Couscous:
2 cups low-salt chicken broth
2 tablespoons extra-virgin olive oil, divided
1 tablespoon ground ginger
2 garlic cloves, pressed
2 teaspoons salt, divided
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1 10-ounce box plain couscous
1/2 cup raisins
1 cucumber, peeled, seeded, cut into 1/2-inch cubes
1 large red bell pepper, cut into 1/2-inch cubes (about 2 cups)
1 large carrot, peeled, quartered lengthwise, thinly sliced crosswise
1 cup thinly sliced green beans or trimmed sugar snap peas
2 teaspoons finely grated lemon peel
1/4 cup fresh lemon juice
Chicken:
2 1/2 tablespoons extra-virgin olive oil plus additional for drizzling
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon ground black pepper
6 large skinless boneless chicken breast halves, pounded to 1/3-inch thickness
3/4 cup plus 1/3 cup (loosely packed) chopped fresh cilantro
1/2 cup chopped toasted almonds (optional)
1 lemon, cut into 6 wedges

Steps:

  • For couscous:
  • Bring chicken broth, 1 tablespoon oil, ginger, garlic, 1 teaspoon salt, turmeric, cinnamon, and cumin to boil in heavy large saucepan. Stir in couscous and remove from heat. Scatter raisins over, cover, and let stand until couscous softens, about 10 minutes. Fluff couscous with fork, breaking up any lumps with fingertips. Transfer couscous to large bowl. Add cucumber, red bell pepper, carrot, green beans, and lemon peel. Whisk remaining 1 tablespoon oil, 1 teaspoon salt, and lemon juice in small bowl. Add to couscous; toss to coat. Season to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.
  • For chicken:
  • Place 2 1/2 tablespoons oil, lemon juice, 1/2 teaspoon salt, and 1/2 teaspoon pepper in large resealable plastic bag. Add chicken and seal bag, releasing any excess air; turn several times to coat. Let stand at room temperature 30 minutes. Alternatively, chill 1 to 3 hours and bring to room temperature before continuing.
  • Prepare barbecue (high heat). Brush grill rack with oil. Transfer chicken from bag to barbecue with some marinade still clinging and grill until slightly charred and just cooked through, about 4 minutes per side. Transfer chicken to platter and let rest 10 minutes. Stir 3/4 cup chopped cilantro into couscous. Sprinkle almonds over, if desired. Drizzle chicken with oil, sprinkle remaining 1/3 cup chopped cilantro over, and garnish with lemon wedges. Serve with couscous.

Had this last week at CPK and just had to figure out how to make it. I think this is pretty close! It's delicious nevertheless.

1/2 cup butternut squash, diced
1 (8 ounce) can beets, diced
1/4 cup dried cranberries
1 hard-boiled egg, diced
1 avocado, diced
2 carrots, diced
1 red bell pepper, diced
1/4 cup dates or 1/4 cup dried apricot, chopped
1 head romaine lettuce, sliced
1/4 cup girard's champagne dressing
1/4 cup roasted almonds
3 boneless chicken breasts
1 teaspoon ground coriander
1 teaspoon cinnamon
1 teaspoon olive oil

Steps:

  • To make the spiced chicken: combine coriander and cinnamon with olive oil to make a paste. Spread on chicken breasts with a bbq brush or fingers; cook chicken in pan or grill (I used my Foreman grill and it worked well) until fully cooked. Let chicken cool and slice.
  • While chicken is cooking, roast diced squash in a 400 degree oven for about ten minutes (I used my toaster oven).
  • Toss all other ingredients together with the champagne dressing to taste. Top with sliced chicken & almonds.

