MOTHER'S TOMATO RICE PIE
I don't know whose mother made this originally, but my family likes it. We usually substitute brown minute rice for the regular. Every bit of fiber helps! And you could use salsa instead of tomato sauce, if you like a spicier flavor.

Steps:
- Combine beef, pepper, onion, bread crumbs, salt, pepper and 1/2 Celsius.
- tomato sauce. Mix well.
- Pat into bottom and sides of a greased 9" square pan. Combine remaining tomato sauce, rice, water, and 1/2 c cheese. Spoon mixture into meat shell.
- Cover and bake at 350 for 25 minute
- Top with remaining cheese. Bake, uncovered, 10-15 min longer.
ITALIAN RICE PIE
This recipe has a history. When I was young, tradition was that all the foods to be served on Easter Sunday were prepared in advance. On the day before Easter, the food would be layed out on the table so the local parish priest could come and bless the food. This recipe is a tradition on Easter Sunday. It is from Naples, Italy!

- Beat eggs in very large bowl.
- Add sugar and mix well.
- Stir in cheese and vanilla until smooth and creamy.
- Add heavy cream and stir.
- Fold in cooled, cooked rice and then drained pineapple.
- Pour into a buttered 9-1/2 inch X 13-1/2 inch pain.
- Bake@325* oven for 1 hour.
- Check after 1 hour by inserting clean knife into center. Knife should come out clean and top should be golden brown.
- Refrigerate after throughly cooled.

CHEESEBURGER RICE PIE
My family loves this and always asks me to make it. It's unbelievable that this recipe sat untouched in my recipe box for twenty years before I decided to give it a try. My mother used to make it for us and I always remembered liking it. All ingredients are readily available and it's a great way to use leftover rice. Feel free to play around with the spices in both the meat and the rice. I have used seasoning salt and plan to make my next one with pizza spices. Also, if you have no grated cheese, you can use processed cheese slices.

Steps:
- Mix ground beef, bread crumbs, onions, green pepper, seasonings and 3/4 cup tomato sauce.
- Spread in greased pie pan, forming a shell.
- Mix rice, half of the cheese and remaining sauce, as well as any additional spices you may like.
- Sprinkle remaining cheese on meat shell.
- Fill with rice mixture.
- Cover rice only with foil, folding remainder in to form a circle.

CABBAGE-RICE POT PIE WITH BASIL-TOMATO SAUCE

- Heat oven to 400°F. Grease 9-inch deep-dish pie plate with shortening. In 3-quart saucepan, heat 1 1/2 cups water to boiling. Stir in bouillon cube, coleslaw mix and potatoes. Return to boiling. Reduce heat to medium; cover and cook 5 minutes.
- Stir in rice, cream cheese and 2 tablespoons basil. Remove from heat; cover and let stand 5 minutes. Stir cabbage mixture; spoon into pie plate.
