This is a great in a hurry casserole for a pot luck or make the day before and just heat and serve great for football nights. and to spice it up I top mine with salsa.

- 1 pound bacon
- 1/2 cup butter
- 1/2 medium onion, chopped
- 1/2 cup chopped celery
- 1 red pepper, chopped
- 1 green pepper, chopped
- 5 tablespoons all-purpose flour
- 2 cups sour cream
- 2 pounds fresh corn (or frozen corn, thawed)
- salt and pepper
- 1 tablespoon chopped parsley

Steps:

  • Instructions Heat the oven to 350 degrees. Cook the bacon, then chop it into bite-size pieces and set it aside. Melt the butter in a large pot over medium heat. Sauté the onion, celery, and peppers until soft. Stir in the flour, then the sour cream, until well combined. Add the corn and most of the bacon bits and season with salt and pepper. Pour the mixture into a 9- by 13-inch baking dish and sprinkle on the remaining bacon bits and the parsley. Bake for 30 to 45 minutes, until lightly browned. (Note: for a lower-fat version of this casserole, use half the bacon, butter, and flour).

1 lb ground beef
2 tablespoons shortening
1 medium onion, chopped
1 (16 ounce) can diced tomatoes, undrained
1 tablespoon ketchup
1 tablespoon steak sauce or 1 tablespoon Worcestershire sauce
1/2 cup chopped green pepper
1 (7 ounce) package elbow macaroni
salt and pepper
1 (10 1/2 ounce) can cream of mushroom soup
1 cup grated cheese

Steps:

  • In a skillet, brown beef in shortening. Add onion, tomatoes, ketchup, steak sauce and green pepper.
  • Simmer for 30 minutes. Meanwhile, cook macaroni according to package directions; drain.
  • Combine meat mixture, macaroni and salt and pepper. Blend in soup.
  • Pour into a greased 9- x 13-inch casserole. Top with cheese.
  • Bake uncovered at 350 degrees for 30 minutes.
  • Makes 6 servings.

This was a family favorite after a big Sunday dinner. What is great is that this casserole can be modified depending on the amount of leftovers you have.

2 cups roast beef
1 cup gravy
1 teaspoon Worcestershire sauce
3 cups mashed potatoes
1 (8 ounce) can mushrooms
1 onion
1 cup cheddar cheese

Steps:

  • Dice roast beef into cubes.
  • Mix with gravy and Worcestershire sauce.
  • Add mushrooms.
  • Place in bottom of casserole.
  • Mix half cup cheese into leftover potatoes.
  • Place potatoes on top of casserole and sprinkle remaining cheese over casserole.
  • Bake at 350 for 45 minutes.