MOROCCAN-STYLE CHICKEN WITH CARROT & ORANGE SALAD

Boneless chicken thighs, stuffed and dusted with spice, stay succulent when roasted and are much cheaper than breast meat

2 tsp ground cinnamon
1 tsp each cumin and coriander
1 tbsp olive oil
1 onion , thinly sliced
3 tbsp pine nuts
3 tbsp raisins
juice 1 lemon
8 boneless, skinless chicken thighs
400g carrot , coarsely grated
2 oranges
mixed salad leaves
handful chopped coriander

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Mix 1 tsp of the cinnamon with the cumin and coriander in a small bowl. Heat the oil in a frying pan, add the onion, then quickly fry until lightly coloured. Add the pine nuts, then fry until lightly toasted. Stir in ½ the spice mix, the raisins and the juice of ½ the lemon. Heat through, stirring, then remove from the heat.
  • Open out the chicken thighs and spoon a little stuffing onto each. Fold the chicken meat over to enclose the stuffing, then secure each thigh with a couple of cocktail sticks. Place in a non-stick roasting tin with the cocktail sticks underneath, then sprinkle with the remaining lemon juice and spice mix. Bake for 30-35 mins until the chicken is tender and golden.
  • To make the salad, tip the carrot into a bowl. Using a sharp knife, remove the zest and pith from the oranges, then cut into segments between membranes. Do this over the bowl to catch the juice, letting the segments drop in. Sprinkle with the reserved cinnamon and a little black pepper, then mix well.
  • Divide the salad leaves between 4 plates, spoon over the salad, then sprinkle over the coriander leaves. Place the chicken alongside and serve.

Just as a little saffron, garlic and paprika can conjure the flavors of Spain, so too will preserved lemons, cumin, mint and olives evoke Morocco. This salad and the accompanying couscous can be doubled or tripled to anchor a generous buffet. Both can be assembled a couple of hours in advance and set aside on a kitchen counter. Serve them at room temperature.

2 teaspoons ground cumin
1 teaspoon hot Spanish paprika
1 teaspoon salt
6 skinless bone-in chicken thighs
6 tablespoons extra virgin olive oil
1/3 cup dry white wine
1 large red bell pepper, cored, seeded and cut in 2-by-1/2-inch strips
1/2 cup thinly sliced onion
2 small zucchini, ends trimmed, quartered lengthwise and sliced 1/2-inch thick
16 small pitted green olives
1 1/2 teaspoons harissa
1/4 cup lemon juice
1 1/2 teaspoons honey
1/2 preserved lemon, flesh removed and peel minced
3/4 cup instant couscous
1/2 cup fresh mint leaves in chiffonade

Steps:

  • Combine cumin, paprika and 1/2 teaspoon salt in a shallow bowl, and lightly coat chicken with spices. Heat 2 tablespoons of the oil in a sauté pan. Sear chicken on medium-high about 90 seconds on the "skin" side, turn, add wine, reduce heat to very low, cover and braise 25 minutes. Remove chicken and juices to a clean bowl.
  • Add bell pepper and onion to the pan and sauté on low about 10 minutes, until softened. Add zucchini and olives and sauté until zucchini starts to soften, about 5 minutes. Stir in harissa, lemon juice, honey and 3 tablespoons olive oil. Remove from heat.
  • Using your fingers and a paring knife, remove chicken from the bones and tear meat in strips. Place chicken and juices in a bowl, along with vegetable mixture from the sauté pan and preserved lemon peel. Toss ingredients together and set aside.
  • Heat remaining tablespoon of oil in a 2-quart saucepan. Add couscous and remaining salt and stir over low heat 2 to 3 minutes. Pour in 1 1/4 cups boiling water, stir, cover and set aside 15 minutes. Uncover, fluff couscous with a fork, stir over low heat a few minutes to dry it, then fold in half the mint. Transfer chicken to a serving platter, scatter with remaining mint and serve with couscous in a bowl alongside, all at room temperature.

1 teaspoon salt, divided
1 tablespoon olive oil
4 boneless skinless chicken breast halves

1 tablespoon white wine vinegar
1 teaspoon cumin
1/2 teaspoon paprika

Steps:

  • Prepare grill or preheat broiler and broiler pan.

  • Mix garlic with ½ teaspoon salt and press with side of knife to form a paste.

