GARLIC BUTTER-ROASTED SALMON WITH POTATOES & ASPARAGUS



Garlic Butter-Roasted Salmon with Potatoes & Asparagus image

This spring-produce-packed one-pan meal makes a healthy and satisfying weeknight dinner. Melted garlic butter coats the salmon and vegetables, adding depth of flavor and richness to the dish.

1 pound baby Yukon Gold potatoes, halved
2 tablespoons extra-virgin olive oil, divided
¾ teaspoon salt, divided
½ teaspoon ground pepper, divided
12 ounces asparagus, trimmed
2 tablespoons melted butter
1 tablespoon lemon juice
2 cloves garlic, minced
1 ¼ pounds salmon fillet, skinned and cut into 4 portions
Chopped parsley for garnish

Steps:

  • Preheat oven to 400 degrees F. Toss potatoes, 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper together in a medium bowl. Spread in an even layer on a large rimmed baking sheet. Roast until starting to soften and brown, about 15 minutes.
  • Meanwhile, toss asparagus with the remaining 1 tablespoon oil, 1/8 teaspoon salt and 1/8 teaspoon pepper in the medium bowl. Combine butter, lemon juice, garlic, 1/4 teaspoon salt and the remaining 1/4 teaspoon pepper in a small bowl.
  • Sprinkle salmon with the remaining 1/8 teaspoon salt. Move the potatoes to one side of the pan. Place the salmon in the center of the pan; drizzle with the butter mixture. Spread the asparagus on the empty side of the pan. Roast until the salmon is just cooked through and the vegetables are tender, 10 to 12 minutes. Garnish with parsley.

During World War II when meat was scarce, my mother used to feed her large family casseroles using whatever meat or fish was available. My favorite is a type of baked casserole with salmon and potato which not only tasted great, but one which satisfied her family of seven kids.

8 medium potatoes, peeled and sliced
1 medium onion, sliced
1 (14.75 ounce) can salmon, drained and flaked
4 tablespoons all-purpose flour, or more as needed
½ teaspoon salt, or to taste
½ teaspoon ground black pepper
1 cup milk
2 teaspoons salted butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a casserole dish.
  • Place one layer of potato and onion slices in the prepared dish. Add salmon. Sprinkle flour over top until salmon layer is covered. Sprinkle with 1/2 of the salt and pepper. Layer with remaining onion and potato slices, then sprinkle with remaining salt and pepper. Add milk and top with butter.
  • Bake, covered, in the preheated oven until golden brown, about 1 hour and 15 minutes.

1 (14 3/4 ounce) can boneless and skinless pink salmon, drained
2 1/2 lbs russet potatoes, peeled and cut in 1 ",pieces
1 cup low-fat milk
4 ounces mozzarella cheese (or other cheese)
3 tablespoons parmesan cheese, grated
2 large eggs
1/2 cup green onion, chopped
salt and pepper
nonstick cooking spray

Steps:

  • Spray 10" diameter glass pie dish with nonstick spray.
  • Separate salmon into chunks and set aside.
  • Cook potatoes in large pot of boiling salted water until very tender, about 20 minutes and drain.
  • Transfer potatoes to large bowl.
  • Add milk, mozzarella cheese and 1 tbsp.
  • Parmesan cheese.
  • Beat until almost smooth.
  • Season with salt and pepper.
  • Beat in eggs.
  • Stir in salmon and green onions.
  • Transfer mixture to prepared dish, sprinkle with remaining Parmesan cheese.
  • Bake casserole until golden and heated through, about 45 minutes at 400.

750g medium potato , cut into wedges
1 head broccoli , trimmed and broken into florets
200ml tub crème fraîche
2 tbsp wholegrain mustard
2 large or 4 small salmon fillets , cut into large pieces
handful grated parmesan

Steps:

  • Put the potato wedges into a shallow microwave-proof baking dish, then cook on High for 10 mins until almost tender all the way through (turn the wedges halfway through to ensure even cooking). Add the broccoli, re-cover and cook for another 3 mins or until the florets just give with a knife. If you don't have a microwave, boil instead.
  • Heat grill to medium. Mix the crème fraîche and mustard together with a little seasoning. Nestle the salmon in among the potatoes and broccoli, then spoon over the crème fraîche mix, making sure most of the broccoli is covered with sauce. Sprinkle with the cheese and grill for 5 mins until the sauce is bubbling, the tips of the potatoes are golden and the salmon is just cooked.

2-1/2 cups cubed cooked potatoes
2 cups frozen peas, thawed
1 cup mayonnaise
1 can (14-3/4 ounces) salmon, drained, bones and skin removed
5 ounces process cheese (Velveeta), cubed
1 cup finely crushed cornflakes
1 tablespoon butter, melted

Steps:
