1 box fat-free sugar-free instant chocolate pudding mix
2 cups nonfat milk or 2 cups buttermilk
2 tablespoons lemon juice or 2 tablespoons vinegar (omit if using buttermilk)
1 teaspoon coconut extract
1 teaspoon almond extract (if you feel like a nut) (optional)
1 envelope knox gelatin
1/4 cup cold water
1 (8 ounce) container fat-free cool whip

Steps:

  • Prepare small box instant pudding, using buttermilk instead of milk.
  • Mix in extract (s); set aside.
  • Prepare 1 envelope Knox gelatin with 1/4 cup cold water.
  • Use glass measuring cup to mix gelatin.
  • Set mixture in a pot or pan of hot water, while still in the cup, to help dissolve gelatin.
  • Gelatin is dissolved when mixture is clear.
  • Wire whisk gelatin into pudding and fold in the 8-oz cool whip.
  • Pour into prepared crust; chill.

1 baked pastry shells
1 cup whipping cream
6 ounces semisweet chocolate pieces (1 cup)
1/3 cup butter
1/3 cup sugar
2 egg yolks, lightly beaten
3 tablespoons Creme de Cacao or 3 tablespoons whipping cream
1 (12 1/4 ounce) jar caramel ice cream topping (1 cup)
3/4 cup coarsely chopped toasted pecans or 3/4 cup almonds
1 cup whipped cream
chocolate curls (optional)

Steps:

  • Prepare Baked Pastry Shell; set aside.
  • In a heavy medium saucepan combine the 1 cup whipping cream, the chocolate pieces, butter, and sugar.
  • Cook over low heat, stirring constantly, until chocolate is melted (about 10 minutes).
  • Remove from heat.
  • Gradually stir half of the hot mixture into beaten egg yolks.
  • Return egg mixture to chocolate mixture in saucepan.
  • Cook over medium-low heat, stirring constantly, until mixture is slightly thickened and begins to bubble (about 5 minutes).
  • Remove from heat.
  • (Mixture may appear to separate.) Stir in the 3 tablespoons creme de cacao or whipping cream.
  • Place the saucepan in a bowl of ice water, stirring occasionally, until the mixture stiffens and becomes hard to stir (about 20 minutes).
  • Transfer the chocolate mixture to a medium mixing bowl.
  • Beat cooled chocolate mixture with an electric mixer on medium to high speed for 2 to 3 minutes or until light and fluffy.
  • Spread caramel ice cream topping in bottom of Baked Pastry Shell.
  • Sprinkle pecans evenly over caramel.
  • Carefully spread filling into pie shell.
  • Cover and refrigerate pie for 5 to 24 hours.
  • To serve, top with whipped cream.
  • If you like, garnish with chocolate curls.

Steps:

  • In a heavy 2-quart saucepan, combine the 1 cup whipping cream, chocolate pieces, butter and sugar.

  • About 10 minutes.
  • Remove pan from heat.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup cream of coconut
1 pkg. (3.9 oz.) JELL-O Cheesecake Flavor Instant Pudding
14 oz. frozen sweetened flaked coconut, divide in 1/2 and toast 1/2
2 pkg. (8 oz. each) COOL WHIP Whipped Topping, divided
1 chocolate cookie crumb crust
hard-shell chocolate ice cream topping
6 mini chocolate-coated coconut and almond candy bars

Steps:

  • Blend together softened PHILADELPHIA Cream Cheese and cream of coconut until smooth and creamy. Add dry pudding mix and beat until well blended.
  • Add 1/2 thawed, but cold, coconut. Mix well. Fold in 1 tub COOL WHIP.
  • Pour 1/2 of pudding mixture into the chocolate cookie crumb crust. Drizzle with hard-shell chocolate ice cream topping, if desired. Pour second half of pudding mixture over pie.
  • Mix 3/4 cup of toasted coconut with remaining tub of COOL WHIP and spread or pipe on pie.
  • Finish pie by garnishing with mini chocolate coated coconut and almond candy bars. Sprinkle remaining toasted coconut on pie.
  • Place in freezer 30 minutes to set or refrigerate for 45 minutes. Slice and enjoy!

My family loves this pie! One never lasts for more than a day. It is great on any occasion or just because you want something cold and chocolate! My mom got this recipe from an old Betty Crocker or Pillsbury cookbook.