2 small parsnips, peeled and quartered lengthwise
2 medium turnips, peeled and cut into wedges
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 teaspoons ras el hanout (Moroccan seasoning)
Kosher salt and freshly ground pepper
1 lemon, halved
1 15-ounce can chickpeas, drained, rinsed and patted dry
2 cups shredded rotisserie chicken, skin removed 1/2 cup dried apricots, quartered
1/2 cup pitted oil-cured olives
1/4 cup sliced almonds
1 5-ounce package baby arugula-spinach blend (about 8 cups)

Steps:

  • Preheat the broiler. Toss the parsnips and turnips in a large bowl with 1 tablespoon olive oil, 1 teaspoon ras el hanout, 1/4 teaspoon salt and a few grinds of pepper. Spread on a baking sheet and add the lemon halves cut-side up. Broil until the vegetables are lightly browned, about 5 minutes.
  • Toss the chickpeas in the same large bowl with 1 tablespoon olive oil and the remaining 1 teaspoon ras el hanout. Add to the baking sheet with the other vegetables and stir. Broil until tender, about 5 minutes. Let cool 5 minutes.
  • Squeeze the juice from the broiled lemon into a large bowl. Add 1/4 teaspoon salt and a few grinds of pepper, then whisk in the remaining 1/4 cup olive oil. Add the chicken, dried apricots, olives and almonds and toss to coat. Add the broiled vegetables and chickpeas and arugula-spinach blend; toss.

For the Chicken
½ pound boneless, skinless chicken breast
⅛ teaspoon cayenne pepper
⅛ teaspoon turmeric
½ teaspoon sea salt
½ teaspoon cumin
¼ teaspoon cinnamon
¼ teaspoon paprika
½ tablespoon fresh ginger, minced
1 tablespoon lemon juice
1 tablespoon dried parsley
For the Salad
1 cup butternut squash, peeled and cubed
1 cup red beets, peeled and cubed
2 tablespoons olive oil
⅛ teaspoon sea salt
5 cups romaine lettuce
1 cup arugula
2 medjool dates pitted and chopped
1 avocado, cubed
1 carrot, shaved
2 tablespoons toasted almonds
2 tablespoons dried, unsweetened cranberries
¼ cup Champagne Vinaigrette (recipe to follow)
For the Champagne Vinaigrette
1 teaspoon dijon mustard
⅛ cup champagne vinegar
1 teaspoon lemon juice
Pinch of salt and pepper

Steps:

  • Place all of the chicken ingredients in a ziploc bag or glass dish and marinate in the refrigerator for 24 hours. Preheat oven to 400 degrees. Bake the chicken for 20 minutes, flipping once, until it's cooked thru. Let cool while you prepare the remainder of the salad. This can also be done the day before and stored in the refrigerator. Toss the beets and butternut squash in the olive oil and sea salt, then roast at 400 degrees for 10-12 minutes until tender. Remove from oven, then let cool. Toss together the butternut squash, beets, lettuce, dates, avocado, carrot, almonds, and cranberries. Slice the chicken and place it on top, then drizzle with Champagne Vinaigrette. Champagne Vinaigrette In a blender (I actually used a blender bottle!), mix together 1 teaspoon dijon mustard, ⅛ cup champagne vinegar, 1 teaspoon lemon juice, and a pinch of salt and pepper. With the blender running, drizzle in ½ cup olive oil.

2 whole chicken breasts
1 large red bell pepper, thinly sliced (may also use orange or yellow peppers)
1 red onion, thinly sliced
1 tablespoon toasted cumin seed, ground
1/4-1/2 teaspoon cayenne
1 teaspoon paprika
2 tablespoons garlic, finely minced
1/4 cup fresh lemon juice
1/4 cup red wine vinegar
1 cup chicken broth
2 tablespoons olive oil
1/2 cup cilantro, finely minced
1/2 cup fresh Italian parsley, finely minced
salt and pepper
1/4 cup kalamata olive (or Nicoise olives)

Steps:

  • Roast, broil, or poach the chicken breast. When it cools, bone and skin it and shred the meat into bite size pieces.
  • In a bowl, combine the chicken, bell pepper, and onion. Chill, covered.
  • Mix the cumin, cayenne, paprika, and garlic. Whisk in lemon juice, vinegar, broth, and olive oil.
  • Stir in the cilantro, parsley, and salt and pepper to taste.
  • Remove the chicken from the refrigerator and pour the vinaigrette over and toss. Garnish with olives. Enjoy!
