ORANGE SPICE GELATIN

There's nothing complicated about this naturally simple orange gelatin, made by flavoring freshly squeezed orange juice with warm spices; a fluted mold gives it shape.

Number Of Ingredients 8

1 1/4 cups cold water
1 cup sugar
1 cinnamon stick
3 strips orange zest (4 inches each)
1 1/2 teaspoons anise seeds, (optional)
2 1/2 cups strained fresh orange juice (from 8 to 10 oranges), or unsweetened store-bought juice
1 tablespoon fresh lemon juice
Scant 4 1/2 teaspoons unflavored gelatin (two 1/4-ounce envelopes)

Steps:

  • Bring water, sugar, cinnamon, zest, and anise seeds if desired, to a boil in a small saucepan, stirring until sugar dissolves. Remove from heat, and refrigerate for 2 hours. Strain through a fine sieve. Whisk 1 1/4 cups syrup with orange and lemon juices.
  • Sprinkle gelatin over 3/4 cup cooled juice mixture in a small saucepan, and let stand until softened, about 5 minutes. Bring to a simmer over medium-high heat, stirring until gelatin dissolves. Strain into remaining juice mixture. Pour into a damp 4-cup mold. Refrigerate until set, at least 4 hours or up to overnight. To serve, dip mold in hot water until gelatin loosens, and invert quickly.

2 packages (3 ounces each) orange gelatin, divided
1-3/4 cups boiling water, divided
3/4 cup cold water
1 cup sweetened applesauce
1 cup sour cream
1/4 teaspoon ground cinnamon
Lettuce leaves and sliced apples, optional

Steps:

  • In a large bowl, dissolve one package of gelatin in 1 cup boiling water. Stir in cold water. Pour into a 6-cup ring mold coated with cooking spray. Refrigerate until set but not firm, about 1 hour., Meanwhile, in a large bowl, dissolve remaining package of gelatin in remaining boiling water. Stir in the applesauce, sour cream and cinnamon. Refrigerate for 1 hour or until thickened. Gently spread over gelatin in mold. Refrigerate until firm., Line a serving plate with lettuce leaves if desired; unmold gelatin onto plate. Garnish with apples and additional lettuce if desired.

1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) can crushed pineapple, drained
1 (6 ounce) package orange flavored Jell-O® mix
16 ounces cottage cheese
8 ounces frozen whipped topping, thawed

Steps:

  • In a mixing bowl, combine the oranges, pineapple and gelatin. Mix well and chill for 1/2 an hour.
  • Add cottage cheese to fruit; stir to mix.
  • Gently fold in whipped topping; chill and serve.

2 cups boiling water
1 3-ounce package orange Jell-O
1 3-ounce package pineapple Jell-O
1 cup mini marshmallows
2 cups cold water
1 20-ounce can crushed pineapple, drained (save 1/2 cup juice for topping)
2 large bananas, sliced
Topping
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/2 cup pineapple juice
1 egg
2 tablespoons butter
3 ounces cream cheese, softened
1 8-ounce tub whipped topping, thawed

Steps:

  • In a glass bowl, add boiling water then stir in contents of both Jell-O packages and the marshmallows until dissolved, about 2-3 minutes. Add cold water, pineapple and banana slices and stir. Refrigerate in a 4-quart or larger serving bowl for 4 hours or until firm. For topping, combine sugar, flour and pineapple juice in a medium saucepan and bring to a simmer over low heat. Beat egg and whisk into mixture. Add butter and cook until mixture thickens, about 4-5 minutes, stirring constantly. Remove from heat and add cream cheese, stirring until melted. Allow to cool. Fold in whipped topping. Spread on top of Jell-O once firm. Refrigerate until ready to serve.