1 chocolate graham wafer pie crust
1/2 cup butter, melted
3/4 cup sugar
2 unsweetened chocolate squares, melted
2 tablespoons peppermint schnapps or 1/2 teaspoon peppermint extract
2 eggs
Cool Whip or whipped cream
1 chocolate bar

Steps:

  • Place the melted butter in an automatic mixer. I use a Kitchenaid.
  • Add the sugar and stir on low.
  • Slowly add the chocolate while mixing until it is well blended.
  • Pour in your peppermint.
  • Add one of the eggs, and change the mixing speed to hi. I go to the highest level on the Kitchenaid. Beat the mixture for 5 minutes.
  • Add the second egg. You may want to slow down the mixer to add the egg. Return to hi speed and mix for 5 minutes. Your pie should be a nice light brown color. If not, mix it longer and make sure you are on a really hi speed.
  • Turn off the mixer. Pour the mix into the chocolate crust. Place a lid or plastic wrap over the pie.
  • Refrigerate the pie for at least 2 hours.
  • Take the lid off the pie. Spread cool whip or whipped cream on the pie. Make chocolate curls with the chocolate bar and a potato peeler. Sprinkle the curls over the cream.

1 1/2 cups all-purpose flour
2 teaspoons granulated sugar
3/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, cold and cut into small cubes
1/3 cup cold buttermilk
2/3 cup granulated sugar
2 large eggs, at room temperature
2.5 ounces unsweetened chocolate, melted and cooled
1 teaspoon pure vanilla extract
Pinch of kosher salt
1/3 cup unsalted butter, softened to room temperature
1 cup heavy cream + 1 teaspoon powdered sugar whipped to medium stiff peaks (or sub 8 ounces thawed Cool Whip)
1 cup heavy cream
2 teaspoons powdered sugar
Splash of vanilla extract
Chocolate curls

Steps:

  • First make the pie crust. In a medium bowl, whisk together flour, sugar, and salt. Add cold, cubed butter and, using your fingers, work the butter into the flour mixture. Quickly break the butter down into the flour mixture, some butter pieces will be the size of oat flakes, some will be the size of peas. Create a well in the butter and flour mixture and pour in the cold buttermilk. Use a fork to bring to dough together. Try to moisten all of the flour bits. On a lightly floured work surface, dump out the dough mixture. It will be moist and shaggy. Add a teaspoons more buttermilk if the dough feels dry. Shape into a rough disk and refrigerate for at least an hour.
  • We'll blind bake the crust for this pie. That means we'll cook it completely without filling. Roll the pie crust to a thick 1/4-inch thickness and transfer to 9-inch pie dish. Fold excess dough under and crimp the edges. Dock the bottom and sides of the crust (that means pierce it with the tines of a fork) and refrigerate.
  • Place a rack in the center of the oven and preheat oven to 425 degrees F. Lightly grease a sheet of parchment paper with nonstick spray. Place spray side down into the prepared pie crust. Fill with dried beans or pie weights to the very top of the crust. Bake for 15-17 minutes until the edges of the crust begin to brown. Remove from the oven and carefully lift the parchment and all of the beans out of the pie and into a large bowl. Yea - this is dicey. Return the crust to the oven and bake for another 8-11 minutes until the crust is golden brown and baked through. Remove from the oven and allow to cool completely before filling.
  • To make the filling, in a medium saucepan over low heat whisk together granulated sugar and eggs. Whisk near constantly until the mixture reaches 160 degrees on a candy or fry thermometer. This took me about 10 minutes. Whisk constantly to ensure the eggs don't cook. This will ensure that the raw eggs are safe to eat.
  • Remove from heat and whisk in the melted chocolate and pinch of salt. The mixture will thicken and seize a bit. Just keep whisking until glossy and smooth. Set aside to cool to room temperature.
  • In a medium bowl, use electric hand beaters to beat butter until fluffy. Add the cooled chocolate mixture and beat on medium speed until butter disappears and the mixture is thick and glossy. When mixture is absolutely cooled to room temperature fold in the whipped cream or Cool Whip in three batches being careful not to deflate the cream or whip too much with stirring.
  • Transfer the chocolate whip to the cooled pie crust and smooth the top.
  • To make the topping, whip heavy cream, powdered sugar, and vanilla extract to soft peaks that hold their shape. Spoon over the prepared pie. Top with chocolate shavings. Allow the pie to set in the refrigerator for 2 hours before serving. Pie can be stored in the refrigerator overnight. Store any leftovers in the refrigerator for up to 3 days.

