- Preheat oven to 350°. Cook spaghetti according to package directions. , Meanwhile, in a large bowl, beat egg, milk and salt. Drain spaghetti; add to egg mixture and toss to coat. Transfer to a greased 13x9-in. baking dish., In a large skillet, cook beef, sausage, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and tomato sauce. Spoon over the spaghetti mixture. , Bake, uncovered, 20 minutes. Sprinkle with the cheese. Bake 10 minutes longer or until cheese is melted. Let stand 10 minutes before cutting. Freeze option: Cool spaghetti completely before tossing with egg mixture. Transfer to baking dish; cover and refrigerate. Meanwhile, prepare meat sauce and cool completely before spooning over spaghetti mixture. Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large rimmed baking sheet with olive oil.
- Combine ground beef, bread crumbs, egg, mozzarella cheese, and garlic in a medium bowl. Use a 1/4 cup measure or ice cream scoop to portion into 12 to 13 meatballs. Place on prepared baking sheet.
- Baked until browned and cooked through, about 15 minutes.

- Preheat oven to 400 degrees. Set a large pot of salted water to boil. In a food processor, pulse tomatoes until coarsely chopped. In a large skillet, heat oil over medium-high. - Cook the asparagus in a large pot of boiling salted water until crisp tender, about 2 to 3 minutes. With a spider or slotted spoon, remove asparagus from boiling water to a bowl of ice water to cool and stop the cooking. When cool, strain, cut asparagus into 1-inch pieces, and set aside.

- In a medium bowl, soak the bread crumbs in the milk.
- In a large, wide saucepan, heat the olive oil over medium heat. Add the smashed garlic and cook until golden, about 2 minutes. Add the tomatoes, season to taste with salt and let the sauce simmer over low heat, stirring occasionally.
- Add the beef, chopped garlic, parsley, Parmigiano-Reggiano, egg and 1 teaspoon of salt to the soaked bread crumbs and stir with a fork until combined. Place about 2 tablespoons of the mixture in your hand and press a mozzarella cube into the center. Shape the meat around the cheese, forming a ball. Repeat with the remaining meat and mozzarella.
- Stir the sauce and raise the heat to medium- low. Carefully place the meatballs in the sauce, submerging them completely. Bring the sauce to a simmer and cook without stirring for 20 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti, cook until al dente, about 8 minutes, and drain. Toss the spaghetti with the tomato sauce and meatballs, sprinkle with Parmigiano-Reggiano and serve.
CORN SPAGHETTI WITH FRESH GRILLED CORN AND SMOKED MOZZARELLA

- 1. Heat grill to medium-high heat. Coat corn and chiles with cooking spray. Grill corn and chiles 10 to 15 min, or until tender and slightly charred. Transfer chiles to med bowl, and cover with plastic wrap until cool enough to handle. Cut corn kernels from cob and transfer to large bowl. Peel, seed, and coarsely chop chiles; add to corn. 2. - Heat olive oil in a skillet and add the onion, pepper and garlic.

STUFFED SPAGHETTI FRITTATA WITH TOMATO & MOZZARELLA
Steps:
- Cook, drain and toss the spaghetti with butter, cheese, and parsley. Make sure the pasta is cooked al dente--more underdone--as it will continue to cook in later stages. Put the olive oil and onion into a small saucepan and turn the heat to medium. Cook and stir the onion until it becomes colored a golden brown, then add the cut-up drained tomatoes and salt. Cook for about 20 minutes until the oil floats free of the tomato. Take off the heat. When the tomatoes have cooled, mix in the diced mozzarella. Tip the pan and spoon off most of the oil. Add the tossed sauced spaghetti, salt and a few grindings of pepper to the beaten egg, mixing thoroughly to distribute the egg evenly over the pasta. Put the 1 tablespoon butter in a skillet, turn the heat on to medium and when the butter foam begins to subside, but before it darkens, but in just half the pasta and egg mixture, spreading it uniformly over the bottom of the pan. Over it, pour the tomato and mozzarella from the saucepan, spreading it evenly, and stopping a little short of the frittata's edge. Pour in the remaining half of the spaghetti and egg mixture and cover the frittata in the pan, spreading it out to the edges. Cook the frittata on top of the stove for 3 to 4 minutes without touching the pan. Then tilt the plan slightly bringing its edge closer to the flame of the burner. Keep the pan in this position for about 1 minute, then rotate it a shade less than a full quarter turn, always keeping it tilted so that its edge is close to the flame. Repeat the procedure until you have come full circle. Take a look at the underside of the frittata, lifting the edge gently with a spatula, to make sure it has formed a fine, golden crust all around; if it has not, cook a little longer where needed. Run the pan under the broiler until the top has formed a lightly colored crust. When ready, loosen the frittata with a spatula, slide it onto a platter, and cut it into serving wedges, like a pie.

MOZZARELLA SPAGHETTI
I got this recipe from a "Canadian Dairy Farmers" card from the 1990's. My hubby loves this as he is a cheese fanatic. I like it because the spaghetti cooks right in the pot with the sauce so I have one less pot to wash.

- ***VARIATION***Colby Macaroni Replace the spaghetti with 1-1/2 cups (375 ml) macaroni.
- Replace the Italian seasoning with 1-1/4 tsp (7 ml) Worcestershire sauce.
- Replace the Mozzarella with an equal amount of Colby cheese.
- In a large pan, brown the beef, mushrooms, onion and pepper.
- Cook over medium heat until the veggies are tender.
- Drain any fat.

MOZZARELLA SPAGHETTI WITH PEAS & BACON
Steps:
- Place foil on a baking sheet. Lay the bacon out on the foil and bake in 350 degree oven until crisp. Remove and chop into pieces.
- Cook the spaghetti in salted boiling water until el dente. Add the peas in about the last 5 minutes and drain.
- In a sauce pan add the butter and let melt. Whisk in the flour and cook until browned about 5 minutes. Slowly whisk in the heavy cream. Stir in the lemon zest . Stir in the Mozzarella cheese.
- Once the cheese melts stir bacon. Taste and season with salt and pepper. Add the nutmeg. Stir in the spaghetti and peas and serve immediately.
MOZZARELLA SPAGHETTI SQUASH CASSEROLE
This dish is smothered in mozzarella, though not included in picture. I have served this as a main dish, as well, by adding lamb chunks and wine. Read recipe and enjoy!

- Take squash and cut in half. Remove seeds.
- Rub squash with oil and sprinkle on season salt.
- Place in oven at 400F until tender.
- Allow to cool until able to be handled, with shred inside with a fork. Place all innards in the greased, square casserole dish.
- Add the butter and the seasoning. (I took a picture at this point and the finished picture did not save. I wasn't aware of this until it was eaten.)
- The sprinkle on cheese very thickly. Place in oven at 350F on the cheese is bubbling and achieving a golden brown.
