. I am not a pie maker but had to try and make it for him at Thanksgiving this year. I really stressed over this but it was so easy to make and the look on his face when he tasted it was worth every bit of worry I had when making it. He said he almost cried. She used home made crust but I cheated and am so glad I went for the refrigerated crust as it was SUCH a big difference from the frozen crust. This is definitely a new tradition for our holidays.

Steps:
- Combine sugar, flour, salt and cocoa with milk.
- Cook over medium low heat until thickened.
- Beat egg yolks and add extremely slow to cocoa mixture, Stirring quickly while adding so the yolks don't cook separately.
- Continue to cook over low medium low heat to thicken a bit more. (About 15 to 20 minutes).
- Remove from heat and add vanilla.
- Drop in butter, but do so in dots or make sure butter is softened.
- Stir well.
- Pour into baked and cooled pie crust.
- Whip egg whites with cream of tartar. Add sugar a little at a time and whip until stiff peaks form.
- Spread on pie, making sure to seal the edges of the meringue to the pie crust.
- Bake at 350 for about 15 minutes, until meringue is lightly browned.

MRS. DUNLAP'S CHOCOLATE PIE
Steps:
- Scald 2 cups milk with chocolate chips. Stir unti smooth. Sift flour, cornstarch, 1 cup sugar and salt. Mix with remaining 1/2 cup milk. Add to chocolate mixture, stirring constantly until thickened (about 15-20 minutes). Cook 10 minutes longer. Remove from fire, gradually add some of the chocolate mixture to beaten egg yoks and return to pan. Cook 2 minutes longer. Remove from fire, add butter and vanilla. Pour into baked pie shell. Cool. Chill. Serve with Cool Whip.
