Here in the South, sweet potato pie is a staple among many despite 100's of variations. This is the recipe that both my mom and grandma have used for years. Even my picky husband marks this as his favorite pie!

1 pastry for a 9-inch double crust pie
4 cups peeled chopped sweet potatoes
1 ½ cups white sugar
3 eggs
⅓ cup milk
¼ cup margarine
½ teaspoon vanilla extract
½ teaspoon lemon extract
⅓ teaspoon ground cloves
¼ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press the pie pastries into two 9-inch pie dishes.
  • Place sweet potatoes into a large pot and cover with water; bring to a boil, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain potatoes and let cool.
  • Beat potatoes, sugar, eggs, milk, margarine, vanilla extract, lemon extract, cloves, and allspice together in a bowl until smooth; pour into the prepared crusts.
  • Bake in the preheated oven until pies are set in the middle, 40 to 60 minutes.

This chocolate pie is not only a Southern traditional dish, but my mom has to make 2 to take to church lunches. Most people go back for dessert only to find all the pie gone - the smart ones get their piece on the first trip through. This is pie is also served as "birthday cake" on most everyone's special day. And the only way to top it off is with a piled-high meringue!

1 cup sugar
3 tablespoons all-purpose flour
3 tablespoons cocoa
1 dash salt
1 1/2 cups milk
2 egg yolks (reserve whites for meringue)
1 tablespoon butter
1 (9 inch) pie crusts, baked

Steps:

  • Combine all ingredients except butter in a saucepan.
  • Cook over medium heat until thick like pudding, stirring constantly to prevent scorching and lumping.
  • When mixture becomes thick, remove from heat and add butter; stir to combine.
  • If lumping does occur, beat filling with a whip.
  • Pour into pie shell.
  • Make meringue according to your favorite recipe and top pie, sealing the edges with the meringue.
  • Bake to brown meringue.
  • Best if allowed to cool to lukewarm or room temperature.

1 teaspoon salt
1 lb shortening
1 cup orange juice

Steps:

  • Put 4 cups of flour into a mixing bowl ,Reserve last cup
  • add salt mix together
  • add 1 lb shortning cut into flour till crumbly.With pasty blender
  • add 1 cup orange juice ,I use tang or orange crystals for this receipe
  • I have used real orange juice both work fine
  • Mix all together use remaining cup of flour on the counter for rolling add more if needed
  • This receipe makes 2 double crust pies.

4 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
1 cup butter at room temperature
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
1 ½ cups milk
¾ cup butter at room temperature
1 cup confectioners' sugar
2 teaspoons vanilla extract
2 cups marshmallow creme

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk flour, cocoa powder, salt, baking powder, and baking soda in a bowl. Beat 1 cup butter and white sugar in a separate large bowl, with an electric mixer on medium speed, until mixture is creamy. Beat eggs and 2 teaspoons vanilla extract into butter mixture.
  • Stir half the flour mixture into wet ingredients, followed by milk; stir remaining flour mixture into dough. Drop dough by tablespoonfuls onto baking sheets. For 25 whoopie pies, make 50 cookies.
  • Bake cookies in the preheated oven until set and lightly browned, about 10 minutes. Let cool completely.
  • Beat 3/4 cup butter with confectioners' sugar in a bowl, using an electric mixer; beat 2 teaspoons vanilla extract and marshmallow creme into filling. Spread at least 1 teaspoon filling on the bottom of a cookie and top with a second cookie. Repeat with remaining cookies and filling.
