THE BEST SPAM® LOCO MOCO WITH GRAVY
Steps:
- Prepare rice according to package instructions.
- Roughly chop green onion.
- Fry eggs according to your desired doneness.
- In a medium to large sized skillet, add 4-6 slices of Spam® on medium/high heat.
- Sear the Spam® on both sides until browned and crispy. Remove from heat, set aside until later use.
- In the same skillet used to sear Spam®, add garlic, onion and mushrooms and sauté. If needed, add a small amount of oil (one tsp).
- Sauté vegetable and garlic mixture until soft and translucent.
- Sprinkle in flour and whisk for about one minute.
- Add butter and continue to whisk, stirring constantly for about two minutes or until flour cooks out.
- Slowly pour in water and whisk simultaneously.
- Pour in soy sauce, browning seasoning and Worcestershire sauce.
- Continue to whisk and allow gravy to reduce and thicken. (about five minutes)
- Adjust flavor to your taste adding salt and pepper if needed.
- Serve with seared Spam®, white rice and top with a runny/sunny side up egg.
- Garnish with furikake and green onions.
- Enjoy!
SPAM AND TOMATO SAUCE GRAVY
Steps:
- Bring to boil the water. Then stir in rice. Reduce heat to simmer. Let simmer 20-30 min. till rice is done.
- While the rice is cooking, add the SPAM and onion together in a large skillet sprayed with non-stick cooking spray and saute until the SPAM is browned. Add the can of Hunts tomato sauce to the SPAM and onions, let simmer till slight boil.
- Spoon SPAM and tomato sauce mixture over rice and serve. You can top with cheese or a spoonful of mayonnaise to jazz it up a little if you like.

This is my mother's recipe I grew up with. It is very tasty and is great with biscuits and sausage.

Steps:
- Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

MOM'S SPAM GRAVY
My mom starting making this when i was a kid it happened one morning when she discovered she didn't have any ham or bacon to make breakfast gravy with.It's a staple in our home. It's great with biscuits and also over mashed potato's.

Steps:
- In a large deep skillet cook and brown your chopped up Spam.
- Once spam is nicely cooked and browned add your bisquick mix stir making sure to brown the mix with the meat drippings leave spam in the skillet while doing this.
- Once bisquick is mixed and browned add your milk slowly stiring till you get the consitiancy that you want. Add black pepper to taste do not add salt cause the spam has enough salt in it to season the dish.
- *note if you cooking for more than 3 or 4 people you can double this recipe. Also note i do not use cooking oil when cooking the spam i use a cooking spray because the spam makes its own grease but it you want to add a little oil to yours you can.
