Mo's Linguini Alfredo with Oregon Bay Shrimp Recipe - (4.1/5) image

Number Of Ingredients 11

1 pound Linguini Noodles
1 pint Heavy Cream
1-1/2 cups Parmegiano Reggiano
7 tablespoons Butter
1/2 cup Dry White Wine
3 tablespoons Fresh Parsley, chopped
1 tablespoon Minced Garlic
Fresh ground Pepper, to taste
Fresh grated Nutmeg, about 1 teaspoon
2 cups Oregon Bay Shrimp
Salt to taste! The cheese is salty so only use as needed!

Steps:

  • Start your pasta boiling and cook until al dente. Save 2 cups of your pasta water. In a medium sauce pan, pour in the Chardonnay and heat to boiling. Reduce the heat and add the bay shrimp, sauteing until warmed throughout. Set aside but keep it warm. In a large saute pan, melt the butter over medium heat. Add the garlic and saute until you can smell the garlic. Pour in the heavy cream and stir together over medium heat until mixture reduces a little, stirring frequently. Add the cheese and whisk until smooth, about 3-4 minutes. Add the freshly grated nutmeg and the freshly ground pepper, stirring until well mixed. Add the shrimp mixture to the Alfredo pan and stir until well incorporated. Drain the cooked alfredo and pour into the Alfredo sauce, stiring until well blended. If mixture is too thick, add some pasta water, a little at a time until you reach your desired consistancy. Pour into serving bowl(s) and top with fresh chopped parsley and more shaved Parmegiano Reggiano if desired. Enjoy!

Mediterranean Shrimp Recipe with Bell Peppers image

Easy shrimp recipe, coated in Mediterranean spices and skillet-cooked in a light white wine and olive oil sauce with shallots, bell peppers and tomatoes. Ready in 25 minutes or less!

1 1/4 lb large shrimp (or prawns, peeled and deveined (if frozen, be sure to thaw first))
1 tbsp all-purpose flour
1 to 2 tsp smoked Spanish paprika
1/2 tsp each salt and pepper
1/2 tsp ground coriander
1/4 tsp cayenne
1/4 tsp sugar
1 tbsp butter (I prefer to use ghee clarified butter)
3 tbsp Extra virgin olive oil
1/2 red onion, (thinly sliced)
4 garlic cloves, (chopped)
1/2 green bell pepper and 1/2 yellow bell pepper, (cored and sliced)
1 cup canned diced tomato
1/3 cup chicken or vegetable broth
2 tbsp dry white wine
2 tbsp fresh lemon juice
1/3 cup chopped parsley leaves

Steps:

  • Pat the shrimp dry and place it in a large bowl. Add the flour, smoked paprika, salt and pepper, coriander, cayenne, and sugar. Toss until the shrimp is well-coated.
  • In a large cast iron skillet, melt the butter with the olive oil over medium heat. Add the shallots and garlic. Cook for 2-3 minutes, stirring regularly, until fragrant (be sure not to burn the garlic.) Add the bell peppers and cook another 4 minutes or so, tossing occasionally.
  • Now add the shrimp. Cook for 1 to 2 minutes, then add the diced tomatoes, broth, white wine and lemon juice. Cook for a couple more minutes or until the shrimp turns bright orange.
  • Finally, stir in the chopped fresh parsley and serve!

This is from Mo's Restaurant that have many locations along the Oregon Coast. They make the best clam chowder and this is supposed to be their recipe. I have a recipe for a lactose free version as well if you need it.

4 slices bacon
1 onion, Diced
3 (6 ounce) cans clams, with juice
5 medium potatoes, peeled and chopped into bite size pieces
4 teaspoons flour
salt and pepper
1 teaspoon lemon pepper
1 teaspoon dried parsley
4 cups whole milk
1 1/2 cups water

Steps:

  • In a large pot, sauté the bacon slices until cooked through, about 5 minutes. Remove them from the pan.
  • In the bacon grease, sauté the onions with a pinch of salt and cook them for about 5 minutes.
  • Add the potatoes to the onions as well as the flour and stir the flour well. Cook the potatoes for about 10-12 minutes and the potatoes start to soften. Season the potatoes with salt, pepper, lemon pepper, and parsley. You may crumble the cooked bacon and return them back to the pan if desired, but Mo's doesn't keep them in their soup, just as a flavoring. I personally add them as not to waste them!
  • Pour in the milk and the water and clams with juice, and cook to a boil. Turn the stove down to med heat and cover with a lid. Continue to cook for about 15 minutes and the potatoes are tender.
  • Pour the soup into individual bowls and serve with a dollop of butter and a sprinkle of paprika.
