1 pound chicken breast tenderloins, cut into thin strips
¼ cup cornstarch
2 tablespoons vegetable oil
1 teaspoon minced garlic
1 teaspoon ginger puree
1 teaspoon Sriracha sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
¼ cup brown sugar
½ cup soy sauce
4 green onions, chopped

Steps:

  • Place chicken strips and cornstarch in a large resealable plastic bag. Shake to coat.
  • Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on the outside and juices run clear, about 5 minutes on each side. Transfer to a paper towel-lined plate.
  • Whisk together garlic, ginger puree, Sriracha, sesame oil, rice vinegar, brown sugar, and soy sauce. Add mixture to the skillet and bring to a boil. Reduce heat and simmer until sauce has thickened, about 3 minutes.
  • Return chicken to the skillet. Add green onions and toss to coat. Cook over medium-high until heated through, about 2 minutes. Serve immediately.

1/4 cup reduced-sodium soy sauce
2 tablespoons cornstarch
1 tablespoon brown sugar
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips
1/4 cup sherry
1/4 cup hoisin sauce
3 tablespoons minced fresh cilantro
1 tablespoon sugar
1 teaspoon Mongolian Fire oil or sesame oil
2 tablespoons canola oil, divided
2 cups fresh pea pods, cut into thirds
3 plum tomatoes, seeded and cut into 1-inch pieces
1 garlic clove, minced
1 tablespoon minced fresh gingerroot
Hot cooked rice

Steps:

  • In a shallow dish, combine the soy sauce, cornstarch and brown sugar. Add the chicken; turn to coat. Let stand at room temperature for 30 minutes., Meanwhile, in a small bowl, combine the sherry, hoisin, cilantro, sugar and Mongolian Fire oil until smooth; set aside. Drain chicken and discard marinade., In a large skillet or wok, stir-fry chicken in 1 tablespoon canola oil until no longer pink. Remove and keep warm. Stir-fry the pea pods, tomatoes, garlic and ginger in remaining oil until vegetables are crisp-tender, 2-4 minutes., Add sherry mixture to the pan. Bring to a boil; cook and stir until slightly thickened, about 2 minutes. Add chicken; heat through. Serve with rice.

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil and add chicken cubes; cook until golden, stirring constantly, about 3 minutes. Stir in chicken broth, brown sugar, soy sauce, carrot, garlic, ginger, and chili powder. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 7 minutes. Allow 10 to 15 minutes for pressure to build.

I've served this before & it's a great way to have an easy, relaxed dinner with friends. Found this recipe on About.com. Use whatever combination of meats and/or vegies that appeal to you. Feel free to finish up the meal by poaching eggs or boiling vermicelli noodles in the hot broth. (You may need to cook extra broth).

5 -6 ounces chicken breasts
1 lb red snapper fillet
1/2 lb large raw shrimp
1/2 lb napa cabbage
1 bunch spinach
1/4 lb bean thread noodles (dried vermicelli)
4 cups chicken stock or 4 cups vegetable stock
2 cups water
1 tablespoon chinese rice wine or 1 tablespoon dry sherry
2 slices ginger
1 green onion
dark soy sauce
light soy sauce
sesame paste
fermented bean curd (mashed)
chili oil
rice vinegar
hoisin sauce

Steps:

  • Cut the chicken and red snapper filets into thin slices. Rinse the shrimp under warm running water and cut in half lengthwise.
  • Wash and shred the Napa cabbage and spinach. Soak the bean thread noodles in hot water until softened.
  • Place the sliced chicken, shrimp, red snapper and the shredded vegetables on separate platters on the table. Place the dipping sauces on the table in small individual bowls. Make sure each guest has a complete place setting, including a dipping fork (color-coded if possible) and a small bowl for placing the cooked food.
  • On the stove, bring the broth and water with the rice wine to a boil, and add the ginger and green onion. Transfer enough broth to the fondue pot or hot pot so that the pot is approximately 2/3 - 3/4 full. (How much broth you need will depend on the size of the pot). Place the pot on the burner, and keep it simmering throughout the meal. Keep the remaining broth warming on the stovetop.
  • To serve, invite guests to spear the food with a dipping fork and cook briefly in the broth until cooked, then dip the cooked food in the sauces as desired.
  • Use a dipping basket to cook the vegetables in batches in the hot broth and ladle out into the soup bowls.
  • Serve with hot steamed rice.

SAUCE AND MARINADE
1 tsp canola oil
1 tsp ginger minced
3 clove garlic minced
1/2 c soy sauce
1/2 c water
1 c brown sugar

1 lb chicken, cooked and cut into cubes
4 tablespoons soy sauce, divided
1 tablespoon sesame oil
1 (1 1/2 lb) bok choy
2 teaspoons cornstarch
1 tablespoon peanut oil
1 large red bell pepper, cut into short, thin strips
2 garlic cloves, minced
4 small green onions, cut diagonally into 1/2 inch pieces
2 teaspoons sesame seeds, toasted

Steps:

  • In a small bowl marinate chicken cubes with 2 tablespoons soy sauce and sesame oil while preparing vegetables.
  • Remove leaves from bok choy and cut into 1/2 inch slices. Slice stems into 1/2 inch slices. Set aside.
  • Blend remaining 2 tablespoons soy sauce into cornstarch until smooth. Set aside.
  • Heat oil in wok or large skillet over medium high heat. Add bok choy stems, bell peppers and garlic; stir fry 5 minutes. Add onions and bok choy leaves; stir fry 2 minutes.
  • Re-stir cornstarch mixture and add to wok. Add chicken and stir fry 30 seconds until sauce bubbles and thickens. Sprinkle with sesame seeds and serve.