FRENCH SILK CHOCOLATE PIE (OR PARFAIT)

Although eaten refrigerated, not frozen, this rich dessert melts in your mouth like ice cream! One of it's special assets is being able to make it ahead and freeze to have on hand for special occasions. Mother made this often, and it is still my favorite dessert. Cooking time includes chilling time. Variation: For Gluten-intolerant people: Omit pie crust and spoon filling into individual parfait glasses and garnish with whipped cream and chocolate shavings!

1 (9 inch) pie shells, baked (omit for parfait only)
1/2 cup real butter
3/4 cup granulated sugar
1 ounce unsweetened baking chocolate
1 teaspoon vanilla extract
2 whole eggs
1/2 ounce unsweetened baking chocolate

Steps:

  • Bake pie crust according to package directions for a pie that will contain a refrigerated filling. Filling is not cooked.
  • Cool.
  • Melt 1 ounce baking chocolate (See NOTE below).
  • With an electric mixer, cream butter and sugar together for at least 5 minutes until sugar is dissolved.
  • (This step is very important to the final texture of this dessert).
  • Add melted chocolate and vanilla extract and mix well.
  • Wash and dry the two raw eggs. Add two eggs, one at a time, beating 5 minutes after each addition, until mixture is thick and creamy.
  • Pour into baked pie crust.
  • Garnish with shavings from the 1/2 ounce chocolate square.
  • Or melt chocolate and drizzle over the pie.
  • Chill at least 1-2 hours or until well set.
  • Because this is very rich, cut into at least 12 slices.
  • This pie freezes well for up to 3 months.
  • Just thaw several hours in the refrigerator and serve.
  • For real decadence, spread a layer of non-dairy topping over filling before garnishing with chocolate.
  • NOTE: Easy Way to Melt Chocolate: Place chocolate in a small bowl; place bowl on drip coffee maker burner until melted.
  • It is just the right temperature to melt chocolate without scorching it, unless left on burner much too long.
  • Note: Because of the raw eggs. this pie is not recommended for very young children, very elderly people, or people with impaired immune systems.

8 ounces bittersweet chocolate
4 large eggs
1/2 cup sugar
1/2 cup cold unsalted butter, cut into chunks
2 1/2 teaspoons pure vanilla extract
2 1/2 teaspoons Kahlua or 2 1/2 teaspoons Grand Marnier

Steps:

  • Melt chocolate in a double boiler set over simmering water.
  • Set aside to cool to thick but still liquid.
  • Combine eggs and sugar in a double broiler until hot but not scrambled.
  • Remove from heat.
  • With a mixer beat the chocolate into the egg mixture, then beat in the cold butter.
  • Beat for 15 minutes--yes 15 minutes--you wanted silk.

1/4 cup honey (or coconut nectar, like coconut secrets brand)
1 1/3 cups unsweetened flaked coconut
1 teaspoon almond extract (optional, recommended)
2 -4 tablespoons coconut butter (optional)
12 -24 almonds (optional)
coconut chocolate- use instead of the dark chocolate
3/4 cup unsweetened cocoa powder (not dutch)
1/4 cup honey (or coconut nectar)
1 cup coconut oil
1 tablespoon vanilla

Steps:

  • for the coconut part melt the coconut oil with the honey, stirring to combine (add coconut butter/manna now if using).
  • stir in almond extract and shredded coconut.
  • divide into a 12 muffin tin and press 1-2 almonds into each if you want almond joy version.
  • freeze about 15 minutes.
  • for the chocolate part melt coconut oil and honey together, stir in vanilla and cocoa powder with a whisk or beaters
  • top coconut patties with 2 tbs each of the chocolate and freeze 30 minutes.
  • store in the freezer or refrigerator.

This is a great pie to bring to any gathering! We have it at Thanksgiving and Christmas - a favorite for chocolate lovers. Recipe has to be followed exactly, no substitutes, it will not turn out.

1 (9 inch) pie crusts
1/2 cup butter
3/4 cup sugar
2 ounces unsweetened chocolate (bakers)
2 eggs
9 ounces Cool Whip (extra creamy)
sweet chocolate, bar

Steps:

  • Bake pie shell at 425 for 12-15 minutes. Cool completely. Cream butter with sugar, stir in cooled melted unsweetened chocolate. Add one egg, beat at highspeed for 5 minutes. Add the other egg, beat for another 5 minutes. Fold in half the cool whip, pour into pie shell, top with remaining cool whip, shave curls of sweet chocolate on top with a potatoe peeler.
  • Chill for 2 hours before serving.
