This delicious morning cake is truly one of those small gifts in life that is sure to bring a smile to your face. There is nothing more comforting on these still winter mornings than a cup of coffee and slice of warm apple cake.

apples:
2 apples - peeled, cored, and chopped
½ teaspoon ground cinnamon
1 tablespoon brown sugarz
1 tablespoon granulated sugar
½ teaspoon vanilla extract
for the cake:
1½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup plus 2 tablespoons granulated sugar
1/3 cup vegetable oil
2 eggs
½ cup sour cream
½ teaspoon vanilla extract
for the crumble:
3 tablespoons butter
¼ cup flour
2 tablespoons brown sugar
1 tablespoon granulated sugar
for the icing:
¼ cup confectioner's sugar
1-2 tablespoons milk

Steps:

  • 1. Preheat oven to 350 degrees F. Grease a 9-inch cake pan. In a small bowl, combine apples, cinnamon, sugars and vanilla. Set aside and let sit. In the bowl of your stand mixer, blend together flour, baking soda, baking powder, salt and sugar. Add oil and beat until a thick batter forms. Add eggs, sour cream and vanilla until the batter becomes smooth. Fold apples into the batter and pour into prepared cake pan. In a small bowl, combine all ingredients for crumble. Sprinkle generously over the cake and bake for about 25 minutes or until cake tester comes out clean. Transfer to a wire rack and let cool for about 10 minutes, before transferring to a cake plate otherwise the cake will continue cooking in the pan. Once completely cool, mix confectioner's sugar and milk. Start with 1 tablespoon of milk. If the icing seems too thick and pasty add more milk as needed. Note that you want the icing just thick enough to set and harden. Drizzle of the cake.

2 cups granulated sugar
1 cup butter (, room temperature)
2 large eggs
6 apples (,small/medium size, grated (cored, but keep the peel on))
2 teaspoons baking soda
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 cup chopped walnuts (, optional)
1 cup heavy whipping cream
1/2 cup light brown sugar
1/2 cup granulated sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream together the butter and sugar until well blended. Add the eggs and mix well.
  • Stir in the freshly grated apple. It may seems like the grated apple is completely taking over the dish - this is a good thing :).
  • In a separate bowl, mix together the dry ingredients. Add to the wet ingredients and mix, just until incorporated.
  • Bake in a greased 9x13 inch pan for 40-50 min, or until a toothpick inserted in the center of the cake comes out clean. (Depending on how large your apples were, you may need to cook it a little longer than 50 minutes).
  • Allow the cake to cool for at least 10 minutes. Serve warm with caramel sauce and whipped cream or ice cream.

2 tablespoons unsalted imported or organic butter
2 large Golden Delicious, Jonagold, or other baking apple, peeled, cored, and coarsely chopped
1 1/2 tablespoons Calvados (apple brandy)
1 1/4 cups sugar
2 teaspoons ground cinnamon
2/3 cup plain yogurt
2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup vegetable oil
3 large eggs

Steps:

  • Preheat the oven to 350°F.
  • Generously grease an 8-inch round cake pan (no need to grease if pan is nonstick).
  • Melt the butter in a medium skillet over medium-high heat. Sauté the apples, tossing occasionally, until golden brown, 5 to 7 minutes. Stir in the Calvados, 1 tablespoon of the sugar, and the cinnamon. Set aside until needed.

5 cooking apples, peeled, cored and thinly sliced
5 tablespoons sugar
2 tablespoons cinnamon
3 cups unsifted all-purpose flour
2 cups sugar
1/2 teaspoon salt
4 eggs
1 cup vegetable oil
2 teaspoons vanilla
1/3 cup orange juice
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 cups powdered sugar
2 tablespoons butter, softened
1 1/2 teaspoons vanilla
1/2 teaspoon cinnamon
1 -2 tablespoon water

Steps:

  • Preheat oven to 350 degrees.
  • Prepare a large bundt or tube pan with a light coating of cooking spray.
  • Mix together the apples, sugar and cinnamon and set aside.
  • Add all of the ingredients for the batter to a large bowl and mix at medium speed for one minute. Scrape down the sides of the bowl to make sure all ingredients are being incorporated. Mix for an additional 3 minutes.
  • Pour one third of the batter into the baking pan. Cover with a layer using 1/2 the seasoned apples. Repeat with another 1/3 of batter and the remaining apples. Finish with the final 1/3 of batter.
  • Bake for 90 to 105 minutes. Remove from oven.
  • Cool for 10 minutes then invert onto a serving plate.
  • While the is cooling (10 minutes), combine all ingredients for the glaze. Drizzle on top of the cake.
