1 1/2 lbs cabbage, shredded
1 cup water
1 medium onion, chopped
1/2 cup lard
1/3 cup flour
1/2 teaspoon caraway seed
salt
4 teaspoons sugar
1/3 cup vinegar

Steps:

  • Simmer cabbage in water for 5 minutes.
  • Drain, saving liquid.
  • Brown onion in lard, add flour and stir until brown.
  • Pour in the liquid from the cabbage and stir until smooth.
  • Add cabbage, caraway seeds, salt, sugar and vinegar.
  • Simmer for 20 minutes.

1/2 cup milk
3 tablespoons sugar
2 teaspoons butter
2 teaspoons flour
1/3 cup sliced blanched almond
1/3 cup candied orange peel
1/2 cup chocolate frosting

Steps:

  • Mix together milk, sugar, butter and flour.
  • Cook over low heat for 1 minute.
  • Add almonds and orange peel.
  • Drop by teaspoon onto greased and floured baking sheet.
  • Bake in preheated 350° oven for 7 minutes.
  • Remove cookie sheets and cool flat side up.
  • Spread flat side with frosting.

These saucy vegetables are a colorful and satisfying side dish we enjoy often. Our daughter, an 11-year-old 4-H member, earned the Reserve Grand Champion ribbon at our local county fair with this recipe.

6 to 8 medium carrots, sliced 1/4 inch thick
1/4 cup water
3 cups frozen chopped broccoli
2-1/4 cups frozen cauliflowerets
2 jars (4-1/2 ounces each) whole mushrooms, drained
2 tablespoons cornstarch
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
1/2 cup butter, melted, divided
1 cup shredded Swiss cheese
2 tablespoons Parmesan cheese
1/2 cup seasoned croutons

Steps:

  • Place the carrots and water in a 3-qt. microwave-safe dish. Cover and microwave on high for 2 minutes. Add broccoli and cauliflower. Cover and microwave for 6-9 minutes or until vegetables are tender; drain. Add mushrooms; cover and set aside. , In another microwave-safe dish, combine the cornstarch, salt and pepper. Stir in milk and 6 tablespoons butter until smooth. Cover and microwave on high for 3-5 minutes or until thickened and smooth, stirring after every minute. Add Swiss cheese and Parmesan, stirring until melted. , Pour over the vegetables. Cover and microwave for 2-4 minutes or until heated through. Combine croutons and remaining butter; stir into vegetables.

Yet another I've pulled out of "The Czechoslovak Cookbook". Of course I had to add garlic to the recipe :) Also for a little extra kick you can use some spicy bloody mary mix instead of the cream of tomato soup. I hope you enjoy this, we sure do.

Number Of Ingredients 10

1 head cabbage
1 medium onion, chopped
1/4 cup butter
4 cloves garlic, minced
1 lb ground beef (whatever your prefer)
salt and pepper
1 tablespoon minced parsley
2/3 cup cream of tomato soup
1 egg, beaten
1 1/2 cups chicken broth

Steps:

  • Remove the stump from the cabbage and discard.
  • Scoop out and save the inside of the cabbage, leaving about a 1- 1 1/2 inch shell.
  • Chop the cabbage you scraped out of the inside.
  • Cook onion and garlic in 2 tbsp butter over medium high heat until onion is wilted.
  • Add meat and brown.
  • Add chopped cabbage, salt, pepper, parsley, and tomato soup.
  • Cook covered about 10 minutes.
  • Drain and allow to cool, then add egg and mix together well.
  • Fill cabbage with mixture (you will usually have some left over unless you pack very tight) and cover with a cabbage leaf securing with a toothpicks.
  • Put broth and remaining butter in a large casserole or large pot, Place cabbage in pot (open side up obviously) and cover.
  • Cook in over at 375 for about an hour and 15 minutes.
  • Cut into wedges and serve.
