HOMEMADE CHUNKY OR RESTAURANT STYLE SALSA



Homemade Chunky or Restaurant Style Salsa image

Number Of Ingredients 11

28 ounces whole peeled tomatoes (drained)
20 ounces diced tomatoes
1 cup chopped onion
1 cup chopped red pepper
1 jalapeno (membrane and seeds removed, chopped)
2 cloves garlic (chopped)
1/2 cup fresh cilantro (chopped)
1 lime (juice)
1/2 teaspoon salt
1/2 teaspoon ground cumin
1 tablespoon olive oil

Steps:

  • Place all ingredients in a food processor and pulse 5 times for chunky salsa or up to 10 times for restaurant style.
  • Makes about 5 1/2 cups.
  • Keep refrigerated.

2 heads romaine lettuce, thinly sliced
2 tomatoes, large diced
1 cucumber, large diced
1 red onion, thinly sliced
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons sour cream
1 teaspoon fresh oregano, chopped
1 clove garlic, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Combine the romaine, tomatoes, cucumber and onions in a large bowl.
  • Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
  • Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

1 bunch cilantro, stems cut off and leaves coarsely chopped
1 large green bell pepper, cut into bite-size pieces
1 large red bell pepper, cut into bite-size pieces
2 jalapeno peppers, finely chopped
3 green onions, chopped
½ sweet red onion, chopped
2 large avocados, pitted and cut into bite-sized pieces
1 lime, juiced
½ teaspoon salt, or to taste

Steps:

  • In a large salad bowl, lightly mix the tomatoes, cilantro, green and red bell peppers, jalapeno peppers, green onions, and sweet red onion until thoroughly combined. Gently toss with avocado pieces, and squeeze lime juice over the salad. Sprinkle with salt to serve.

I found this recipe in a magazine in the spring of this year. I have brought to every party/family picnic I've been to this summer and it's been a real hit. Lots of people have asked for the recipe. It's also great for vegetarians!

1/4 cup olive oil
2 limes, juice of
2 minced garlic cloves
1 teaspoon salt
1 teaspoon black pepper
1 cup cooked corn
1 (540 ml) can black beans, drained & rinsed
1 tomatoes, diced
1 pepper, diced
1 medium onion, diced
jalapeno pepper, diced
2 sprigs fresh cilantro, chopped

Steps:

  • Combine ingredients.
  • Let sit.
  • Serve with tortilla chips, as a salad, or in a tortilla shell.

- 1 large can pinto beans
- one red orange and yellow pepper
- 3-4 cups seeded cut tomatos
- 1 cup thawed corn
- half jar italian salad dressing ( or less to taste )
- 1/3 to 1/2 salsa

Steps:

  • Rinse beans well combine in large bowl beans, chopped peppers, diced tomato ( with seeds removed ) corn.
  • add about 1/2 contain italian dressing I prefer zesty italian and use 1/3. Add salsa.
