This macaroni salad is great for lunch on its own, if you don't feel like cooking on those hot summer days. It's also a wonderful side for grilled food. I have perfected it -- after making many different types of macaroni salad, this one is my favorite. Enjoy!!

1 (16 ounce) package elbow macaroni
2 (5 ounce) cans white tuna, drained and flaked
2 stalks celery, minced
1 onion, minced
2 cups mayonnaise
1 (5 ounce) jar pimento-stuffed green olives, drained
1 pint grape tomatoes
salt and pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Transfer the macaroni to a bowl, and cool in the refrigerator.
  • In a large bowl, lightly toss the tuna with celery, onion, and about 1 cup mayonnaise until combined, then stir in the remaining mayonnaise, macaroni, olives, and grape tomatoes. Season to taste with salt and pepper. Let the salad chill in refrigerator 1 hour.

3 cups uncooked macaroni
⅓ cup Italian-style salad dressing
½ cup sour cream
1 cup mayonnaise
1 onion, chopped
2 stalks celery, chopped
½ teaspoon garlic powder
1 teaspoon salt
½ teaspoon ground black pepper
1 (5 ounce) can tuna, drained

Steps:

  • Cook macaroni in a large pot of boiling salted water until done. Drain.
  • Marinate macaroni in Italian dressing for 2 to 3 hours or overnight.
  • Mix sour cream, mayonnaise, onion, celery, garlic powder, tuna, and salt and pepper into macaroni. Chill before serving.

This is, by far, the best macaroni salad I've ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I'm mixing it up!

16 ounces uncooked elbow macaroni
4 carrots, shredded
1 large red onion, chopped
½ green bell pepper, seeded and chopped
½ red bell pepper, seeded and chopped
1 cup chopped celery
2 cups mayonnaise
1 (14 ounce) can sweetened condensed milk
½ cup white sugar
½ cup white vinegar
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
  • In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

I was raised in Phoenix, Az Need I say more HOT, HOT, HOT! So 110 degrees on average in summer you don't cook much so the house doesn't get too hot. This was always well received. I still live in AZ but in the mountains so 90 degrees is much better than 110. This is such a nice easy dinner in the summer.

1 (6 ounce) can tuna, drained
8 ounces small shell pasta, cooked
1/2 cup frozen peas, thawed
1/2 onion, diced
1 cup mayonnaise

Steps:

  • Cook pasta according to package directions.
  • Drain. Rinse noodles with cold water.
  • Drain tuna.
  • Add All ingredients.
  • Chill 30 minute.

A tasty tuna salad which is easy to prepare. I frequently make it during the Summer for a light supper, after a day at the pool. Also works well for picnics. Amounts given are estimates, I usually prepare this "by taste".

1 (6 1/2 ounce) can tuna, drained and flaked
1/2 lb cooked elbow macaroni or 1/2 lb small shell pasta, rinsed and drained
1 -2 hard-boiled egg, mashed
1/2 medium vidalia onion, minced
1/2 cup chopped or minced celery
1/4 cup chopped sweet red peppers or 1/4 cup green bell pepper
1 cup mayonnaise
salt and pepper

Steps:

  • In a large bowl, combine all ingredients.
  • Mix well to blend.
  • If salad is too dry, add more mayonnaise.
  • Taste, and adjust seasonings to your preference.
  • Chill well before serving.
  • Note: If you are going to triple the recipe, only use 1 hard boiled egg per can of tuna.

8 ounces macaroni noodles
10 ounces tuna, drained
3/4 cup celery, diced
1/2 cup dill pickle, chopped
1/2 cup dill pickle, chopped
1/4 cup red bell pepper, chopped
1/4 cup white onion, minced
2 tablespoons fresh dill, chopped or 1 teaspoon dried dill weed

Steps:

  • Cook pasta al dente according to package directions.
  • While pasta is cooking, combine all dressing ingredients in a small bowl and mix well. Set aside.

  • 3/4 cup sour cream or 3/4 cup plain Greek yogurt.

  • 2 tablespoons pickle juice.
