Yummy, cheesy broccoli casserole that is a hit for every Thanksgiving dinner!

2 (14 ounce) bags frozen broccoli florets, thawed
2 cups cream of chicken soup
1 tablespoon butter, softened
2 pounds processed cheese food (such as Velveeta ®), sliced
2 sleeves buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir the broccoli florets, cream of chicken soup, and 1 tablespoon softened butter together in a 9x13-baking dish until the broccoli is coated with the soup. Pack lightly to form a flat surface. Layer about half the slices of processed cheese food atop the broccoli mixture.
  • Bake in the preheated oven until the cheese is bubbling, about 20 minutes.
  • Remove the dish from the oven; stir to blend the melted cheese into the broccoli mixture. Top with the remaining processed cheese food. Top with the crushed buttery round crackers.
  • Return dish to oven and bake until the added cheese begins to melt, about 15 minutes more. Allow the casserole to cool and thicken slightly before serving, at least 15 minutes.

This is so rich, but a great compliment to the traditional turkey, potatoes and stuffing. You can assemble this a day or two ahead of time and refridgerate. Makes great leftovers!

6 -8 yellow onions, chopped
4 lbs frozen broccoli cuts
16 ounces cream cheese
1 1/2 cups unsalted butter
1/2 cup flour
3 cups milk
1 loaf stale bread, crust removed, cut into small bite sized pieces
1 teaspoon salt
1 teaspoon pepper
1 tablespoon garlic powder
2 cups parmesan cheese

Steps:

  • Boil onions until semi-soft. Steam broccoli enough to dethaw, but don't cook all the way. Melt 1 ½ sticks of butter in large sauce pan. Sprinkle flour into pan and cook on medium heat, add cream cheese, salt, pepper and garlic powder and cook until bubbly. Whisk in milk and cook until thick. Mix sauce, broccoli and onions together in large bowl. Pour into 2 casserole dishes (casseroles can be refrigerated overnight, if necessary.).
  • Bake at 350 degrees for 30 minutes. Mix bread crumbs, 1 ½ sticks of melted butter and Parmesan cheese together in separate bowl and spread over casserole. Bake another 15 minutes.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

1 (10 3/4 ounce) can cream of mushroom soup
1 cup mayonnaise
2 eggs (beaten)
1 cup sharp cheddar cheese (shredded)
4 ounces almonds (slivered) (optional)
1 tablespoon onion (chopped)
salt and pepper, to taste
1 cup saltine crackers (crushed)
3 tablespoons butter (melted)

Steps:

  • Pre-heat oven to 450 degrees.
  • In a large bowl, mix together the first eight ingredients.
  • Pour mix into a casserole dish.
  • Sprinkle top with crushed crackers and drizzle with melted butter.

There are quite a few recipes like this one here, BUT, this one calls for a little vinegar. This is a very good casserole. It can be made the day before and refrigerated until baking time.

1 cup mayonnaise
1 cup grated sharp cheddar cheese
2 eggs, beaten

1 tablespoon white vinegar
crushed Ritz cracker, for the top

Steps:

  • Mix all ingredients in a casserole dish.
  • Sprinkle Ritz crackers over the top.
  • Bake 45 minutes at 350 degrees.
