1 1/2 ounces (3 tablespoons) aged rum
1/2 ounce (1 tablespoon) orange liqueur: Curaçao, Cointreau or Grand Marnier
3/4 ounce (1 1/2 tablespoons) lime juice
1 ounce (2 tablespoons) orgeat syrup
1/2 ounce (1 tablespoon) dark rum
For the garnish: Fresh mint, cocktail cherry, pineapple slice, lime wedge

Steps:

  • Place the aged rum, orange liqueur, lime juice, and orgeat syrup in a cocktail shaker. Add ice and shake until cold.
  • Strain the drink into an ice-filled glass. Top with the dark rum. Garnish with fresh mint, a lime wedge, cocktail cherry and pineapple slice.

The Mai Tai originated in California and was introduced to Hawaii in the 1940s, where orange and pineapple juices were added to create the Royal Hawaiian Mai Tai. This is Ree's favorite version of the famous drink.

6 ounces light rum
3 ounces dark rum
2 ounces lime juice
2 ounces orange liqueur
2 ounces almond syrup (like for coffee)
4 ounces orange juice
5 ounces pineapple juice
1/4 cup maraschino cherry juice, plus a few cherries for garnish
4 small wedges fresh pineapple, for garnish
Fresh mint leaves, for garnish

Steps:

  • Combine the rums, lime juice, orange liqueur, almond syrup, orange juice and pineapple juice in a mason jar and secure the lid. Shake well. Fill 4 rocks glasses with ice and pour over the mixture.
  • Add a splash of cherry juice to each glass. Garnish with the cherries, wedges of fresh pineapple and mint leaves.

1 cup dark rum
1 cup 151 proof rum
1 cup orange curacao (orange flavored liqueur)
1 cup almond flavored syrup
1 cup simple syrup
10 limes, juiced
½ gallon fresh orange juice

  • In a large jar or drink cooler, combine the light rum, dark rum, 151 rum, orange liqueur, almond syrup, simple syrup, and lime juice. Stir and top off with orange juice. Do not use grenadine if you want the true Mai Tai! Serve in 8 to 12 ounce glasses with ice.

½ ounce lime juice (fresh squeezed)
½ ounce orange curacao (or Grand Marnier or triple sec or orange liqueur)
½ ounce orgeat syrup
ice
¾ ounce dark rum
Garnishes: maraschino cherry (lime, pineapple, mint)

Steps:

  • Pour the white rum, fresh lime juice, orange curacao and the orgeat syrup into a cocktail shaker filled with ice. Shake vigorously.
  • Pour rum mixture over ice in a glass. Slowly pour the dark rum so it floats on top. (Pour over a spoon to easily layer the dark rum.)
  • Add garnishes of maraschino cherry, limes, pineapple, and mint. (optional)

1/4 cup Triple Sec
1/4 cup fresh orange juice

There are raging debates about the invention of and the proper recipe for this drink among tiki connoisseurs. The more accepted versions are granted to Victor J. Bergeron, the irascible, wooden-legged "Trader Vic," from his eponymous restaurant bar in Oakland, Calif., in the '40s. Contrary to what you might think, the mai tai is actually just a rum sour, employing orgeat alongside Curaçao or triple sec as the sweetener, and using two rums to add complexity. The rest is just lime juice, and that's it. No coconut, no passion fruit, pineapple, mango or orange juice. No umbrellas. It's a relatively simple drink, but as such, each element has to be of the utmost quality; great rums, fresh lime juice and prefab orgeat syrup equal disappointment. But when concocted with homemade orgeat, all the tumblers click. The rums, the lime, the orange aromatics and the heft of the almond all play in stupendous balance.