1 1/4 lb chicken cut in thin bite size pieces
1/3 c cornstarch
2 Tbsp vegetable oil
1 medium onion cut in 8-10 wedges
SAUCE
1 1/2 tsp sesame oil
1 Tbsp fresh grated ginger
3 clove garlic minced
1 Tbsp rice vinegar
1/2 c low sodium soy sauce
1/2 c brown sugar
1 Tbsp cornstarch
1/4 c water
4 green onions cut in ¾ inch segment

Steps:

  • 1. Combine the chicken and cornstarch in a large zipper bag. Shake to coat. Heat 1 tablespoon vegetable oil in large skillet over medium high heat. Add the chicken to the pan in a single layer and cook on both sides until golden brown. If necessary work in batches adding more oil when needed. Plate the chicken.
  • 2. Heat 1 tablespoon oil over medium high heat in same skillet. Cook the onion for 2 minutes; stirring several times. Add the onion to the plate with the chicken.
  • 3. Reduce heat to medium low and add the sesame oil. Add the ginger and garlic and cook for 1 minute stirring constantly. Add the rice vinegar, soy sauce, and brown sugar stirring to combine.
  • 4. In a separate bowl whisk together the water and cornstarch. Whisk it into the skillet and cook until slightly thickened. Add the cooked chicken and onions back to the skillet. Top with the green onions and serve promptly.

3/4 tablespoon ginger, peeled and minced
3 garlic cloves, minced
1 shallot, peeled and minced
1 tablespoon cilantro leaf, roughly chopped
1/4 cup spanish sherry wine vinegar
1/8 cup hoisin sauce
1 1/2 tablespoons soy sauce
1 1/2 tablespoons rice wine vinegar
1 1/2 tablespoons sesame oil
1 1/2 tablespoons plum sauce
1 1/2 tablespoons creamy peanut butter
1 1/2 tablespoons honey
1 1/2 teaspoons salsa, sriracha
4 (8 -10 ounce) chicken breasts, with one small wing bone attached
1 cup raw long grain rice
2 tablespoons annatto oil
2 tablespoons butter
4 garlic cloves, peeled and minced
1 scotch bonnet pepper, stem and seeds discarded and minced
1/2 onion, diced medium small
1 carrot, peeled and diced med. small
1 stalk celery, cleaned and diced med. small
2 small bay leaves, broken
salt and pepper, to taste
1 1/4 cups chicken stock

Steps:

  • Combine all ingredients for the marinade including chicken, mix well and reserve. Marinate the breasts 1-3 hours covered in refrigeration.
  • Make rice:.
  • In a saucepot heat the prepared annatto oil and the butter on medium high heat.
  • Now add the scotch bonnet and the garlic and stir. Cook 15 seconds and then add the remaining vegetables and the bay leaves and stir well. Allow the vegetables to cook until well glazed. (Allow almost 10 minutes to really get the flavor out of the veg.) Stir frequently.
  • Now add the rice and the salt and pepper. Stir well. Now add the chicken stock and stir once. Bring to a boil and then immediately lower the heat to very low. Cover the pot and cook until all of the stock is absorbed. (About 13-15 minutes). Can be kept warm for 30 minutes, (or more) before serving if desired.
  • Remove the breasts from the marinade and grill them until just cooked through and place the chicken on a warm plate.

2 tablespoons garlic (minced)
1 white onion (sliced)
2 green onions (sliced)
1 teaspoon salt
1/4 teaspoon black pepper
oil (for frying)
1/4 cup chicken broth
1 1/2 tablespoons cornstarch
2 tablespoons hoisin sauce
1 tablespoon oyster sauce
1 tablespoon dry sherry
2 teaspoons sugar
2 teaspoons soy sauce
2 teaspoons crushed red pepper flakes (or less, to your taste)
1/2 red pepper, sliced
6 leaves bok choy, sliced
1 (8 ounce) can bamboo shoots
2 fresh water chestnuts, sliced
2 ounces bean sprouts

Steps:

  • In a medium bowl whisk together chicken broth, hoisin sauce, oyster sauce, sherry, sugar, soy sauce and crushed red pepper flakes. Set aside.
  • Toss chicken with cornstarch in a bag until all of the strips are thoroughly coated. Heat a deep fryer to 375 degrees. Fry chicken strips in batches until golden brown and fully cooked. Drain on paper towels. Place into the oven to keep warm.
  • Add a tablespoon or two of oil to a wok over medium-high heat. Add garlic, onion and green onions. Season vegetables with salt and pepper. Stir fry until added vegetables have reached your desired tenderness. Remove from pan and set aside.
  • Pour the sauce mixture into the wok and cook until the sauce becomes thickened and bubbly. Add chicken strips into a large serving bowl, pour sauce over chicken, add onions and mix well. Serve with white rice.
