1 1/2 lbs moose, cubed (or steak)
4 teaspoons soya sauce
1 onion, chopped
3 tablespoons oil
1/2 cup uncooked rice
1 cup water (or stock of your choice)
1 (12 ounce) can cream of mushroom soup
1 (12 ounce) can sliced mushrooms
1 cup peas
salt and pepper

Steps:

  • Brown meat, onion and celery in oil in frypan. Transfer to casserole dish.
  • Mix remaining 9 ingredients together in a bowl. Pour over meat and bake in a 350 oven for 20 to 30 minutes, or until rice is cooked.
  • Add veggies of your choice, diced small, and herbs/spices to taste. This can be cooked in Slow Cooker all day....meat is tenderer.
  • Serve with bannock or baking powder bisquits.

Very quick to make, came up with this recipe when I had a last minute group drop in for dinner...no time to run to the store, so used ingredients I had on hand..fed 6 people easily and was filling..they loved it! Added a salad and the meal was complete.

1 (20 ounce) bag Simply Potatoes (cubed potatoes)
1 lb bacon, cooked and crumbled
2 large chicken breasts
1 1/2 cups shredded cheese (i used pepper jack and colby)
1 1/2 cups sweet corn (I used frozen and cooked according to package directions)

Steps:

  • Preheat oven to 350 degrees.
  • Cut chicken breast into small cubes, cook on stove top in frying pan until done and no longer pink. I added a little olive oil to keep chicken from sticking to the pan.
  • Fry bacon and crumble.
  • In a 9 x 13 baking dish spray with non stick spray, add potatoes, chicken, bacon and corn, mix all together.
  • bake uncovered for 30 minutes, when finished sprinkle cheese on top and pop back in oven until cheese is melted.

1 (9 inch) pie pastry
3/4 lb lean ground beef
1/2 cup chopped onion
1 garlic clove, crushed
1/2 teaspoon mustard powder
1 cup diced tomato
2 cups chopped fresh spinach
3/4 teaspoon salt
1 teaspoon lemon juice
1/2 crushed red pepper flakes

Steps:

  • Combine all filling ingredients in frying pan and bring to a boil. Stir to break up meat, simmer uncovered for 30 minutes. Chill for 2 hours.
  • Roll pastry as for a pie...but make in 12 inch circles...the size of a saucer.
  • Place portions of filling in the center of each pastry circle, and dampen the edges with a little water. That acts like glue. Fold each circle in half and press edges together with water. Put on greased cookie sheet. Brush with beaten egg.
  • Bake in 425 degree oven for about 20 to 25 minutes, or until golden brown.
  • Spices in this dish are a matter of choice. For spicy, add tabasco sauce, hot sauce, or jalepeno peppers. For milder, add parsley, sage, rosemary, etc. Your taste!

My family loves this dish which tastes especially good as left-overs. This is the perfect middle of the week meal when you don't want the pressure of coming up with several dishes to serve. It's a very healthy meal -- I recommend using either whole wheat or PLUS pasta and 'no salt added' diced tomatoes and then seasoning the ground beef with salt and pepper. Hint: If you're really in a rush and need to save time, use powdered garlic instead of fresh; use 1 can stewed tomatoes in place of 1 can diced tomatoes and the chopped onions; and either omit the carrots or use the pre-shredded carrots you can find in the produce section at larger grocery stores.

2 lbs ground beef
1 medium onion (chopped)
3 garlic cloves (either chopped or use a press)
1 (16 ounce) bag frozen spinach
1 cup carrot, shredded
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can crushed tomatoes (Whole Foods has an excellent Crushed Tomatoes with Rosemary, but you can use regular crushed tomatoe)
8 ounces macaroni (Barilla Plus elbows are best)

Steps:

  • Put a pot of water on to boil.
  • Brown the ground beef with the chopped onions and garlic.
  • Add pasta to boiling water -- cook as long as advised by box directions.
  • Put frozen spinach and shredded carrots into a microwave-safe bowl and zap (cook in the microwave) for 7 minutes (stir at about 4 minutes).
  • Add both cans of tomatoes to cooked meat, stir, and simmer for a few minutes.
  • Add spinach and carrots to the meat mixture, stir, and simmer for a few minutes.
  • Drain pasta and place in a HUGE serving dish.
  • Put meat and veggie mixture into the HUGE serving dish and mix thoroughly with the pasta.
  • Serve hot.
