MOM'S HOLIDAY ORANGE SLICE CAKE

My Mom made this for me every year between Thanksgiving and Christmas.

1 cup(s) butter
2 cup(s) sugar
4 - eggs
1/2 cup(s) buttermilk
1 teaspoon(s) baking soda
3 1/2 cup(s) all purpose flour
1 pound(s) dates, pitted & chopped
1 pound(s) orange slice candy, chopped
2 cup(s) pecans, chopped
1 1/3 cup(s) coconut
2 tablespoon(s) orange zest
1 cup(s) orange juice
2 cup(s) confectioners' sugar

Steps:

  • Preheat oven to 300 degrees F. Lightly grease and flour one 10 inch tube pan.
  • In a mixing bowl, cream margarine and granulated sugar until smooth. Add eggs one at a time, beating well after each addition.
  • Dissolve baking soda in buttermilk and add to the creamed mixture.
  • Place flour in a large bowl and add dates, orange slices, and nuts. Stir to coat each piece. Add flour mixture and coconut to creamed mixture. This makes a very stiff dough, so it will be necessary to stir with a wooden spoon.
  • Pour batter into the tube pan. Bake for 2 hours. As soon as cake comes from oven, combine the orange juice and confectioners sugar and pour over hot cake. Let stand in pan overnight.

3 ½ cups all-purpose flour

1 cup orange juice

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease and flour one 10 inch tube pan.

2 cups sugar

1 teaspoon baking soda
1/2 cup buttermilk (well-shaken)

1 pound dates, chopped

1 1/4 cups flaked coconut
1 cup fresh orange juice
2 cups confectioners' sugar

Steps:

  • Gather the ingredients.
  • Preheat oven to 250 F. Grease and flour a 10-inch tube cake pan .
  • Cream butter and sugar together in a mixing bowl with an electric mixer, until light and fluffy.
  • Add eggs, one at a time; beat well after each addition.
  • Dissolve baking soda in buttermilk and add to batter.
  • Place flour in large bowl and add dates, orange slice candy, and nuts. Stir to coat all pieces thoroughly.
  • Add flour mixture and coconut to creamed mixture. At this point, batter will be stiff. It might be easier to mix with hands or a sturdy spoon.
  • Spoon batter into prepared cake pan and spread evenly.
  • Bake in preheated oven for 2 1/2 hours.
  • Just before cake comes out of the oven, make topping. In a medium bowl, combine orange juice and confectioners' sugar. Stir until smooth and well blended. Gradually pour juice mixture over hot cake as soon as it comes out of the oven. Use a toothpick to prick cake in several places, if desired. Let orange slice cake stand in pan overnight.
  • Carefully invert cake onto a cake plate; slice and serve.

1/2 teaspoon salt (optional)
1 lb orange slice candy, cut up
8 ounces dates, pitted, chopped
2 cups pecans, chopped
3 1/2 ounces coconut, flaked
1 cup butter

1/2 cup buttermilk
1 cup orange juice

  • Sift flour and salt (if using); set aside.
  • Combine orange slice candy, pitted dates, pecans and coconut; set aside.

2 cup(s) sweetened coconut flakes
2 cup(s) pecans, chopped
1 cup(s) flour
1 cup(s) butter, softened

Steps:

  • Mix orange slices,dates, coconut, and pecans in 1 c. flour. Set aside.
  • Preheat ovens to 300 degrees.
  • Butter and flour tube pan or bundt pan or 4 loaf pans. Non stick are the best.
  • Cream butter and the 2 c. sugar til fluffy. Add eggs one at a time. beat well after each egg. Mix together baking soda and flour. Add flour mixture alternating buttermilk to butter sugar mixture. Mix well.
  • Stir in candy orange mixture. Pour into pan of choice and bake until wooden pick inserted into cakes comes out clean {times vary depending on size of pan, bundt pan takes almost 2 hours}.
  • Mix orange juice and sugar in a small sauce pan, bring to boil. Poke holes in HOT cake. Pour juice mixture over cake. Refrigerate over night to set up.

2 tablespoons grated orange zest
6 large eggs, room temperature
1 teaspoon vanilla extract

1/3 cup confectioners' sugar
1/4 cup butter, melted
1/4 cup orange juice

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Beat in orange zest and vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition (batter may appear curdled)., Transfer to prepared pan. 1 cup margarine or 1 cup butter
2 cups sugar
4 eggs
1 teaspoon baking soda
1/2 cup buttermilk
3 1/2 cups flour
1 cup dates, chopped
1 cup candy orange slices, chopped
2 cups nuts
1 cup flaked coconut
1 cup orange juice
2 cups powdered sugar

Steps:

  • Cream butter & sugar, add eggs (1 at a time) beating after each one.
  • Dissolve baking soda in buttermilk. Add to creamed mixture.
  • Add dates and orange slice to flour to coat. Add coconut.
  • Combine the two mixtures.
  • Makes stiff dough that should be mixed with your hands.
