These juicy meatballs with a tender, light texture are packed with flavorful herbs. The meat mixture is softer than you might expect, thanks to the addition of ricotta, but sacrificing a perfectly round shape is worth it. You'll make these turkey meatballs so often you just might forget about your beef meatball recipe.

2 tablespoons extra-virgin olive oil
2 tablespoons canola oil
3/4 cup finely ground fresh breadcrumbs (from 3 to 4 slices white bread, crusts removed)
1/2 cup milk
1 pound ground turkey (93/7 ratio)
1/2 cup whole milk ricotta cheese
2 tablespoons grated Parmesan
1 clove garlic, grated
1/4 cup packed parsley leaves, finely chopped (about 2 tablespoons chopped)
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and drizzle the olive oil and canola oil in an even layer over the paper.
  • Pour the breadcrumbs into a large mixing bowl, pour the milk over top and stir to fully moisten the breadcrumbs. Add the remaining ingredients to the mixing bowl and mix with your hands just until combined.
  • Scoop 1/4-cupfuls of meatball mixture and place them evenly spaced on the prepared baking sheet; you should have 12 meatballs. Gently roll them into balls. Bake until bottoms are golden brown, about 15 minutes. Reduce the oven temperature to 325 degrees F and continue to bake for 15 to 20 minutes more until the meatballs are cooked through.

A weeknight dinner winner, these turkey meatballs are tender and full of flavor - and cleanup is a snap!

1 large egg
¼ cup finely chopped fresh basil (plus more for serving)
Heaping ½ teaspoon salt
¼ teaspoon freshly ground black pepper
½ teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons water
3 tablespoons minced yellow onion, from 1 small onion
1⅓ pounds 93% lean ground turkey (see note)
⅔ cup dried Italian style bread crumbs (such as Progresso)
⅓ cup freshly grated pecorino Romano cheese (plus more for serving)
2 tablespoons olive oil, for cooking
Large jar (24 oz) good quality Marinara sauce (such as Rao's)

Steps:

  • In a medium bowl, whisk together the egg, basil, salt, pepper, oregano, garlic, and water. Add the onion, turkey, bread crumbs, and cheese, and mix with your hands until the mixture is uniform.
  • Lightly wet your hands with water and form the mixture into balls just slightly larger than golf balls (keep wetting your hands as you go to prevent the meatball mixture from sticking to your hands).
  • In a large nonstick skillet, heat the oil over medium heat until shimmering. Add the meatballs in a single layer and brown on all sides, 7 to 8 minutes total. Pour the marinara sauce over the meatballs and bring to a boil. Reduce the heat to low, cover tightly with a lid, and simmer until the meatballs are cooked through, about 15 minutes. Sprinkle with more basil and cheese, if desired, and serve.
  • Note: For best results, I recommend using 93% lean ground turkey, which is a combination of light and dark meat, rather than 99% lean ground turkey breast, which is all white meat.
  • Freezer-Friendly Instructions: The meatballs can be frozen in their sauce for up to 3 months. When ready to serve, defrost overnight in the refrigerator and reheat on the stovetop over medium heat until the meatballs are hot in the center.

Mom's been making these forever. My brother always insisted she bring these to every event he had at his home.I never really under stood why as by the time I got to the food they were gone. So I tried them for myself everyone enjoyed them,luckly I tried them when I was making them as they also dissapeared.

Number Of Ingredients 11

1 egg
1 lb ground turkey
1 1/4 cups fresh breadcrumbs (2 1/2 slices)
1/2 cup finely chopped onion
1 clove garlic, finely minced
2 teaspoons tarragon leaves (crumbled)
1/2 teaspoon pepper
4 tablespoons canola oil
1 cup chicken broth
3 tablespoons lemon juice
1/4 teaspoon salt (optional)

Steps:

  • Combine egg, turkey,crumbs,onion and garlic with 1 tsp tarragon 1/8 tsp salt& 1/4 tsp pepper.
  • Mix well.
  • Using a small spoon shape into 30-40 meatballs.
  • Brown 1/2 meatballs in 2 1/2 Tbs oil in a large skillet about 6 minutes turning as sides brown.
  • Remove to a platter.
  • Brown remaining meatball adding rest of oil if needed 2-3 minutes turning as above.
  • Remove to platter.
  • To the skillet add chicken broth,lemon juice, remaining tarragon, salt if desired& pepper.
  • Heat to a low boil.
  • You may thicken the broth with cornstarch/water mix if desire or leave it with out.
  • Add meat balls to pan coat with sauce.
  • Serve as an appetizer or serve over rice or egg noodles.
  • Best if prepared a day ahead of time.
  • Also freezes well.

Mom's Meatballs image

Scrumptious meatballs from Mom. Mom never browned them first if she was using in her spaghetti sauce. See her recipe for sauce posted in my recipes, recipe #210729. She would drop them in raw and let them simmer for 40 mins. You will have to skim off any excess fat that rises to the top of the sauce if done this way. Or you can saute them first or bake in the oven before adding them to the sauce. No need to skim off any grease if pre-cooked.

This is a family favourite from generations back , This receipe freezes very well. It is a fabulous make ahead receipe. It is excellent for a potluck or just for a fabulous change. It is a must try. I have never come accross a sweet and sour meetball receipe as great as this one.

1 lb hamburger
1 cup onion, chopped
2 cups carrots, grated
3 tablespoons vinegar
1/4 cup lemon juice (approx 1/2 lemon)
1/2 cup Splenda brown sugar blend
1 (8 ounce) can tomato soup
1 cup water
3/4 cup celery, diced
1 onion, chopped
1/2 cup Splenda brown sugar blend
3 tablespoons vinegar
1/4 cup lemon juice, 1/2 Lemon

Steps:

  • Combine first 6 ingredients together. Make into meatballs and fry until brown on all sides.
  • Put meatballs in casserole dish.
  • Last 7 ingredients for sauce: Combine and pour over top.
  • Bake in oven at 350°F for 1 hour.
  • Taste the Wow.
  • Serve with rice or potatoes.
